Experience a flavor explosion with this recipe for a Cheddar cheeseburger topped with candied jalapeños, bacon, and French fried onions on a pretzel bun slathered with balsamic ketchup.

1/4 cup ketchup
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 pound ground chuck
1 teaspoon Morton Coarse Kosher Salt
2 slices sharp cheddar cheese
Candied jalapenos ((ideally the jalapenos should brine for at least one week))
Crispy fried onions such as French's French Fried Onions
4 slices thick sliced bacon, cooked
2 hamburger buns, preferably pretzel rolls if available

Steps:

  • Prep. For the balsamic ketchup, combine the ketchup, balsamic vinegar, and brown sugar in a small bowl and blend well. Set aside until ready to use.
  • Divide the meat into two 8-ounce (226.8-g) portions. Gently form the meat into patties that are approximately 1/2 inch (1.3 cm) wider than the bun to allow for shrinkage during the cooking process. Season both sides of the patties with kosher salt.
  • Fire up. Prepare a grill for indirect cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the grill vents to bring the temperature to about 225°F (107.2°C) on the indirect side. Add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F (107.2°C) on the indirect side.
  • Cook. Place the burgers on the indirect side of the grill, positioning the vent directly above the burgers in order to force the smoke over and around the meat. Cook the patties for about 10 minutes.
  • Push the tip of a rapid-read thermometer such as the Thermapen into the side of both burgers. When the temperature reaches 105°F (40.6°C), flip the burgers and cook for approximately 10 more minutes. Because they are not over direct heat, you do not need to flip them often.
  • When the burgers are about 20°F (-6.7°C) below the final doneness temp you want (see AmazingRibs.com's award winning Food Temperature Guide), get ready to move them to the direct-heat zone. If you are on a gas grill, crank it up to high. On a charcoal grill, you may want to add more pre-lit coals. If necessary, take the meat off of the grill and close the lid while the hot side heats up.
  • Put the burgers on the direct heat side to brown them. Leave the lid up so the heat is concentrated on one side of each burger. If the fire flares up, move the burger to another spot. Flip the meat every minute to form a nice crust on both sides.
  • When the interior reaches 5°F (-15°C) below the desired doneness, add a slice of cheese to each burger, and let them cook until the cheese melts, approximately 2 minutes.
  • Serve. To assemble the burgers, place each patty on a bottom bun and top with jalapeños, crispy fried onions, and bacon. Spread the balsamic ketchup on the top buns before placing on the burgers. Serve immediately.

I used to saute onions and fresh jalapenos to top our grilled cheeseburgers. Not any more! I mix the chopped fresh jalapenos, onions and shredded cheddar right into the hamburger patties. Oh, my. To complete the flavor attack you could add slices of crispy bacon to the pile....your choice!

1/2 cup fresh jalapeno pepper, chopped
1 1/2 cups mild cheddar cheese, shredded
1/2 cup red onion
1 teaspoon season salt
1/2 teaspoon garlic salt
1/2 teaspoon pepper

Steps:

  • Finely chop the red onions and jalapenos. Add all of the ingredients to a bowl and mix well. Form hamburger patties and grill like normal.

2 pieces white bread, crusts removed, then cut into 1/4 inch cubes
1/3 cup milk
3 lbs lean ground beef
1 clove garlic, chopped finely
1 1/2 tsp Hy's or Lawry's seasoning salt
1 tsp black pepper
1 tbsp Maggi's sauce or soy sauce
1 tbsp Worcestershire sauce
2 tbsp ketchup
2 large jalapeño peppers, seeds and stems removed, then chopped (add more or less if you prefer)
1/2 - 1 cup cubed cheddar cheese (1/4 inch cubes)
4 pieces of bacon (not cooked), chopped

Steps:

  • In a large bowl, first mix together the bread and milk into a paste.
  • Then add the beef, garlic, seasoning salt, pepper, Maggi's (or soy sauce), Worcestershire sauce and ketchup. Mix well.
  • Mix in the chopped jalapeño peppers, cheese and bacon.
  • Shape the mixture into patties. I usually make mine about 5 inches wide and 3/4 inch thick.
  • The patties are best left to rest in the fridge or freezer for at least 1 hour before barbecuing.
  • Grill on a medium to high heat grill, taking care not to cook the burgers too fast or the cheese will melt out.
  • Cook until the burger is well done, with no pink inside.
  • Serve on a bun with all your favourite trimmings.
  • Enjoy!

1 hamburger patty, fully cooked
1 slice cheese (American, or Pepper Jack would be yummy!)
1 leaf iceberg lettuce, finely shredded

1 tablespoon mayonnaise
1 slice yellow onion, finely chopped
2 slices bacon, fully cooked

Steps:

  • Toast hamburger bun.
  • Start with bottom bun. Slather with mayo ( how much is dependent on personal taste.).
  • Layer jalapeño, onion, and shredded lettuce.
  • Add hamburger patty, and sliced cheese.
  • Top with tomato, bacon, and top bun.
