Jalapeno Stuffed Chicken Breasts with Cream Cheese image

Jalapeno Stuffed Chicken is a favorite dinner option in our house! Stuffing ingredients into the middle of the chicken breasts adds a creamy, spicy kick.

6 chicken breasts (fat trimmed)
2 tbsp olive oil
2 jalapeno peppers (finely chopped)
3 cloves garlic (minced)
8 oz cream cheese (softened)
1/4 cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 350 degrees F. Coat a 9×13-inch baking dish with cooking spray and set aside. In each of the chicken breasts, cut a slit horizontally without going all the way through to the other side.
  • Heat olive oil in a skillet over medium heat. Add jalapenos and garlic and cook, stirring, for 2-3 minutes. Add cream cheese to the skillet and stir until cheese is melted. Add cheddar cheese and stir until melted.
  • Divide the mixture between the 6 breasts and spoon into openings. Seal the ends and secure with toothpicks. Place the chicken in the prepared baking dish and bake in the preheated oven for 30-35 minutes, or until chicken is cooked through. Remove toothpicks and serve warm.

1 (8 ounce) package cream cheese, softened
1/2 cup shredded cheddar cheese
2 jalapeno peppers, seeded and minced
4 slices bacon, cooked crisp and diced
4 (6 ounce) boneless skinless chicken breast halves
1 cup seasoned dry bread crumbs or 1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
2 tablespoons grated parmesan cheese
1 egg
1 teaspoon water
1/4 cup vegetable oil or 1/4 cup olive oil

Steps:

  • Combine the cream cheese, cheddar cheese, bacon, and jalapenos in a small bowl; mix well.
  • Cut a pocket horizontally through the thickest side of each chicken breast; fill with 1/4 of the cheese mixture. Secure with toothpicks. Tip: If breasts are thick, before slitting, slightly poud the thickest part of the breast side. It, also, makes for a larger pocket. Don't pound too thin.
  • Combine Panko bread crumbs, garlic powder, onion powder, pepper and Parmesan; place on a piece of waxed paper.
  • Beat egg and water in a shallow bowl.
  • Dip stuffed chicken breast in egg mixture, then into Panko mixture, coating well.
  • Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides until golden; place on a foil lined shallow baking sheet.
  • Bake at 350 degrees in a preheated oven for about 15 minutes or until chicken is cooked through and juices run clear.

4 boneless skinless chicken breasts
8 slices bacon
4 tablespoons cream cheese
1/2 cup shredded monterey jack pepper cheese (cheddar, mozzarella, jack or blue cheese also work well)
2 diced jalapenos
chili powder
garlic salt
black pepper
8 toothpicks

Steps:

  • pre-heat oven to 350 degrees.
  • grease baking dish.
  • cut a pouch in each chicken breast fillet, careful not to poke through
  • spread 1 Tbsp cream cheese in each pouch.
  • add 1/4 shredded cheese in each pouch.
  • add diced jalapeños to each pouch (more or less than 1/2 a jalapeño per chicken breast depending on your spice level preference)
  • sprinkle garlic salt, chili powder and pepper on top of fillets to taste.
  • wrap 2 pieces of bacon around each fillet
  • secure each bacon piece with 1 toothpick near the opening of the pouch to keep fillet together.
  • place in oven
  • bake for 30 minutes.

1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese, divided
2 fresh jalapeño peppers, seeded, finely chopped
1 egg
3 cups tortilla chips, finely crushed (about 1 cup)
1 cup green salsa

Steps:

  • Place chicken on work surface. Mix cream cheese, 1-1/2 cups shredded cheese and peppers until blended; spread onto chicken. Roll up tightly, starting at one short end of each breast. Refrigerate up to 8 hours.
  • Heat oven to 375ºF. Beat egg in shallow dish. Place crushed chips in separate shallow dish. Dip chicken in egg, then roll in crushed chips. Place, seam sides down, in single layer in shallow pan sprayed with cooking spray.
  • Bake 35 min. or until chicken is done (165ºF). Meanwhile, warm salsa.

2 slices center cut bacon, cooked and crumbled

3 ounces cream cheese, softened

8 (3 ounce) skinless chicken breasts, cutlets pounded thin
1/2 cup Italian seasoned breadcrumbs
1 1/2 juicy limes, juice of
1 1/2 tablespoons olive oil
salt and fresh black pepper
olive oil nonstick cooking spray

Steps:

  • Wash and dry chicken cutlets, season with salt and pepper. Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.
  • Combine cream cheese, cheddar, green onions, jalapeno and bacon crumbles in a medium bowl.
  • Lay chicken cutlets on a working surface and spread 2 tbsp of cream cheese mixture on each cutlet. Loosely roll each one, secure the ends with toothpicks to prevent the cheese from oozing out.

2 whole jalapenos, roasted, skinless, cut in half and deseeded
4 chicken breast halves, boneless and skinless (about 4 ounces each)
garlic salt
fresh cracked pepper
4 ounces monterey jack cheese or 4 ounces gouda cheese, cut into 4 pieces
4 slices bacon

Steps:

  • Flatten chicken breasts to approx 1/4" thickness. Season both sides of chicken with garlic salt and pepper.
  • Divide and place sliced smoked jalapenos on each breast with cheese. Fold over the chicken and secure with a tooth pick or two. Then wrap each chicken breast with bacon.
  • Brown rolls over medium heat until bacon just begins to crisp. Place on a baking sheet and bake in a 350 degree oven for 20 minutes.
  • Grilling Method: Skip step #3. Grill on all sides until chicken and bacon are cooked through, being careful because the cheese will melt and seep out. Watch for flare ups from bacon fat.

  • Prepare the filling. Microwave the pre-cooked bacon for a minute or so. Dice and add to medium sized mixing bowl. Add cream cheese and cheddar cheese. Slice the jalapeños in half, seeding (use gloves!) all but one half of one pepper. Dice the jalapeños into small chunks and add to mixing bowl. Combine all ingredients. Since there are 8 (halves) chicken breasts, divide the cream cheese mixture into 8 sections.
