EASY! REFRIED JALAPEñO BLACK BEANS
Refried black beans with fresh jalapeño is the perfect side dish for all of your favorite Mexican recipes. Starting with canned black beans makes this recipe so quick these flavorful, creamy beans will be on the table in under 30 minutes!

Steps:
- In a medium-sized pot saute the onion, garlic, and jalapeño in oil over medium-high heat for about five minutes until the onion is soft and the garlic is fragrant.
- Next add in the cumin, black beans and a generous pinch of salt. Stir to combine then add in the water and a few dashes of hot sauce. Bring the beans to a simmer, then cover and turn the heat to low and cook for 10 minutes.
- Use an immersion blender to blend the beans or transfer 3/4 of the cooked beans to a blender/food processor and blend until smooth. Return the blended beans to the pot, and season to taste with salt.

BLACK BEANS WITH GARLIC, ONION AND JALAPENO

Steps:
- Add the beans to a large stockpot and cover with cold water. Bring to a boil, then reduce to a simmer and cook until the beans are slightly soft, 30 minutes to 1 hour. Turn off the heat and add the kosher salt and garlic salt.
- Add the butter to a large, heavy-bottomed saute pan over medium heat, then add the jalapeno, garlic and onion. Saute until softened, 3 to 4 minutes.
- Drain the beans, reserving the liquid, then add the beans to the saute pan and simmer for 10 minutes, adding the reserved cooking liquid if too dry. Season to taste and serve.

Steps:
- Place black beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
- Place beans in a pot and add enough water to cover; bring to a boil. Reduce heat to medium-low and simmer beans until very tender, about 1 hour.
- Heat oil in a skillet over medium; cook and stir onion and garlic until onion is soft and translucent, about 10 minutes. Add black beans, green chiles, chili powder, and cumin; cook and stir until flavors blend, about 5 minutes.
- Blend black bean mixture in a food processor until smooth. Add tomato paste, chicken broth, vinegar, and salt; blend until desired consistency is reached. Return beans to pot and cook until heated through, about 5 minutes more.

- Prepare a large skillet by heating drippings or lard over medium heat.
- Cook the garlic, onions and jalapenos until slightly wilted.
- Sprinkle in the cumin.
- Add in about 1/2 cup of beans and mash with back of spoon or mashing utensil.
- If the mixture seems thick, add about a tablespoon of liquid from canned beans or the cooking liquid.
- Continue to add beans and mash them together, adding liquid as necessary.
- Top with shredded cheese.

- Drain beans; place in slow cooker.
- Add onion and crushed garlic.
- Pour in enough water to cover.
- Cook, covered, until beans are tender, about 4 hours on high and 6 hours on low.
- Drain beans, reserving liquid.
- Use a potato masher, pastry blender, or fork to work bean mixture into a thick, pulpy mass.
- Warm oil in a large pot over medium-high heat.
- Add minced garlic and jalapeño.
- Cook, stirring often, until softened, 3-5 minutes.
- Stir in mashed bean mixture and cook until warmed through, about 5 minutes.
- Add small amounts of reserved cooking liquid to thin as desired.
- Mixture should have the consistency of thick mashed potatoes.
- Remove from heat and stir in lime juice and zest.
- Season generously with salt and pepper.
- Top with queso fresco and chopped cilantro, if desired.

Steps:
- Cook garlic in oil in a skillet over moderate heat, stirring, until fragrant, about 1 minute.
- Add beans with their liquid and mash with a potato masher or the back of a large spoon to make a coarse purée.
- Continue to cook, stirring occasionally, until mixture is hot.
- Stir in enough of water to thin to a creamy consistency.
- Add pepper to taste.
- Serve warm, sprinkled with cilantro.
- (Beans can be made 1 day ahead and chilled, covered. Reheat, adding water if necessary.) Makes 4 servings.
