JALAPENO LIME SKILLET SHRIMP

A fast and delicious shrimp entree with a spicy kick. Adapted from [Lana's Cooking|http://www.lanascooking.com/2011/06/07/cilantro-lime-shrimp/].

Yield 2-3 servings

Number Of Ingredients 14

1 tablespoon olive oil
2 tablespoons butter
1/4 teaspoon red chile flakes
1 small onion, chopped
1 jalapeno, seeded and minced
2 cloves garlic, minced
2 tomatoes, chopped
1 cup chicken broth
1 pound shrimp, peeled (I removed the tails, but that is up to your preference)
1 lime, zested
juice of half the lime
3 tablespoons cilantro, chopped
salt to taste
lime wedges, for serving

Steps:

  • 1. To a cast iron skillet over medium-high heat, add the oil and butter. Stir in the red chile flakes. Saute the onions and jalapeño until tender, 2-3 minutes. Add the garlic and stir until fragrant, but not browned, about 1 minute. Toss in the tomatoes and cook until the tomatoes begin to break down and release their juices, another 2-3 minutes. Add the chicken broth and bring to a simmer. Then, add the shrimp to the skillet and season with salt, cooking and tossing until shrimp just turn pink and are cooked through but still tender, being careful not to overcook. Add the lime zest, lime juice, and cilantro. Taste for seasoning and add more salt as needed. Serve promptly with crusty bread, or over rice or noodles.

Succulent Jalapeno Lime Shrimp, marinated in a zesty, fresh jalapeno and lime marinade, are perfect for an easy weeknight meal! Just sauté the shrimp and you're ready for tacos or quesadillas, or go tapas-style with a loaf of crusty bread!

1 lb. peeled and deveined jumbo or large shrimp
1 tbsp. minced fresh jalapeno (approximately 1 average jalapeno)
1 garlic clove (minced)
1/4 tsp. cumin
2 tbsp. olive oil or avocado oil (divided)
2 limes (the juice of)
salt & pepper to taste

Steps:

  • Marinate shrimp in a glass or plastic bowl with the jalapeno, garlic, cumin, lime juice, salt & pepper, and one of the two tablespoons of oil. Stir to combine and set aside for 20 minutes.
  • After the shrimp have marinated for 20 minutes, heat the other tablespoon of oil in a large skillet. Dump the bowl of shrimp in the skillet, making sure each shrimp is laying flat. Cook for 2-3 minutes, then with tongs, turn each shrimp over and cook another 2-3 minutes. Shrimp are done when pink and no more gray is present.
  • Use shrimp in tacos, quesadillas, add to some pasta, or serve with a crusty loaf of bread. Enjoy!

I was looking for recipes to use up the jalapeños I'm growing, plus the mangoes, shrimp, and limes that I had on hand. I found this one, hope you enjoy it as much as we did. We did fry them, but they can also be baked in a 475°F oven and still come out crispy.

16 jumbo shrimp (shelled and deveined)
1/2-1 cup canola oil
2 cups coarsely crushed tortilla chips
7 ounces shredded coconut
1 cup flour
6 ounces beer (like corona)
1 tablespoon freshly squeezed lime juice
salt, to taste
cayenne pepper, to taste
1 large ripe mango, diced
4 jalapenos, seeded and chopped
2 tablespoons canola oil
1 tablespoon rice or 1 tablespoon red wine vinegar
1 pinch cumin (to taste)
1/2 sweet onion, diced
1 orange, juice of
salt and pepper, to taste
hot sauce, to taste (or tabasco sauce)

Steps:

  • Make the sauce first.
  • In a food processor or blender, mix all ingredients until blended.
  • For shrimp.
  • Crush Tortilla Chips until coarsely ground and mix with shredded coconut.you can use a processor if you have one.
  • Place mixture on plate and set aside.
  • In a bowl, whisk flour, beer and lime juice until blended and lump free.
  • Butterfly each shrimp by cutting down it's center.
  • In a skillet, heat canola oil.
  • Dip shrimp in beer batter and press each side in coconut mixture until heavily coated.
  • Place shrimp in hot oil and cook for 3-5 minutes on each side.
  • Cook in batches if the shrimp are very large.
  • Remove shrimp from oil and drain on paper towel to remove excess oil.
  • Or bake--.
  • Spray a pan with non stick spray, place in 475°F oven and bake for 6 minutes per side.
  • Fried or bakes, serve them with the mango jalapeño dipping sauce.
