PAN-SEARED COD WITH CILANTRO-LIME COMPOUND BUTTER
This simple pan-seared cod gets a decadent dose of flavor with simple compound butter. It makes an easy weeknight meal that you can even prep in advance!

Steps:
- For the compound butter, cut the butter into large chunks and add it to a bowl. Add in the jalapeno, lime zest, lime juice, cilantro, and a pinch of salt.
- Stir together well using a spatula until the ingredients are fully incorporated.
- Taste and adjust the salt or other mix-ins to your preference.
- Transfer the butter mixture to a piece of plastic wrap and shape into a log.
- Roll the plastic wrap around it, and twist the ends to seal. Refrigerate for at least an hour or until hardened.
- For the cod, season both sides of the fish with salt and pepper.
- Heat the oil in a well-seasoned cast-iron or nonstick skillet set over medium heat.
- Add the cod, and cook for 3-5 minutes on each side (depending on the thickness of the cod).
- Transfer to a serving platter or plates and top with fresh cilantro and Cilantro-Lime Compound Butter. Serve with lime wedges and enjoy!

- Temper your butter by placing it at room temperature until it softens.
- In a food processor add one jalapeno, 1 lemon zest and juice and 1 cup cilantro until it becomes a paste. Add the butter until it's well combined.
- Roll it onto parchment paper and tie the ends or freeze it in an ice cube tray. Use as you need.

GRILLED CORN WITH JALAPEñO-FETA BUTTER
This dish puts a spicy, cheesy spin on the classic buttered corn-on-the-cob. The ears are charred on the grill, then rubbed with a feta and jalapeño-flecked butter that melts all over the sweet, blackened kernels. The compound butter is perfectly adaptable. - To prepare the jalapeño-feta butter, in a small bowl, mash together the butter, jalapeño, feta, cilantro, garlic, lime or lemon juice, salt and coriander.
- Divide the butter equally onto six pieces of parchment paper large enough to wrap them snugly (6-inch squares should do it), form into logs, and wrap well, twisting the ends like candy wrappers. Chill for at least 2 hours and up to 3 days before using, or freeze for up to 3 months.
- Light the grill or heat the broiler, arranging the rack about 4 inches from the heat source. Brush corn lightly with oil. Grill until charred on all sides, 3 to 6 minutes total.
