2 fresh jalapeno peppers
12 ounces frozen blackberries
1 cup water
½ cup brown sugar
¼ cup honey
¼ cup orange juice
¼ cup orange-flavored liqueur
1 tablespoon minced fresh garlic
2 teaspoons orange zest
1 (12 pound) spiral-sliced, fully-cooked smoked ham

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler to high. Place jalapeno peppers on a baking sheet.
  • Broil in the preheated oven, turning every 2 to 3 minutes, until skin on the jalapenos is blackened and bubbling, 8 to 10 minutes.
  • Remove jalapeno peppers from oven and place in a resealable plastic bag; set aside for 5 to 10 minutes. Carefully open the bag and remove jalapeno peppers; let sit until easily handled. Peel blackened skin from jalapeno peppers, slice open, remove the seeds, and mince the pepper.
  • Combine jalapeno peppers, blackberries, water, brown sugar, honey, orange juice, orange-flavored liqueur, garlic, and orange zest in a saucepan over medium heat; simmer for 5 to 10 minutes. Reduce heat to low and continue simmering until glaze has reduced in size and is thickened, 5 to 10 minutes more. Mash the glaze with a potato masher until blackberries are broken down. Remove saucepan from heat.
  • Reduce oven temperature to 325 degrees F (165 degrees C). Place the ham in a roasting pan and brush some of the glaze over the ham; cover loosely with aluminum foil.
  • Bake in the preheated oven, basting with glaze every 20 minutes, until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 3 hours. Remove ham from oven and brush with more glaze. Let stand for 10 minutes before slicing.

2 cups freshly squeezed orange juice
1/2 cup freshly squeezed lime juice
1/2 cup dark brown sugar
1/4 cup smoked maple bourbon, such as Knob Creek
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
1 large habanero, 3 slits cut into it
One 3- to 4-pound spiral ham

Steps:

  • Combine the orange juice, lime juice, brown sugar, bourbon, maple syrup, vinegar and habanero in a large saucepot. Bring to a boil then reduce to a simmer. Simmer until reduced and slightly thickened, about 30 minutes. Remove from the heat and cool completely (the mixture will thicken as it cools). Remove the habanero and set aside until ready to use. This can be done ahead of time.
  • Preheat the oven to 425 degrees F.
  • Put your ham in a roasting pan and cook until gently warmed through, about 45 minutes. Then begin basting it was the glaze until it's nicely caramelized, another 20 minutes. Remove the ham, tent with foil and let rest for 10 minutes before slicing. Serve with any remaining glaze.

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
2/3 cup fresh lemon juice (3 to 4 lemons)
1/3 cup fresh lime juice (about 4 limes)
1/2 cup hot pepper jelly
1 teaspoon Worcestershire sauce
1 jalapeno, halved, seeded and sliced

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, whisk together the lemon and lime juices, pepper jelly, Worcestershire sauce and jalapeno in a small saucepan. Bring to a simmer and reduce until thickened to about 3/4 cup, about 20 minutes.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush half of the glaze all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze until glossy, glazed and well browned, about 45 minutes more.

1-1/2 teaspoons Dijon mustard
3/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Bake, uncovered, 1-1/2 hours., Meanwhile, for glaze, in a small saucepan, mix brown sugar, honey, vinegar and ginger ale. Bring to a boil; cook until mixture is reduced by half, about 15 minutes. 2 tablespoons chopped fresh cilantro, optional
1 lb fully cooked center-cut ham steak

Steps:

  • Heat grill; place jelly in a microwave safe bowl and wave it on HIGH for 30 seconds; add cilantro if using and mix well.
  • Pat ham dry with a paper towel.
  • Place ham on grill over medium heat or 4-6 inches from medium hot coals; brush with half the glaze and cook 5-7 minutes, turning and brushing with remaining glaze during the last 2 minutes of grill time.

This thick, chutney-like sauce goes great brushed on roast chicken, grilled ribs, or shishkabobs. Great to serve centered in a deli meat platter. Decorating a baked ham with pineapple slices and cherries is nice, but if you want something different with a little kick to it, then this is the recipe for you.

1/4 cup water
1 tablespoon cornstarch
8 ounces crushed pineapple, juice and all
1/2 cup maraschino cherry (plus 2 Tbsp of the juice)
1/4 cup honey
2 -3 jalapenos, chopped (to taste)
2 tablespoons raisins
1/4 teaspoon ground ginger

Steps:

  • DIPPING SAUCE: To a medium saucepan mix water and cornstarch until cornstarch is dissolved. Place on burner over medium low heat and add remaining sauce ingredients.
  • Let simmer 20-30 minutes, stirring occasionally until thickened. Let cool slightly and place in a food processor or use an emulsion blender to get a smooth consistency.
  • Serve warm or cold for a meat or vegetable platter. As a glaze for grilling, simply brush on the last few minutes of grill time. For a roast chicken or turkey (whole or parts), follow glazing directions for ham.
  • BAKED HAM: Preheat oven to 325°F Using a sharp knife, score a 3 lb pork shoulder (or other ham roast) skin 1/4" deep in a diagonal direction. Repeat about 2" apart. Now cut opposite lines to create a diamond pattern. Place about 2 tablespoons whole cloves in the points of the diamonds, pushing them into the ham.
  • GLAZING: Remove ham 30 minutes before done and spread (or brush) about 1 cup of the sauce all over the ham. Sprinkle with 1/2 cup brown sugar and continue to bake for another 30 minutes.
  • Remove from oven and drizzle about 1/3 cup honey over ham. Let rest 20-30 minutes before slicing. Serve with additional glaze at the table for a dipping sauce or garnish.
