I got a craving for potato soup one day, so i developed the soup the way I like it. Easy to make, very hearth, and a crowd pleaser.

Ingredients

5 cloves garlic, minced
1/2 diced onion
2 tablespoons basil, fresh
2 tablespoons butter
12 -15 large potatoes, half peeled,diced
5 cups milk
4 tablespoons butter
10 strips bacon, chopped
salt and pepper
bacon bits (optional)
green onion (optional)
cheddar cheese (optional)

Steps:

Sauté the onions in the 2 tablespoons butter and basil over medium-high heat until softened.
Add potatoes to a large pot with just enough water to cook.
Season the potatoes with salt.
Bring to a boil; cover and reduce heat to low.
Simmer until potatoes are tender, about 20 minutes.
Add the milk, remaining butter, salt and pepper to taste.
Continue to cook over medium heat until hot; do not boil.
With a potato masher, mash some of the potatoes right in the pot to slightly thicken the soup.
Add the chopped bacon, cheddar cheese and/or green onions before soup is ready to be served.

These crispy jacket potatoes are like a baked potato, but better. Serve with butter and sour cream.

Ingredients

6 medium russet potatoes
1 tablespoon vegetable oil, or as needed
¼ teaspoon sea salt, or to taste
1 pinch lemon-pepper seasoning, or to taste
12 large squares aluminum foil

Steps:

Preheat the oven to 400 degrees F (200 degrees C).
Drizzle potatoes with a thin layer of oil. Sprinkle on sea salt and about 1/2 as much lemon-pepper seasoning. Wrap each potato in a square of foil, then wrap with a second square. Place foil-wrapped potatoes in a glass or ceramic baking dish.
Bake in the preheated oven until the skins are crisp and the flesh is soft, 60 to 90 minutes.

These are my infamous potatoes that have become a tradition with many families. I came up with the recipe through trial and error.

Ingredients

10 cups diced potatoes (bout 3/4 inch pieces)
6 tablespoons olive oil
4 tablespoons Cavenders All Purpose Greek Seasoning (can use an Italian mix)
1 1/2 cups mozzarella cheese
1/4 cup bacon bits

Steps:

Dice potatoes and place in a sealable bag (ziplock style).
Best to split quantity into two bags.
Add olive oil and Cavenders to each bag, seal and shake vigorously.
(Optional) Allow potatoes to marinade for an hour.
Preheat oven to 450°F.
Empty bags onto two cookies sheets in a single.
Flip potatoes once during cooking, bake until they are crunchy.
Transfer to a casserole pan, cover with cheese and bacon bits.
Broil until cheese is bubbly.
Enjoy my family favorite.
