Steps:
- Cook rice as directed on package, omitting salt and substituting the dressing for 1/4 cup of the water. Meanwhile, remove and discard core and any seed pods from jackfruit. Coarsely chop remaining fruit.
- Cook jackfruit in large skillet on medium-high heat 5 min. or until fruit pieces are lightly browned on bottoms. Add beans and salsa; mix well. Simmer on medium-low heat 6 to 8 min. or until heated through, stirring occasionally.
- Spoon rice into 4 shallow bowls; top with jackfruit mixture and remaining ingredients.

- Heat oil in a medium saucepan over medium-high heat. Add onion, garlic and chile; cook, stirring occasionally, until the onion is tender and browned, about 6 minutes. Add broth; increase heat to high and bring to a boil. Partially cover and reduce heat to medium. Cook until the chile is tender, about 10 minutes. Transfer the mixture to a blender. Remove center piece of blender lid (to allow steam to escape); secure the lid on the blender. Place a clean towel over the opening and process until very smooth, about 45 seconds. (Use caution when blending hot liquids.)
- Return the chile sauce to the saucepan; add jackfruit, chili powder, salt, pepper and bay leaf. Bring to a simmer over medium-high heat. Reduce heat to medium-low, partially cover and cook until slightly thickened, 6 to 8 minutes. Discard the bay leaf.
- Place 3/4 cup rice in each of 4 shallow bowls. Top each with 3/4 cup jackfruit mixture, 1/2 cup lettuce, 1/3 cup tomatoes, 1/4 cup beans and 2 tablespoons cilantro. Serve with lime wedges.

- Add olive oil to a large soup pot and heat over medium heat. Once the oil is hot, add jackfruit, red onion, red bell pepper, garlic, and jalapeño. Sauté for 3-5 minutes until the jackfruit begins to brown and the onions are translucent and fragrant. Stir in the spices.
- Add the black beans, corn, tomatoes, green chilies, and rice. Stir in the Mexican-Style Simple Starter and minced cilantro. Bring to a boil, cover, and reduce heat to a simmer. Simmer for 20-25 minutes until all the liquid has absorbed and the rice is fully cooked.
- Divide into 6 bowls and top with topping of choice. I like to add vegan cheese, tomatoes, cilantro, avocado, and salsa. You can also add vegan sour cream, sliced jalapeños, and crispy corn tortillas.
