4 boneless chicken breasts
12 ounces bow tie pasta
2 cups broccoli florets, chopped
3 tablespoons margarine, divided
1 cup sliced mushrooms
1 medium red bell pepper, seeded and chopped
1 tablespoon all-purpose flour
1 cup milk
1/2 cup water
5 ounces gorgonzola, crumbled
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375. Season chicken with salt and pepper. Bake in oven 25 minutes.
  • Cook pasta according to package directions.
  • While chicken and pasta are cooking, in a medium saucepan bring 1/2 cup water to a boil, over medium high heat. Add broccoli, cook until crisp-tender, about 4 minutes, Drain.
  • In a medium skillet melt 2 tablespoons margarine over medium high heat. Add mushrooms and bell pepper, cook, stirring, until tender about 3 minutes.
  • In small sauce pan, melt remaining margarine, stir in flour. Cook for 1 minute, stirring. Add milk, cheese, salt and pepper. Cook until thickened, about 5 minutes.
  • Remove chicken from oven, and slice into strips. Toss sauce with veggies and chicken.
  • Drain pasta, put on serving dish, pour sauce over.
  • Serve immediately.

2 pounds new potatoes, cut into large chunks
1 pound rutabaga, cut into small chunks
1 pound turnip, cut into small chunks
1 cup milk (antibiotic and hormone free)
1 stick (8 tablespoons) butter
1 tablespoon chicken base dissolved in 1/2 cup water
1 tablespoon granulated garlic
1 tablespoon dried rosemary
1 teaspoon ground black pepper
1 teaspoon dried sage
3 cloves garlic, finely diced

Steps:

  • Put the potatoes, rutabaga and turnips into a large pot with 3 quarts water. Bring to a boil over high heat, reduce to a simmer and cook until tender, about 20 minutes. Strain and return to the pot. Add the milk, butter, chicken base, granulated garlic, rosemary, pepper, sage and fresh garlic and mash with a potato masher until chunky and fully mixed. Adjust the seasoning if necessary.

1/2 teaspoon adobo all-purpose seasoning
1/2 teaspoon ground red pepper (cayenne), if desired
2 tablespoons olive or vegetable oil
2 tablespoons butter or margarine
2 lb boneless skinless chicken breasts, cut into 1-inch strips
2 medium green bell peppers, chopped (2 cups)
1 medium onion, chopped (1/2 cup)
1 cup sliced fresh mushrooms
1 can (14.5 oz) diced tomatoes, undrained
2 boxes Chicken Helper™ chicken fried rice
2 cups Progresso™ chicken broth (from 32-oz carton)

Steps:

  • In small bowl, mix paprika, all-purpose seasoning and red pepper; set aside.
  • In 12-inch skillet, heat oil and butter over high heat until butter is melted. Add chicken and half of the paprika mixture; cook and stir over high heat until chicken is white. Remove chicken from skillet; set aside.
  • Add bell peppers and onion to skillet; cook and stir 1 minute. Stir in mushrooms, tomatoes and remaining paprika mixture; cook and stir 1 minute. Stir in chicken, uncooked rice and seasoning mixes (from Chicken Helper boxes) and broth. Heat to boiling; reduce heat to low. Cover; cook 15 to 20 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.

3 tablespoons olive oil
1 -2 garlic clove, minced
1/8 teaspoon red chili pepper flakes (optional)
1 carrot, julienned
1 small yellow squash, julienned
2 small zucchini, cut into thin circles
1/2-1 teaspoon dried Italian seasoning
1 roma tomato, deseeded and diced (optional)
salt, as needed

Steps:

  • In a large nonstick frying pan put the olive oil, garlic and red chili flakes (optional). Heat over high heat until the edges of the garlic start to brown.
  • Add the carrots, yellow squash and zucchini and stir to blend.
  • Add the Italian seasoning and stir again.
  • Flip the vegetables over occasionally using a spachula. Some of the vegetables should get brown spots on them, but the vegetables taste best if there is still a slight crispness to them.
  • When the vegetables are ready, add salt.
  • Turn off heat.
  • If desired, stir in a deseeded and diced roma (plum) tomato at this time-optional.
  • I have had similar recipes at Italian restaurants, so I eventually made up my own recipe to go with my meals at home.

1 garlic clove, minced
1/4 cup butter, divided
1 small yellow squash, halved lengthwise and sliced
1 small zucchini, halved lengthwise and sliced
1/2 cup julienned sweet red pepper
1/2 cup julienned green pepper
1/4 cup thinly sliced onion
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup chicken broth
1/2 cup half-and-half cream
8 ounces angel hair pasta, cooked and drained
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, saute chicken and garlic in 2 tablespoons butter for 10-12 minutes or until chicken juices run clear. Add vegetables. Cook until crisp-tender; remove from skillet and set aside. , In the same skillet, melt remaining butter. Add flour, salt and pepper; stir to form a smooth paste. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cream and heat through. Add chicken and vegetables; stir until well mixed. , Place pasta in a greased 2-qt. baking dish. Pour chicken mixture over top. Sprinkle with Parmesan cheese. Cover and bake at 350° for 15 minutes; uncover and bake 5 minutes longer.
