- To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs. Place on a baking sheet.
- To make the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and curly endive and simmer until the meatballs are cooked through and the curly endive is tender, about 8 minutes. Whisk the eggs and cheese in a medium bowl to blend. Stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin stands of egg, about 1 minute. Season the soup to taste with salt and pepper.
- Ladle the soup into bowls and serve. Finish soup with parmesan cheese if desired.

- Set oven rack to the center position and preheat to broil.
- Line a large sheet pan with foil and grease with olive oil. Set aside.
- In a medium bowl combine ground turkey, egg, breadcrumbs, parmesan cheese, onion, parsley, oregano, garlic, black pepper, and salt.
- Roll turkey meatball mixture into 2 tablespoon-sized balls (about 1 ¼-inch in diameter). Recipe makes about 20 to 22 meatballs.
- Evenly place meatballs onto the greased sheet pan.
- Broil meatballs for 8 to 10 minutes, until lightly browned on top. Remove from the oven and set aside.
- Heat olive oil over medium heat in a large heavy-bottomed pot.
- Add garlic, onion, carrots, and celery. Saute until vegetables have softened, about 5 minutes, stirring occasionally.
- Add ½ teaspoon salt, stir and cook another 2 minutes.
- Add chicken stock and bring to a boil over high heat. Once boiling, add the meatballs and cook 5 minutes.
- Reduce heat to medium-high and add pasta. Cook for 7 minutes or according to manufacturer's instructions. Turn off heat.
- Add the spinach and stir into the soup until wilted, about 1 minute. Taste and season with more salt and pepper as needed.

- Combine the chicken broth and 2 tablespoons oil in a large pot and bring to a boil.

- To make the meatballs it's really easy. Just mix all the meatball ingredients together in a big bowl and then shape them into walnut sized meatballs (about 40-45) and set aside while you prepare the soup.
- To make the soup, heat the olive oil over medium high heat and add the celery, onions, carrots and cook 5-7 minutes until the vegetables begin to soften. Add the broth, cover the pot and bring to a boil.
- Once the soup is at a boil, turn down the heat a little and slowly add the little chicken dumplings and simmer for about 10 minutes than add the gnocchi and simmer for another 5 minutes. Now add the peas and parsley and continue cooking for another 2 minutes.
- The soup is done when the meatballs and gnocchi are cooked through.

- 1. MAKE AHEAD: mix together the meatball ingredients. Form into miniature meatballs (about half of a normal bite-sized meatball) bake in a 350 degree oven for 15 minutes. You can refrigerate meatballs until ready to use.
- 2. In a large Dutch oven, heat olive oil. Add carrots, onions, and celery. Saute until softened.
- 3. Add chicken broth and seasonings. Bring to a boil. Turn down heat and simmer for 30 minutes.
- 4. Add pasta, prepared meatballs and frozen spinach. Simmer for for however long is required package directions of pasta.
