- Chop the onion and mince the garlic cloves. Chop the basil. Drain and rinse the chickpeas.
- In a large pot, heat the olive oil over medium high heat. Saute the onion until translucent, about 5 minutes. Stir in the garlic and basil for 1 minute. Add the chickpeas, red pepper flakes, broth, both cans of tomatoes and their juices, kosher salt, and several grinds of fresh pepper. Bring to a boil, then reduce to a simmer. Add the green beans, then simmer for 15 minutes.
- Break apart any clumps in the gnocchi, then add them to the pot and cook for 5 minutes until tender. Turn off the heat and stir in the spinach until wilted, about 1 minute.
- To serve, ladle soup into bowl and top with Parmesan and basil leaves if desired. Allow to cool slightly before diving in!

RIBOLLITA (TUSCAN WINTER SOUP) RECIPE

- Gather the ingredients.
- Boil the beans in water to cover by about 2 inches (4 centimeters), adding more boiling water if need be to keep them submerged, and lightly salting them when they're almost done.
- At this point, sauté the onion, carrot, celery, and parsley in the oil in a heavy-bottomed pot.
- When the onion has become translucent, about 5 to 8 minutes, add the tomato paste and the cooking liquid from the beans.
- Add the kale, beet greens or chard, and potatoes.

- Bring to a boil over high heat, stirring occasionally, until macaroni is tender.

- In a large bowl, use your hands to combine the ground beef, 2 minced garlic gloves, egg, bread crumbs, Italian seasoning, and pinch of salt. Form about 15-20 meatballs.
- Heat up a large skillet over medium heat. Add the meatballs, gently roll over to cook on all sides so they hold their shape.
- Meanwhile, in a large stock pot or dutch oven, heat up the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until translucent and become soft. About 8-10 minutes.
