4 cups broth (chicken, beef or vegetable) ((940 grams))
3 large eggs
½ cup freshly grated parmesan cheese ((50 grams))
1 dash nutmeg* (if desired)

Steps:

  • In a medium to large pot bring the broth to a boil.
  • In a small bowl beat together the eggs then add the parmesan cheese, and nutmeg (if desired). Beat until well combined. If you don't like nutmeg then a sprinkling of lemon zest before serving is also favourite with Romans.
  • Add the egg mixture to the boiling broth in a slow steady stream while mixing with a whisk, let cook for about 3-4 minutes. Once the mixture boils again*, give it another whisk and then serve. Sprinkle with chopped fresh parsley or more parmesan cheese if desired.

1 yellow onion
4 cloves garlic
½ cup chopped basil leaves, plus additional for serving if desired
15-ounce can chickpeas
2 tablespoons olive oil
2 pinches red pepper flakes
1 quart vegetable broth
28-ounce can diced fire roasted tomatoes*
15-ounce can diced fire roasted tomatoes
1 teaspoon kosher salt
Fresh ground pepper
1 1/2 cups frozen (or fresh) cut green beans
1 pound gnocchi (gluten-free if necessary; here's our favorite)
4 to 6 cups spinach leaves
Parmesan cheese, for serving (optional)*

Steps:

  • Chop the onion and mince the garlic cloves. Chop the basil. Drain and rinse the chickpeas.
  • In a large pot, heat the olive oil over medium high heat. Saute the onion until translucent, about 5 minutes. Stir in the garlic and basil for 1 minute. Add the chickpeas, red pepper flakes, broth, both cans of tomatoes and their juices, kosher salt, and several grinds of fresh pepper. Bring to a boil, then reduce to a simmer. Add the green beans, then simmer for 15 minutes.
  • Break apart any clumps in the gnocchi, then add them to the pot and cook for 5 minutes until tender. Turn off the heat and stir in the spinach until wilted, about 1 minute.
  • To serve, ladle soup into bowl and top with Parmesan and basil leaves if desired. Allow to cool slightly before diving in!

1 pound/500 g dried white beans (​cannellini or Navy beans, washed and soaked for 3 hours)
1 small onion (peeled and chopped)
1 small carrot (peeled and chopped)
1 6-inch stalk celery (chopped)
1 small bunch parsley (flat-leaf, chopped)
1/4 cup olive oil
1 1/2 tablespoons tomato paste
1 pound/500 g kale ( lacinato/Tuscan , ribs removed and leaves chopped)
1 pound/500 g beet greens (or Swiss chard , ribs removed and leaves chopped)
1/2 pound/250 g potatoes (peeled and diced)
Fine sea salt and freshly ground black pepper (to taste)
1 sprig of fresh thyme
1/2 loaf white bread (thinly sliced, day-old crusty Italian)

Steps:

  • Gather the ingredients.
  • Boil the beans in water to cover by about 2 inches (4 centimeters), adding more boiling water if need be to keep them submerged, and lightly salting them when they're almost done.
  • At this point, sauté the onion, carrot, celery, and parsley in the oil in a heavy-bottomed pot.
  • When the onion has become translucent, about 5 to 8 minutes, add the tomato paste and the cooking liquid from the beans.
  • Add the kale, beet greens or chard, and potatoes.
  • Stir in the cooked beans and season to taste with salt, pepper, and a sprig of thyme.
  • Simmer until the potatoes are tender and can be pierced easily with the tines of a fork, about 10 to 15 minutes.
  • Remove the thyme and discard.
  • Take a serving dish that can be heated and fill it with alternating layers of thinly sliced bread and soup, making sure the bread is damp-until the soup is used up.
  • Serve and enjoy!

  • Note: You can make the soup slimmer by using Italian turkey sausage. You can decrease the sodium by using dried and cooked beans instead of canned and rinsed.

2 (14 1/2 ounce) cans beef broth
1/2 cup elbow macaroni
1 lb ground round
1 can red kidney beans
1 cup spaghetti sauce

Steps:

  • Pour the beef broth and macaroni into a sauce pan.
  • Bring to a boil over high heat, stirring occasionally, until macaroni is tender.
  • Cook the ground beef in a frying pan, stirring to break up large chunks, until meat is brown; drain off fat.
  • Drain the beans (reserve the liquid).
  • Puree 1 cup of beans with all the reserved liquid in a blender.
  • When Macaroni is tender, stir the pureed beans, whole beans, cooked meat and spaghetti sauce into the pot.
  • Heat though and serve.

  • Heat up a large skillet over medium heat. Add the meatballs, gently roll over to cook on all sides so they hold their shape.
  • Meanwhile, in a large stock pot or dutch oven, heat up the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until translucent and become soft. About 8-10 minutes.
  • Stir in the minced garlic, chicken broth, tomato paste and cherry tomatoes until well combined.
  • Add the meatballs to the pot. Bring soup to a boil and then lower to a simmer. Cook for about 10 minutes until the tomatoes burst and the carrots are soft.
  • Add in the pasta and cook according to the package instructions. Once pasta is cooked, stir in the heavy cream and parmesan cheese.
  • Serve immediately.

½ cup onions (roughly chopped)
2 cups leeks (roughly chopped)
1 cup potatoes (diced)
1 head garlic (10-12 cloves of garlic) (minced)
4 chicken/vegetable stock cubes (crushed)
1 tbsp dried thyme
2-3 tbsp parsley (roughly chopped)
2 tbsp black pepper (crushed)
2-3 tbsp cream
3 tbsp olive oil
salt to taste
3 slices bread (diced)
1 tsp sea salt
2 tsp black pepper (crushed)
2 tbsp olive oil

Steps:

  • Heat your stock pot with the olive oil and throw in the onions. In another 3-4 minutes add the leeks and wait for them to soften
  • When that happens, add the potatoes, garlic, stock cubes, thyme and salt to taste. Give it a good mix and add 6 cups of hot water. Let this simmer over medium heat, until the potatoes are completely cooked
  • Insert a stick blender and blend this to smooth puree´ and let it gently simmer over medium heat. Add the cream, pepper and the parsley. Cook for 5-6 minutes and then remove from flame*
  • To make the croutons, in a pan add the olive oil and the bread. Keep stirring and frying until they are well browned. Season with salt and pepper, mix well and remove from flame
  • Serve your delicious, warming Italian garlic soup topped with the croutons and garnished with some cream, thyme and pepper. Enjoy!

5 cups mixed chopped vegetables (medium to large chopped / I used kale cabbage, carrots, celery, broccoli and zucchini)
3 cups frozen Borlotti beans **
1-2 cloves garlic chopped
2 tablespoons olive oil
1 teaspoon basil
1 teaspoon oregano
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
3/4 cup tomato purée (passata)
7-8 cups water
1 bouillon cube (if desired)
pinch or 2 hot pepper flakes
1-1 1/4 cups small pasta (dried)

Steps:

  • In a large pot add olive oil, garlic, vegetables, beans, spices, tomato purée, water and bouillon cube, stir to combine, bring to a boil and then turn heat down to simmer for approximately 30-45 minutes or until beans are tender (halfway through taste for salt). I would advise making your pasta separately in a pot of boiling salted water and then adding it to the soup (if you are keeping half the soup for later consumption then make half the pasta and only add it to the soup you will be eating or the pasta will get mushy). Enjoy!
  • **Dried soaked bean are fine too, they may take longer to cook.
