Steps:
- In a large nonstick skillet, brown sausage in 1 T olive oil; remove from skillet.
- Add remaining olive oil to skillet and saute peppers and onions for 5 minutes; remove from skillet.
- Add potatoes, salt, pepper, Italian seasoning, garlic powder, fennel seed and water to skillet; simmer over medium heat, covered, about 5 minutes.
- Return sausage, peppers and onions to skillet and mix well. Cover and simmer about 10 minutes, stirring occasionally, or until sausage is done and potatoes are tender.

ITALIAN SAUSAGE PASTA SKILLET

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
- Mix together the ricotta and lemon zest in a small bowl and season with salt and pepper; set aside.
- Meanwhile, heat the olive oil in a large cast-iron skillet over medium-high heat. Tear the sausage into 1- to 2-inch chunks and place in the skillet. Cook for 60 to 90 seconds, then flip and cook for an additional minute. Add the oregano, crushed red pepper, garlic and onion and cook, stirring occasionally, until the sausage is cooked through, about 4 minutes. Stir in the broccolini and jarred peppers. Using a ladle, remove 2/3 cup cooking water from the pasta pot and add to the skillet. Cook until the sauce is thickened and the broccolini is softened, about 3 minutes.
- Drain the pasta once cooked.
- Remove the skillet from the heat and stir in the pasta, lemon juice, yellow tomatoes and Parmesan. Dollop on the ricotta mixture; tear the basil leaves into large pieces and sprinkle them over the skillet. Serve the bread alongside the pasta, whole or torn into large chunks.

- Remove any casings from the sausage and discard.
- Crumble the sausage into a large skillet, brown over medium heat and drain, (if necessary).
- To the browned sausage in the skillet, (over medium-high heat), add the water, milk, butter, and pasta box contents, including the seasonings that come with it. Bring to a boil.
- As it comes to a boil, add the bell pepper and onion and reduce the heat to medium-low. Allow it to boil gently for 9 minutes, stirring occasionally -- pasta should be slighty firm at the end of the 9 minutes.
- Remove skillet from burner, stir, and allow to stand, covered, for five minutes.
- At the end of the 5 minutes, sprinkle the cheese over the top, re-cover and allow to stand for 3 more minutes, (to melt cheese), before serving.

- Brown sausage in a large skillet over medium heat until no longer pink inside. Remove from skillet and set aside.
- Add olive oil to the same skillet. When hot (a splash of water sizzles), add onion, garlic, and celery, stirring until soft and translucent. Add basil and stir until well mixed.
- Stir in bell pepper (I like to use different colors to make it pretty) until nicely combined.
- Add tomatoes and stock and stir to deglaze the pan of any stuck on vegetables. Bring to a low boil.
- Add broccoli, and then return sausage to pan, stirring until well combined.
- Reduce heat, cover, and simmer until broccoli is tender.
- Remove lid and add spinach, stirring just until wilted.
- Check seasoning, adding salt and freshly ground pepper as needed.
- Serve by itself or over hot rice, topped with crispy toasted French-fried onions.
