BAKED PENNE WITH ITALIAN SAUSAGE

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
- Bake in preheated oven for 20 minutes, or until cheese is melted.

An easy one-skillet penne pasta dish that comes together in less than 20 minutes. Spicy sausage flavors the tasty tomato sauce and penne pasta. A quick and easy dish that can be prepared ahead of time and then warmed before serving.

Steps:
- Heat a large skillet over medium-high heat. Add broken sausage and minced onion; cook about 5 minutes. With a wooden spoon keep the sausage in pieces. Drain and return to skillet.
- Add the undrained tomatoes, sauce, water, red pepper flakes, and penne pasta to the pan. Stir to combine and bring the liquid to a boil. Cover the pan and reduce the heat.
- Cook for 15 minutes or until pasta is tender.
- Sprinkle with Parmesan cheese. Serve with more parmesan cheese, if desired.

PASTA WITH PUMPKIN AND SAUSAGE

- Heat a large, deep nonstick skillet over medium high heat. Add 1 tablespoon of olive oil to the pan and brown the sausage in it. Transfer sausage to paper towel lined plate. Drain fat from skillet and return pan to the stove. Add the remaining tablespoon oil, and then the garlic and onion. Saute 3 to 5 minutes until the onions are tender.
- Add bay leaf, sage, and wine to the pan. Reduce wine by half, about 2 minutes. Add stock and pumpkin and stir to combine, stirring sauce until it comes to a bubble. Return sausage to pan, reduce heat, and stir in cream. Season the sauce with the cinnamon and nutmeg, and salt and pepper, to taste. Simmer mixture 5 to 10 minutes to thicken sauce.
- Return drained pasta to the pot you cooked it in. Remove the bay leaf from sauce and pour the sausage pumpkin sauce over pasta. Combine sauce and pasta and toss over low heat for 1 minute. Garnish the pasta with lots of shaved cheese and sage leaves.
- Serve pumpkin sausage pasta with pumpernickel or whole grain bread and Spinach Salad with Apple and Red Onion.
- Place spinach, apple, and onion in a salad bowl. Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute. Pour dressing over salad, toss, and season with salt and pepper, to taste.
ITALIAN SAUSAGE AND PENNE PASTA, SIMPLE ONE PAN MEAL

- Sauté garlic in a large frying pan with high sides in the olive oil until tanned. Discard.
- Cook sausages until just cooked through. Remove sausages to a cutting board. When cooled, slice each retaining their juice.
- Add the pasta and most of the chicken broth to the pan. Bring it to a boil. Add additional broth or water until absorbed and pasta is cooked al dente.
- Add the sliced sausages and their juices, Tuscany seasoning and the parmigiana cheese into the hot pan until incorporated.
- Optional, for a creamy sauce, add cream cheese to desired consistency while the pasta and pan are still hot.

CREAMY ITALIAN SAUSAGE ONE-PAN PASTA

- Heat the olive oil in a large, deep skillet over medium heat. When the oil is hot, add the sausage and cook until it starts to brown, about 5 minutes. Add the onions and cook until softened and translucent and the sausage is well browned, another 5 to 7 minutes. Add the oregano, fennel seeds, red pepper flakes, garlic and some salt and black pepper and stir again.
- Next, add the broth, tomato puree and tomato paste and stir well. Add the uncooked pasta into the sauce, bring to a simmer and cook, stirring occasionally, until the pasta is al dente, 15 to 20 minutes.
- Remove from the heat and stir in the mozzarella and mascarpone. Taste and add more seasoning if necessary. Serve with shaved Parmesan and torn basil leaves.
PENNE AND ITALIAN SAUSAGE
This recipe is from the Milk Calendar which I receive annually. It is a one pot recipe which I made often when I was working, and still come back to when I need a "comfort food" dish. The ingredients can be varied to suit your family's taste. I don't use the chili powder and usually let simmer for about 25 min over med low heat with occasional stirring.

- Cut sausage into 1" pieces, easier if slightly frozen.
- In large fry pan (I used electric) cook sausage over medium-high meat until browned on all sides.
- Add onion, garlic, Italian seasoning, crushed red pepper and chili powder if using.
- Cook until onion is tender.
- Stir in cornstarch.
- Add milk, stir until mixture comes to a boil and thickens.
- Add tomatoes and penne pasta.
- Return to boil, cover and simmer 15 min or until pasta is tender or to your preference.
- Stir in mozzarella cheese and serve.

SWEET ITALIAN SAUSAGE WITH PENNE PASTA
We are Italian and if you go through my recipes you'll find alot of wonderful, quick and easy pasta dishes. We love our pasta and we love garlic, too! Serve this with garlic Texas toast. I can't eat pasta much anymore because I'm diabetic but my husband and daughter love it so I keep making it for them. I usually eat salmon (I have one or two good ones for salmon, too- check them out).

- Boil the water and cook the penne according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
- Meanwhile, heat the oil (medium-high heat) in a large skillet and saute the broccoli, sausage and garlic until tender and starting to brown, about 15 to 20 minutes.

- In 8-inch skillet, melt butter over medium heat. Toast bread crumbs in butter 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.
- In 5-quart Dutch oven, heat oil over medium heat. Add sausage; cook 6 to 8 minutes, stirring occasionally, until no longer pink. Using slotted spoon, transfer to bowl; cover and keep warm. Add onions, bell pepper, Italian seasoning and salt to oil and drippings in pan; cook over medium-high heat 5 to 7 minutes or until softened and starting to brown.
- Stir in broth and tomatoes; heat to boiling. Stir in pasta; return to boiling. Stir in spinach; continue to stir 30 to 60 seconds or until wilted.
- Remove from heat; top with cheese. Top with basil and toasted bread crumbs.
