NEW POTATOES WITH SPINACH & CAPERS

New potatoes with spinach & capers image

Buttery new potatoes are a fantastic spring side to any dish, this zesty version with lemon, capers and greens offers a fresh and simple take

Provided by Sophie Godwin - Cookery writer

Categories     Side dish

Time 40m

Number Of Ingredients 6

500g new potatoes , halved
1 tbsp olive oil
2 tbsp butter
100g spinach
2 tbsp caper , drained and rinsed
zest and juice 1/2 lemon

Steps:

  • Put the potatoes in a large saucepan and cover with cold salted water. Bring to the boil, then simmer for 15 mins until they are tender but still hold their shape, and you can insert a cutlery knife easily.
  • Drain the potatoes and allow to steam-dry. Heat the oil with 1 tbsp of the butter in a large frying pan over a medium-high heat. Once the butter is foaming, add the potatoes, cut-side down, and fry undisturbed for 5 mins until golden.
  • Add the remaining butter along with the spinach, capers, lemon zest and juice. Stir everything together for a few mins so that the potatoes are coated and the spinach has wilted, then season to taste with salt and black pepper.

BEST EVER ITALIAN SPINACH

Best Ever Italian Spinach image

This is the best ever Italian Spinach. I believe it is very close to the recipe used by the Memphis resteraunt called Grisanti's. This recipe would also be VERY easy to double or triple. I hate eggs, and I love this recipe. My husband is not a huge 'green veggie' fan, and he loves this recipe. It is great, fast, easy, involves common ingredients, and will be a staple in your kitchen. I am going to try cooking in batches and putting in ziplocks to freeze (OAMC).

  • In a large pot heat the olive oil and add the chopped yellow onion and spring onions. Cook over medium heat for approximately 5 minutes, stirring occasionally to prevent the onion from burning.
  • Next add the potatoes to the pot along with the tomato sauce and 1 cup of water. Season with the salt and pepper. Bring to a boil and then reduce the heat to medium and cook, covered, for 20-25 minutes or until the potatoes are tender. Stir occasionally to make sure that the potatoes do not stick to the bottom of the pot. Do so carefully as to not break up the potatoes. If your pot is getting too dry during the cooking process, add a little more water, 1/4 cup at a time.
