ITALIAN POTATO BOATS
These potatoes are so filling. You can eat them as a side dish or a full meal. Creamy and cheesy, we couldn't get enough of these. Italian dressing mix adds a tangy flavor. The skin crisps up nicely while the middle remains wonderfully creamy. These are seriously delicious.

BEEF AND POTATO BOATS
Meet the Cook: Back when I was teaching elementary school (I'm now a busy stay-at-home mom to our two youngsters, 7 and 2), my class would put together a Mother's Day cookbook. Many of the dishes are still my favorites - this one included. -Linda Wheeler, Harrisburg, Pennsylvania

ITALIAN MASHED POTATOES RECIPE
TRADITIONAL ITALIAN RECIPE: Everybody seems to have their favorite way of making mashed potatoes. Some cook the potatoes with the peel on, some without. Some add a little of the cooking water to the mashed potatoes for extra starch. I have found that the single thing that makes the biggest difference for making perfect creamy, heavenly potatoes is the type of potatoes you use.

Steps:
- 01 - Wash the Potatoes. 02 - Place the Potatoes ( with skin on ) in a pot of boiling salted water, and cook them for about 30 minutes, or until very soft. The skin will not let the Potatoes absorb too much water, and it will be easier to peel them. 03 - Once the Potatoes have cooked, drain them and cool their skin under cold runnign water for 1 minute. 04 - Peel the Potatoes simply by removing their skin by hand ( if they are well cooked the skin should come off very easily ). 05 - Using a potato ricer or a food mill, mash the Potatoes in the same pot you have cooked them in. 06 - Add the Milk and stir everything over a low heat. 07 - Add Butter, Salt, Nutmeg and Parmesan Cheese if used and mix until the Mashed is smooth.

- Take the potatoes and rub them with olive oil and salt, then place them on a baking sheet. Insert the potatoes in the oven on the lowest rack and allow to cook for about an hour or until done. Turn the potatoes every 15 minutes to make sure that they cook thoroughly throughout.
- Once the potatoes are done, take them out of the oven and allow them to cool. This can take about 30 minutes.
- While the potatoes are cooling down, in a medium size bowl, add your chopped spinach, cilantro, diced tomatoes, and feta cheese and drizzle with olive oil. Do not use canned diced tomatoes or the frozen chopped spinach. It will not taste the same and it make not cook as well because of the added moisture.
