TUSCAN-STYLE BURGERS



Tuscan-Style Burgers image

Number Of Ingredients 15

2 tablespoons olive oil
1 pint cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
2 cloves garlic, chopped to a paste
1 tablespoon fresh oregano leaves
12 ounces ground pork
12 ounces ground chuck (80 percent lean)
Kosher salt and freshly ground black pepper
Olive oil, for the cazuelas
2 teaspoons ground fennel
2 teaspoons paprika
4 brioche buns, split
12 ounces Taleggio cheese, thinly sliced
1/4 cup ketchup
Fresh oregano leaves, for serving

Steps:

  • Heat a gas or charcoal grill to high heat. Place a large heatproof skillet on the grill (alternatively, you can use a stovetop over medium heat). Place 4 cazuelas on the grill for a few minutes.
  • For the mushrooms: Heat the olive oil in the large heatproof skillet until it begins to shimmer. Add the mushrooms and some salt and pepper and cook, stirring just a few times, until they release their liquid and turn golden brown, about 10 minutes.
  • Stir in the garlic and oregano and cook for 1 minute longer. Remove from the heat and set aside.
  • For the burgers: Combine the ground beef and pork together in a large bowl, being careful not to overmix. Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 1 1/2 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper.
  • Add enough olive oil to each cazuela to thinly coat the bottom and sides. Carefully place each patty, divot-side up, inside each cazuela. Combine the fennel, paprika and some salt and pepper in a small bowl, then sprinkle over top of each burger. Grill, covered, until charred and completely cooked through, 3 to 4 minutes per side.
  • While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
  • Add the cheese to the tops of the burgers. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
  • Top each burger with a large spoonful of the mushrooms. Place the burgers on the bottom buns. Top with the ketchup, oregano and top buns and serve immediately.

ITALIAN PORK BURGER WITH FRESH TOMATO SALSA

500g pork mince
1 tsp fennel seed
1 tsp chilli flakes
1 tsp dried oregano
drizzle of olive oil
2 large tomatoes , chopped
6 black olives , chopped
drizzle of balsamic vinegar
4 ciabatta bread rolls, split and toasted
4 tbsp mascarpone
handful baby spinach

Steps:

  • Mix the pork mince with the fennel seeds, chilli flakes, oregano and some seasoning. Mix well with your hands until well combined, then shape into 4 burgers. Heat a drizzle of oil in a large frying pan - or fire up the BBQ and brush the burgers with a little oil - and cook the burgers for 5-7 mins on each side until cooked through.
  • Meanwhile, mix the tomatoes, olives, balsamic vinegar and a drizzle more oil with some seasoning to make a salsa. Top the base of each roll with 1 tbsp mascarpone, a few spinach leaves, a burger and a spoonful of the salsa, then sandwich everything with the lid.

1/4 cup chopped pitted dates
3 Tbsp. raisins
2 Tbsp. HEINZ Apple Cider Vinegar
1 Tbsp. extra virgin olive oil
1 Italian sausage link (1/4 lb.)
1 lb. ground pork
1 cup chopped roasted red peppers
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1/2 tsp. fennel seed
4 brioche sandwich rolls
1/4 cup KRAFT Real Mayo
1/4 cup GREY POUPON Harvest Coarse Ground Mustard
4 lettuce leaves
1 large tomato, cut into 4 slices

Steps:

  • Heat grill to medium heat.
  • Combine first 5 ingredients in medium bowl. Mix vinegar and oil until blended. Add to apple mixture; mix lightly. Refrigerate until ready to serve.
  • Meanwhile, grill sausage 10 min. or until done (160ºF), turning occasionally. Transfer to cutting board; cut diagonally into 4 thin slices.
  • Mix ground pork, peppers, Worcestershire sauce and fennel seed just until blended. Shape into 4 (1-inch-thick) patties. Grill 7 min. on each side or until done (160ºF), adding buns, cut sides down, to grill to toast for the last minute.
  • Spread cut sides of buns with mayo, then mustard. Place lettuce on bottom halves of buns; top with burgers, tomatoes and sausage. Cover with tops of buns. Serve with apple salad.

1 1/4 teaspoons dried Italian seasoning, crushed
1/4 teaspoon salt
1/4 teaspoon black pepper
2 ounces italian Fontina cheese or 2 ounces mozzarella cheese, thinly sliced
1 1/2 cups pitted green olives, coarsely chopped
1 dash crushed red pepper flakes

Steps:

  • In a large bowl combine combine ground pork, 1 teaspoon of italian seasoning, salt and black pepper; mix well. Form mixture into four 3/4-inch thick patties.
  • Cook patties, uncovered, on the rack directly over medium coals for 14-18 minutes or until done (160F) and juices run clear, turning once halfway through. Top each burger with cheese. Grill 1-2 minutes more until cheese begins to melt.
  • Meanwhile, in a small bowl combine olives, oil, crushed red pepper and remaining 1/4 teaspoon italian seasoning. Top burgers with olive mixture.

5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

4 baking potatoes , unpeeled, each cut into 8-10 wedges
2 tbsp olive oil
zest and juice 1 lemon
50g fresh breadcrumb
500g pack pork mince
50g grated parmesan
2 tbsp chopped parsley
1 large garlic clove , crushed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss potato wedges in a large roasting tin with 1 tbsp oil and lemon juice. Spread out in a single layer. Bake for 35-45 mins, turning halfway, until golden brown and crisp.
  • Meanwhile, place the breadcrumbs in a mixing bowl and moisten with 2 tbsp cold water. Add the mince, Parmesan, parsley, garlic and lemon zest. Season, mix well, then shape into 4 large, flat patties.
  • Heat remaining oil in a pan and cook the patties for 7 mins on each side, or until they have a golden crust and are cooked through (alternatively, cook on the barbecue). Serve with the wedges and a tomato and rocket salad, if you like

Steps:
