1 (12 ounce) package dry penne pasta
2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce

PENNE WITH SPINACH PESTO AND TURKEY SAUSAGE

Penne with Spinach Pesto and Turkey Sausage image

Spinach takes center stage here: it serves as the base for the super-green pesto, along with basil and peas, and leaves are crisped in the oven for the topping. Coins of roasted Italian turkey sausage add heft but can be omitted if you want to go vegetarian.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Time 35m

Number Of Ingredients 9

7 cups packed curly spinach leaves, well washed and dried
2 cups packed fresh basil leaves
1 tablespoon fresh lemon juice
1 1/2 cups frozen peas, thawed
1/3 cup extra-virgin olive oil, plus more for drizzling
1/3 cup grated Parmesan, plus more for serving
Kosher salt and freshly ground pepper
12 ounces sweet Italian turkey sausage (3 to 4 links)
1 pound short pasta, such as penne rigate

Steps:

  • Preheat oven to 450 degrees. In a food processor, combine 4 cups spinach, basil, lemon juice, 1/2 cup peas, and olive oil; process until combined. Pulse in cheese; season with salt and pepper. Using kitchen shears, snip sausage into 1-inch pieces. Drizzle with oil; roast on a rimmed baking sheet until undersides are brown, 7 to 8 minutes. Flip and push to one side. Lightly drizzle remaining 3 cups spinach with oil; season with salt and pepper. Scatter evenly over other half of sheet; roast until sausage is cooked through and spinach is crisp, 5 to 6 minutes more.
  • Meanwhile, cook pasta in a pot of salted boiling water according to package directions. Drain, reserving 1 cup pasta water. Return pasta to pot; add pesto, sausage, remaining 1 cup peas, and pasta water, 1/4 cup at a time, until evenly coated. Season with salt and pepper. Serve, topped with crisped spinach, more cheese, and a drizzle of oil.

ZESTY MIXED SALAD WITH ITALIAN SAUSAGE

Zesty Mixed Salad With Italian Sausage image

Our FAVORITE salad ever. . .it's a spin on one of Giada's recipes. Great as a main dish or as a side. I love the mix of the lettuce, warm salty sausage, creamy cheese and beans along with the sweet dressing. Sure to please anyone!

Provided by januarybride

Categories     Beans

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 10

2 heads romaine lettuce, cut into bite sized pieces
8 ounces bulk Italian sausage (sweet, traditional or hot)
15 grape tomatoes, cut in half
1/3 cucumber, peeled and cubed
4 ounces monterey jack cheese cubes
3/4 cup canned red kidney beans, rinsed and patted dry
3/4 cup canned garbanzo beans, rinsed and patted dry
2 green onions, cut into 1/4 inch pieces
Good Seasons Italian dressing (the dry mix)
2 tablespoons honey

Steps:

  • Mix up the Italian Dressing as per the instructions on the package (I usually add a little extra water, but that's up to you). It is also good to use raspberry flavored vinegar.
  • Add honey to the dressing and shake/mix well.
  • Brown the sausage, drain and set aside (keeping warm, but not hot).
  • In the meanwhile place the lettuce on the bottom of a big bowl.
  • Top with the tomatoes, both types of beans, green onions and finally the cheese.
  • Top the salad with the warm sausage.
  • Pour 3 or 4 turns of the dressing over the salad and mix well with tongs. Add more dressing if you like, but be forwarned that a little dressing goes a long way with this salad.
