TRADITIONAL ITALIAN GLUTEN FREE MEATBALLS

Delicious gluten free traditional meatballs. My friend's grandmother gave me her traditional meatball recipe. Here is my gluten-free version of the recipe.

2 pounds of ground beef (80/20 chuck works best with this recipe)
1 egg
1 tablespoon of parmesan cheese (grated)
3 cloves of garlic (finely minced)
1 teaspoon of parsley
1/4 cup of gluten free bread crumbs
1 teaspoon of salt
oil for frying

Steps:

  • Combine all ingredients in a large bowl.
  • Roll into meatballs.
  • Fry meatballs in oil and brown them well on all sides over medium-low heat, turning carefully about 10 minutes.
  • Then simmer meatballs in 1 1/2-2 quarts of gluten free sauce.
  • Serve and enjoy.

Perfect Gluten-Free Italian Meatballs image

These are the perfect gluten-free Italian meatballs. They are great with your favorite gluten-free pasta, zucchini noodles, or on top of gluten-free pizza crust. They can also be served as an appetizer with marinara dipping sauce.

1/4 cup raw cashews
2 tbsp olive oil
1/2 onion diced
3 cloves garlic (minced)
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 1/2 tsp dried parsley
1/2 tsp red pepper flakes ((optional))
1 1/2 tsp salt
1 large egg
1 lb grass-fed ground beef or lamb

Steps:

  • Preheat oven to 400 degrees F.
  • Bring 4 cups of water to a boil in medium saucepan. Add cashews and boil until softened, about 15 minutes. Drain and rinse well.
  • While the cashews are boiling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add onions and cook until softened and lightly browned. Add garlic, oregano, basil, parsley, and red pepper flakes (optional) and cook until fragrant (about 30 seconds).
  • In your food processor, add the onion mixture, boiled cashews, egg, and salt. Process until a fine paste develops, about 1 minute. Transfer to a large mixing bowl.
  • Add ground beef or lamb and knead with your hands until well combined.
  • Roll mixture into 1 1/2 inch meatballs and place onto a foil-lined cookie sheet. I use a cookie scoop to make this process faster.
  • Bake meatballs in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

1 lb ground beef
2 eggs
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/2 cup grated locatelli cheese

Steps:

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.
  • Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
  • Drop raw meatballs into large (I use a stock pot) pot of sauce.
  • (I have an incredible sauce recipe {#92096} I use for my meatballs).
  • Simmer for about 3 hours.

1 lb ground beef
1 lb ground pork
2/3 cup sorghum flour
1/3 cup milk
2 eggs
1/2 cup parmesan cheese
1 tablespoon parsley flakes
2 teaspoons salt
1/2 teaspoon black pepper
3 garlic cloves, crushed
1/8 teaspoon ground nutmeg
1 teaspoon dried Italian herb seasoning

Steps:

  • Cover a baking sheet with foil and spray lightly with cooking spray.
  • Soak flour in milk in a small bowl for 20 minutes.
  • Mix beef and pork together in a large bowl. Stir flour mixture, eggs, parsley, garlic, salt, black pepper, nutmeg, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined.
  • Cover and refrigerate for about one hour. (optional).
  • Preheat an oven to 425 degrees F.
  • Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
  • Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

I have to cook gluten-free for some family members who love Italian food, but cannot tolerate the gluten. I have re-vamped my recipes so they can enjoy good food with the rest of the family. Even if you are not GF, you will still enjoy these meatballs. They are delicious!!

½ cup milk
1 egg
1 cup gluten-free Italian bread crumbs
1 ½ pounds ground beef
¼ onion, minced
1 clove garlic, minced
1 sprig fresh parsley, chopped
cooking spray
1 (28 ounce) jar tomato sauce, or as needed

Steps:

  • Beat milk and egg together in a large bowl. Mix bread crumbs in until a paste forms. Add ground beef, onion, garlic, and parsley, and mix with your hands until just combined.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet with cooking spray.
  • Measure meatballs using an ice cream scoop. Roll balls with dampened hands and place on the prepared baking sheet
  • Bake in the preheated oven until meatballs are no longer pink in the center and an instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C), about 30 minutes.
  • While meatballs bake, heat tomato sauce in saucepan over medium heat.
  • Add baked meatballs to the sauce and simmer, uncovered, for 30 minutes.
