This is an italian thick hot chocolate drink served in cappuchino cups with a spoon. I like this even as a hot dessert. Its like a hot dense chocolate fondue. The cocoa powder has to be dark and bitter, not the sugary version.

1 tablespoon cocoa powder, bitter
2 tablespoons sugar
1 teaspoon plain flour
1 cup whole milk

Steps:

  • Mix the dry ingredients in a thick sauce pan.
  • Mix in the milk, a tbsp at a time until it becomes smooth and then add the rest of the milk at a faster pace.
  • Heat mixing all the time for about 5 minutes until thick. Pour into 2 cups and serve steaming hot with a spoon on the side.

5 tablespoons Dutch-processed cocoa powder
2 tablespoons sugar
6 ounces dark chocolate, finely chopped (at least 70% cacao solids)
2 cups milk

Steps:

  • In a small saucepan over low heat, add the cocoa powder, sugar, and 2 tablespoons of the milk,
  • Heat until the sugar melts and no lumps remain, stirring well.
  • Bring to a low boil, stirring constantly; add the remaining milk.
  • Turn off the heat, add the chopped chocolate, stirring until smooth.

Steps:

  • Mix the cocoa powder and sugar together in a small saucepan. Stir the 1 1/2 cups milk into the saucepan until the sugar has dissolved. Place over low heat; slowly bring the mixture to a low simmer.
  • Whisk 2 tablespoons of milk together with the cornstarch in a small cup; slowly whisk the cornstarch slurry into the cocoa mixture. Continue cooking, whisking continually, until the hot chocolate reaches a pudding-like thickness, 2 to 3 minutes.
