ITALIAN LEAFY GREEN SALAD

- In a large bowl, combine the romaine, escarole, radicchio, red-leaf, scallions, red pepper, green pepper and cherry tomatoes.
- Whisk together the grapeseed oil, basil, vinegar, lemon juice and salt and pepper. Pour over salad, toss and serve immediately.

This is my usual green salad to go with dishes like spaghetti, lasagna, carbonara, etc. My husband doesn't like black olives, so those are usually on the side so I can have plenty! :) I generally make a really basic vinaigrette, with just olive oil, red wine or balsamic vinegar, salt, and Italian herbs.

- For the dressing: In a blender, add the olive oil, mayonnaise, Parmesan, parsley, sugar, vinegar, black pepper, salt, red pepper flakes, garlic and lemon juice and blend until pureed.
- For the salad: Put the romaine and iceberg greens in a large bowl and toss with the dressing. Top the salad with the pepperoncini, olives, tomatoes and onions. Sprinkle with Parmesan at the end.

Steps:
- Cook beans in 2 quarts boiling, salted water until crisp-tender, about 7 minutes.
- Drain and rinse well under cold water; drain again and pat dry.
- Combine vinegar,mustard and salt in medium bowl.
- Slowly whisk in oil in thin stream.
- Combine beans, onion and 1/2 cup pine nuts in large bowl; mix in vinaigrette.
- Season to taste with salt and pepper and let marinate 15 to 30 minutes.
- Alternate radicchio and Bibb lettuce leaves over large platter.
- Mound bean mixture in center, sprinkle with reserved pine nuts and serve.
