The Best Italian Green Salad image

Our family's Italian green salad is the best!

Number Of Ingredients 7

9 ounces lettuce ((butter lettuce, romaine or a combination))
white bottoms of 2 green onions ((optional))
4 teaspoons olive oil ((not extra virgin))
3 tablespoons white balsamic vinegar ((see notes))
1/8 teaspoon garlic powder
1/8 teaspoon salt
scant 1/8 teaspoon black pepper

Steps:

  • Use a pre-washed bag of lettuce or, if starting with a head of lettuce, make sure the leaves are rinsed and dried. Place the lettuce in a large bowl.
  • If using the white part of the green onions, rinse and dry the green onions, snip off the root end and slice the white part of the onion thinly. Add the white onion slices to your salad.
  • If you are using the 9 ounces of lettuce called for, you can just add the dressing ingredients one at a time to the salad and toss with two spoons to mix well.
  • If you would rather make the dressing separately, add the dressing ingredients to a small bowl or container and whisk to combine. (If you have a lid on the container, you can shake it up to mix it.) Pour the mixed dressing onto the lettuce and toss well with two spoons. (Use less dressing if you have less than 9 ounces of lettuce.)
  • Serve immediately and finish leftovers within an hour or so. Leftover salad will get soggy, but keep it refrigerated if saving it and eat it within a day or so.

Green Bean Salad (Easy Italian Recipe - Served Cold or Hot) image

A super quick and easy hot or cold green bean salad, popular in Italy.

12 oz (340 g) fresh green beans (or use frozen)
about 1 tsp salt
1 clove garlic (medium sized) -optional
1.5 Tbsp extra virgin olive oil
1 tsp red wine vinegar -optional

Steps:

  • Snap off the end(s) of the green beans and wash well (if they are fresh). If the beans are really long, you can cut/snap them in half. Frozen bean will be ready to use.
  • Heat enough water in a pot to just cover the beans and bring to a boil. When boiling, toss in the beans. Cover and simmer for 5 minutes then add about ½ tsp of salt. Check to see if they are ready, but you may need to continue cooking for another 1 to 5 minutes. The size of the beans will determine how long they need to cook (mine were ready in about 8 mins).
  • If you want to cool them quickly, or you might have cooked them longer than you wanted to, run them under cold water. If not, just drain and put into a bowl.
  • Add the sliced garlic (if using). If not using garlic, you can add a strong wine vinegar. In Italy, it's either with garlic or vinegar, but not both (according to my mother). Drizzle the extra virgin olive oil over the beans. Add the red wine vinegar if you didn't add garlic, and finally, salt if necessary (it will almost definitely need more salt).
  • Toss and mix well and either serve immediately, or refrigerate if serving cold.

1/4 cup fresh lemon juice
2 teaspoons grated lemon peel
1 teaspoon honey
1 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 cup olive oil
1 head romaine lettuce, coarsely chopped
4 Belgian endives, thinly sliced crosswise
1 cup pitted kalamata olives, halved
1 cup (lightly packed) fresh Italian parsley leaves, coarsely chopped
3/4 cup (lightly packed) fresh basil leaves, torn into bite-size pieces

Steps:

  • Blend the lemon juice, lemon peel, honey, 1 teaspoon of salt, and 1/4 teaspoon of pepper in a blender. With the machine running, gradually blend in the oil.
  • Toss the lettuce, endive, olives, parsley, and basil in a large bowl with enough dressing to coat. Season the salad with more salt and pepper, to taste, and serve.

1 cup torn escarole
1 cup torn radicchio
1 cup torn red leaf lettuce
¼ cup chopped green onions
½ red bell pepper, sliced into rings

12 cherry tomatoes
¼ cup grapeseed oil
2 tablespoons chopped fresh basil
¼ cup balsamic vinegar
2 tablespoons lemon juice
salt and pepper to taste

Steps:

  • In a large bowl, combine the romaine, escarole, radicchio, red-leaf, scallions, red pepper, green pepper and cherry tomatoes.
  • Whisk together the grapeseed oil, basil, vinegar, lemon juice and salt and pepper. Pour over salad, toss and serve immediately.

1/4 cup grated Parmesan (pre-grated in a pack from the store)
1/4 cup minced fresh parsley
1 tablespoon sugar
1 tablespoon vinegar
2 teaspoons black pepper
1 teaspoon salt
1/4 teaspoon red pepper flakes
1 clove garlic, pressed
Juice of 1 lemon
1 head romaine lettuce, roughly chopped
1/2 head iceberg lettuce, chunked
6 whole pepperoncini
1/2 cup whole black olives
1/2 cup whole red cherry tomatoes
1/2 small red onion, very thinly sliced into circles
1/3 cup grated Parmesan

Steps:

  • For the dressing: In a blender, add the olive oil, mayonnaise, Parmesan, parsley, sugar, vinegar, black pepper, salt, red pepper flakes, garlic and lemon juice and blend until pureed.
  • For the salad: Put the romaine and iceberg greens in a large bowl and toss with the dressing. Top the salad with the pepperoncini, olives, tomatoes and onions. Sprinkle with Parmesan at the end.
