EASY ITALIAN CHICKEN II
Chicken breasts marinated in Italian-style salad dressing, then baked! It is the easiest and most delicious meal ever and my husband thinks I slave all day to make it!

- To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).
- Preheat oven to 350 degrees F (175 degrees C).
- Remove chicken from bag, discarding remaining marinade. Place chicken in a lightly greased 9x13 inch baking dish and bake at 350 degrees F (175 degrees C) for 1 hour, or until chicken is cooked through and juices run clear. Note: Turn chicken occasionally while baking.

- Heat the olive oil in a large skillet with a lid over medium heat, and cook and stir the chicken and garlic until the chicken is no longer pink in the center, 5 to 8 minutes. Pour the wine and diced tomatoes with their juice into the skillet, and bring to a boil over high heat while scraping any browned bits of food off of the bottom of the pan with a wooden spoon.
- Stir in the shell pasta, and return to a boil. Cook uncovered, stirring occasionally, until the shells have cooked through, but are still firm to the bite, about 10 minutes. Spread the spinach over the top of the pasta, cover, and simmer until the spinach leaves are cooked, about 5 minutes. Sprinkle the mozzarella cheese evenly over the skillet, and simmer until the cheese has melted and the pasta is bubbling, about 5 minutes.

- 1. Preheat oven to 425 degrees F (220 degrees C).
- 2. Mix Parmesan cheese and Italian bread crumbs in a bowl.
- 3. Rinse chicken under cold water. trim off fat from chicken and slice into halves. Pat chicken dry.
- 4. Lightly coat chicken into the mayonnaise, then into the bread crumbs mixture to coat. Arrange coated chicken on a baking sheet.
- 5. Bake 45 minutes in the preheated oven, flipping once halfway through (this helps avoid loosing bottom coat). Cook for full duration or until coating is golden brown.

Steps:
- Use a medium-size skillet over medium heat to saute the mushrooms in the 3 tablespoons of butter until tender.
- Remove from the heat and set aside.
- Sprinkle the chicken breasts with lemon juice, season lightly with salt and pepper, and rub gently into the chicken.
- Heat the 5 tablespoons of butter in a large skillet.
- Quickly turn the chicken in the butter to completely coat the pieces.
- Cover the skillet and bake in a preheated 400° oven for 6-8 minutes.
- The chicken should feel slightly springy when you press it with a finger.
- Place the breasts on 6 warmed dinner plates.
- Add the beef gravy to the skillet and bring almost to a boil.
- Add the cream and cook at the same high heat until the sauce begins to thicken, then add the mushrooms.
- Season to taste.
- Spoon some sauce over each chicken breast.

- Preheat oven to 350°F.
- Combine eggs, parmesan cheese and bread crumbs - mix well.
- Stir in chicken.
- Shape mixture into eight (8) 3/4-inch thick patties.
- In a large skillet, cook patties in butter over medium high heat for 2-3 minutes per side or until golden brown.
- Arrange in a 10 x 6 x 2-inch baking dish.
- Cook green pepper and onions in oil until tender and remove from heat.
- Add remaining ingredients, except cheese and stir well.
- Spoon sauce over patties.
- Sprinkle with cheese.
- Bake uncovered for 25 minutes or until hot.
