RISI E BISI -- ITALIAN STYLE RICE AND PEAS
This is one of the first solid food entrees for many Italian children. It is one of my favorites and I continue to eat it today, at 35 years and counting!

Steps:
- Place chicken stock in a small pot and warm over low heat.
- Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.
ITALIAN RICE PIE II
This sweet rice pie is a dessert traditionally served on Easter by many Italian families. But this version is so good, I make it more often than that.

Steps:
- Stir the flour and baking powder together in a bowl; set aside. In a second large bowl, cream the butter and 1/2 cup sugar until light and fluffy. Beat in 3 eggs, one at a time, and stir in the vanilla. Gradually beat in the flour mixture to make a soft dough. Divide the dough in half and shape into two balls. Working on a lightly floured surface, roll out each ball to fit two 10 inch pie plates. Line the pie plates with the crust, and refrigerate until needed.
- Bring the water to a boil in a saucepan, and stir in the rice. Reduce the heat to medium-low, cover, and cook for 20 minutes. Stir in the milk. Continue cooking, stirring frequently, until the mixture thickens. Set aside to cool.
- Preheat oven to 325 degrees F (165 degrees C).
- Meanwhile, beat the ricotta cheese, 1 1/2 cups sugar, lemon juice, lemon zest, and 6 eggs together in a mixing bowl until smooth and frothy. Stir in the cooled rice mixture until evenly blended. Pour into the pie shells.
- Bake pies in preheated oven until the filling is set and tops are golden brown, about 90 minutes. Cool on racks.

ITALIAN BAKED RICE AND CHEESE
I strongly recommend converted rice for this, I have used regular long grain white rice for this recipe and the texture of the cooked rice was too soft.

Steps:
- Set oven to 400 degrees.
- Butter a 13 x 9-inch baking pan.
- In a large bowl, combine ALL ingredients EXCEPT the cheddar, Romano OR Parmesan cheese and the whipping cream; mix well to combine all ingredients.
- Transfer to a prepared baking dish.
- Cover with foil, crimping the foil very tightly to edges of dish not to let any steam escape.
- Bake for 1 hour (stirring at the end of 30 minutes).
- Remove from oven and stir in the cheeses and the whipping cream.
- Return to oven; continue to bake for 10 minutes longer.
- Note: although I have never tryed it, I presume that half and half cream may be replaced for the whipping cream.
BAKED RICE WITH CHEESE AND TOMATOES
From my favorite inherited cookbook, "Cook Like a Peasant, Eat Like a King. The cookbook is from the 70's and documents the travels of two California "foodies" traveling through Europe, eating dishes made by "peasant women" in small villages. This side dish recipe is from Switzerland. I picture it as a comforting side dish. I like the combo of the swiss cheese and parmesan (not one I'm used to seeing), highlighting the influences of neighboring Italy.

ITALIAN RICE CASSEROLE
An exchange student who stayed with us made this rice casserole for us. It's good served with crusty rolls. Now I like to make this, especially when we're having company over who knew our "other daughter".

ITALIAN-STYLE RICE
While living in Milan with my husband, Leon, I picked up this recipe. Since it contains very little spice, this simple side dish is good for folks who can't eat spicy food.-Kathry Manwiller, Wyomissing, Pennsylvania
