Ingredients

1/2 lb shortcrust pastry
2 medium eggs
4 ounces butter
4 ounces white sugar
2 ounces rice flour
1 teaspoon ground nutmeg
halved glace cherries

Steps:

Oven 375 degrees or Mark 5.
Grease patty tins.
Roll out pastry thinly on a lightly floured surface, cut into rounds and place in prepared patty tins. Prick bottom of each with a fork.
In a bowl, beat eggs and sugar until the mixture is thick and frothy.
Melt butter in a pan until just liquid, add the ground rice and nutmeg, lastly the egg and sugar mixture.
Mix well together and half-fill each patty shell with the mixture.
Place half a cherry on each pie and bake for about 15 minutes or until golden brown.
Turn out on to a wire rack and leave to cool.
These pies keep well.
