Steps:
- Oven 375 degrees or Mark 5.
- Grease patty tins.
- Roll out pastry thinly on a lightly floured surface, cut into rounds and place in prepared patty tins. Prick bottom of each with a fork.
- In a bowl, beat eggs and sugar until the mixture is thick and frothy.
- Melt butter in a pan until just liquid, add the ground rice and nutmeg, lastly the egg and sugar mixture.
- Mix well together and half-fill each patty shell with the mixture.
- Place half a cherry on each pie and bake for about 15 minutes or until golden brown.
- Turn out on to a wire rack and leave to cool.
- These pies keep well.
