My Hawaiian Grandpa's famous Hawaiian Beef Stew. A tangy & rich tomato gravy simmers with onions, carrots, potatoes, & beef until perfectly fall-apart tender. Serve it Hawaiian-style, over rice, for the best comfort food dinner! Slow cooker & Instant Pot directions provided in the Recipe Notes, below.

3 tablespoons olive oil
½ cup all-purpose flour, divided
2 pounds beef chuck, trimmed & cubed into 1-inch pieces
2 teaspoons kosher salt
2 teaspoons ground black pepper
2 stalks celery, finely sliced
4 medium carrots, peeled as desired & cut into 1-inch pieces
3 medium yellow onions, peeled & cut into 1-inch pieces
3 medium Yukon Gold potatoes, peeled & cut into 1-inch cubes
2 tablespoons tomato paste
1 (one) 8-ounce can tomato sauce
½ cup shoyu (or low-sodium soy sauce)
½ cup Worcestershire sauce
4 cups low-sodium beef stock, divided
for serving, as desired: rice

Steps:

  • Once the beef is browned, add the remaining ingredients into the pot: celery, carrots, onions, potatoes, tomato paste, tomato sauce, shoyu, Worcestershire, & 3 ½ cups of the beef stock. Stir to combine.

1 tablespoon canola oil
1 tablespoon sugar
1-1/2 pounds beef top sirloin steak, cut into 3/4-inch cubes
5 plum tomatoes, finely chopped
3 large carrots, cut into 1/2-inch slices
3 celery ribs, cut into 1/2-inch slices
4 green onions, chopped
3/4 cup reduced-sodium beef broth
1/4 cup barbecue sauce
1/4 cup reduced-sodium soy sauce
2 tablespoons steak sauce
1 tablespoon garlic powder
1 teaspoon dried thyme
1/4 teaspoon ground allspice
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 tablespoon cornstarch
2 tablespoons cold water
Optional: Hot cooked rice or mashed potatoes

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add sugar; cook and stir until lightly browned, 1 minute. Add beef and brown on all sides. , Stir in the vegetables, broth, barbecue sauce, soy sauce, steak sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer until meat and vegetables are tender, 1 to 1-1/4 hours., Combine cornstarch and water until smooth; stir into stew. Bring to a boil; cook and stir until thickened, about 2 minutes. If desired, serve with rice or potatoes. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

1 (20 ounce) can unsweetened pineapple chunks in juice, undrained
2 ½ pounds cubed beef stew meat
2 large onions, cut into wedges
½ cup beef broth
3 tablespoons red wine vinegar
2 garlic cloves, crushed
¾ teaspoon seasoned salt
¾ teaspoon ground paprika
¼ teaspoon ground black pepper
1 green bell pepper, diced
1 red bell pepper, diced
3 tablespoons brown sugar
1 ½ tablespoons cornstarch
2 tablespoons soy sauce
2 tablespoons red wine vinegar
2 large tomatoes, cut into wedges

Steps:

  • Drain the pineapple juice into a slow cooker, reserving the pineapple chunks. Place the beef, onions, beef broth, 3 tablespoons red wine vinegar, garlic, seasoned salt, paprika, and black pepper into the slow cooker with the juice. Mix well, cover, and cook on Low until the beef is tender, 6 to 6 1/2 hours.
  • Increase the setting to High and stir in green bell pepper, red bell pepper, and brown sugar. In a small bowl, mix together the cornstarch, soy sauce, and 2 tablespoons red wine vinegar until smooth; stir the mixture into the slow cooker, blending well. Cover and cook for 1 more hour. Just before serving, lightly stir in the tomatoes and reserved pineapple chunks.

2 lbs boneless beef chuck
2 tablespoons flour
1/2 teaspoon dry mustard
1 1/2 teaspoons salt
2 tablespoons vegetable oil
1 (14 ounce) can tomatoes
1/2 cup sliced onion
1 teaspoon celery salt
1/4 teaspoon pepper
1/3 cup vinegar
1/3 cup molasses
1 1/2 cups water
4 large carrots
1/3 cup raisins
1/2 teaspoon ginger

Steps:

  • Wipe meat with a damp cloth. Cut into 1 1/2 inch cubes. Combine flour, mustard and half-teaspoon salt; dredge meat with flour mixture. Heat oil in Dutch oven; brown meat on all sides. Add tomatoes, onion, celery salt, one teaspoon salt and pepper. Mix vinegar, molasses and water; add to meat. Cover and simmer for two hours. Peel and slice carrots. Add to meat with raisins and ginger. Cook 20-30 minutes longer or until carrots are tender.

I originally found this recipe at Recipe Goldmine but have added and subtracted after trial and error. The original recipe called for a 10 oz pkg of frozen peas to be added during the last 15 minutes of cooking. I usually add a little rosemary and cayenne. Can add the spices you wish. This is very good!

1 -1 1/2 lb cubed beef stew meat
1/2 cup flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup vegetable oil
1 onion, chopped fine
1 carrot, chopped fine
1/4 cup finely chopped celery, with a few minced leaves
1 tablespoon dried parsley
1 pinch thyme
3 1/2 cups beef broth
2 medium potatoes, diced
2 carrots, diced
2 onions, diced

Steps:

  • Put flour, salt and pepper in a large ziploc bag.
  • Heat oil over medium heat in a large dutch oven.
  • Place meat in bag with the flour and shake until well coated.
  • Shake off meat pieces and add them to the oil and stir until slightly browned, Add remaining flour from the bag and the finely chopped onion.
  • Stir until well browned.
  • Add finely chopped carrot and next 4 ingredients.
  • Cover and cook over low heat for 1 1/2 hours (stirring every 15 minutes).
  • Add diced potatoes, carrots, and onions, cook for another 45 minutes or until potatoes are tender.

1 lb beef stew meat, cut into 1-inch cubes
1 (14 ounce) can diced tomatoes, undrained

Steps:

  • Mix flour, sugar, garlic powder, salt, rosemary and pepper in a small bowl.
  • Place frozen vegetables in the bottom of a slow cooker. Sprinkle with flour/spice mixture. Add stew meat, wine, bay leaf and tomatoes. Cook on High for 4-6 hours or on Low for 8-10 hours.
  • Remove bay leaf before serving.
