GRILLED SALMON TACOS

Steps:
- Preheat a grill for cooking at medium-high heat.
- Whisk together the extra-virgin olive oil, lime juice, cumin, garlic powder and salt in a small mixing bowl. Brush the marinade on both sides of the salmon fillets. Place in a basket flipper or fish basket.
- Place the sliced peppers and red onion in a grilling tray. Brush with olive oil and sprinkle with a pinch of salt. Place the basket tray on the hot grill and cook, stirring occasionally, until you get good grill marks all over and the veggies have softened, anywhere from 15 to 20 minutes. Meanwhile, place the basket flipper on the grill; grill the salmon until nicely browned on both sides and opaque in the middle, 4 minutes per side. Remove the salmon from the grill and transfer to a plate. Flake gently.
- Place the tortillas on the grill for a few seconds per side, letting them char and bubble up.
- Stuff each tortilla with a mix of peppers, onion and flaked salmon. Top with crumbled queso fresco, cubed avocado, cilantro and a final spritz of lime juice! Dive in.
IRRESISTIBLE GARLIC-TABASCO GRILLED SALMON
Very easy and tasty. Even by the ones who don't like fish ask for seconds! Get good quality fresh salmon. I prefer thicker fillets.

- Preheat the grill.
- Place salmon on the heavy aluminum foil, skin down. Round up the foil edges to avoid grill flaring up.
- Salt salmon generously.
- Combine minced garlic with olive oil to create a paste, and spread evenly over the salmon.
- Drizzle green tabasco sauce all over the salmon (it is not spicy hot). Sprinkle with capers.
- Place salmon, the foil down, on the hot grill and cook until flakes. Depends on the thickness and size, usually 12 to 20 minute Check after 12 min, don't overcook it.
- Leftovers are great next day - cold, on crackers or in the salad.

- Mix together marinade ingredients in a baking dish: soy sauce, olive oil, brown sugar, ginger, and garlic. Add salmon fillets skin side up into the marinade and place in the fridge for 15-45 minutes.
- When ready to grill, start your Traeger grill on Smoke with the lid open until you see smoke appear (takes 3-5 minutes). Set the temperature to 350°F and preheat with the lid closed for 10-15 minutes.
- Remove salmon from marinade and place skin side up on grill. Cover (close the lid of the grill) and cook for 4 minutes. Flip carefully using a spatula. Cook for 20-25 minutes longer until fish is flaky. Serve immediately.

GARLIC BUTTER GRILLED SALMON RECIPE

- Pat the salmon dry, remove any bones, season with SALT and PEPPER, and rest at room temperature about 15 minutes to remove the chill.
- Preheat grill to MEDIUM-HIGH (about 400°F).
- Melt BUTTER, GARLIC, and DILL in a 2 qt sauce pot over medium heat until infused (3-5 minutes).
- Brush garlic butter over salmon (flesh side).
- Place salmon flesh side down in the center of the preheated grill and brush garlic butter over the salmon skin.
- Close grill lid, turn heat dials to M-O-M (medium-off-medium), and grill salmon until it easily releases from the grill (about 4 minutes).
- Gently flip salmon over, brush the flesh with more garlic butter, and grill until it flakes easily with a fork (about 3 minutes for medium or 5 minutes for well-done).Note: Medium-cooked salmon will be very tender and juicy. Well-done salmon will not be juicy.
- Transfer salmon to a platter, allow to rest a few minutes, and serve garnished with lemon zest, lemon wedges, and fresh dill. Serve with Cucumber Tomato Salad.
