IRISH SODA BREAD RECIPE
This Irish-American Soda Bread takes just 5 minutes to make the dough with no kneading and no proofing needed. It has a soft and tender crumb with a texture that is similar to biscuits.

Steps:
- Preheat oven at 375˚F. Generously grease a 10" cast-iron skillet with 1/2 Tbsp butter.
- In a large mixing bowl, whisk together flour, sugar, salt, and baking soda. Cut butter into small pieces and use your fingers to work the butter into the flour until crumbs form stir in the raisins, breaking up any clumps of raisins. Make a well in the center.
- In a large measuring cup, whisk together the buttermilk and egg then add this mixture into the flour mixture. Use a wooden spoon and mix just until lightly moistened and dough barely starts to come together.
- Transfer to a floured surface and use floured hands to shape the dough just until it forms into a round loaf. It should be shaggy. If it's too sticky to handle, dust lightly with flour. Do not over-mix or bread will be tough.
- Transfer to the buttered pan, use a knife to score the top with a large and deep "X". Bake in the center of your preheated oven at 375 for 50-55min. When you tap on the bread, it should sound hollow inside. Transfer bread to a wire rack to cool. Enjoy within 2 days of making it and refrigerate leftovers up to a week.

- Preheat the oven to 425 degrees.
- Lay a sheet of parchment paper over the baking sheet. Set aside.
- Mix the flour, salt & baking soda together in a large mixer bowl.
- Make a well in the center- pour in the buttermilk.
- Mix with the paddle attachment of your mixer or you can kneed in by hand until the dough is soft. Should be fairly wet but not sticky.
- Turn dough out onto a lightly floured surface & knead 3-4 times to smooth.
- Shape into flat circle - mine was about 1-2 inches thick but still flat in shape.
- Place on prepared the parchment lined sheet & cut a cross from edge to edge on top.
- Bake 25-30 minutes or until golden. When it sounds hollow when tapped- it's ready.

- Preheat oven to 375°. Whisk together first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk together 1 egg and buttermilk. Add to flour mixture; stir just until moistened. Stir in raisins., Turn onto a lightly floured surface; knead gently 6-8 times. Shape into a 6-1/2-in. round loaf; place on a greased baking sheet. Using a sharp knife, make a shallow cross in top of loaf. Whisk remaining egg; brush over top., Bake until golden brown, 30-35 minutes. Remove from pan to a wire rack. Serve warm.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
- Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

One more for the cooks. This recipe found in the Seattle Times is from T.S.McHugh's and the Ballymaloe Cookery School, in Shanagarry, Ireland. Good source, I'd say. Perfect accompaniment for a nice lamb stew on a raw not-quite-spring evening!

- Preheat oven to 450 degrees F.
- Sift the dry ingredients into a large bowl. Make a well in the center. Pour most of the milk in all at once. Using one hand, mix in the flour from the sides of the bowl, adding more milk if necessary. The dough should be soft, but not too wet and sticky.
- When it all comes together, gather the dough onto a floured surface and form into a round loaf about 1 ½-inches thick and cut a deep cross on top and over the sides.
- Transfer to a baking sheet. Reduce oven temperature to 400 degrees and bake 45 minutes, or until cooked though. If you are in doubt, tap the bottom of the bread. If it sounds hollow, it's done.
