APPLE, POTATO AND ONION HASH
Steps:
- Prick potatoes several times each with a fork and microwave on high for 10 to 12 minutes. Cool potatoes until you can handle them and chop.
- Heat a medium nonstick skillet over medium-high heat with extra-virgin olive oil and butter. Add apples and onions and cook 5 minutes, add potatoes and season with salt and pepper, to taste. Crisp and brown the potatoes with apples and onions 5 minutes more, then serve.
SQUASH, POTATOES AND ONIONS- OH MY!
A wonderful side dish that I make as soon as the yellow squash start coming in. When I first started making this about 30 years ago, I used the bacon grease. I found I like the margarine better and I like the squash to cook so that you have a few browned pieces in. Oooohh, that gives it so much flavor!

- Add squash.

- Add small amount of water if it starts sticking (usually not necessary due to water content in vegetables).

Steps:
- Cook bacon in a Dutch oven until just starting to crisp. Remove and drain on paper towels. Cut into halves length-wise and then halves cross-wise. Set aside. Reserve bacon fat in a bowl.
- In the same Dutch oven cook sausages until evenly brown, adding a little bacon fat if necessary. Remove and cut into halves length-wise then halves cross-wise. Set aside.
- Add a tablespoon of reserved bacon fat back to Dutch oven. Cook onions for 2 to 3 minutes until soft but not brown.
- Layer cooked onions, sausages, and bacon at the bottom of the Dutch oven. Season with lots of pepper.
- Add leeks, garlic, dried thyme, chopped parsley, and top with a layer of potatoes. Season with more pepper and salt to taste.
- Pour in the stock. Cover and bring stock to a boil.
- Transfer to a preheated 350°F (180°C) oven for 35 minutes or until potatoes are tender.
- Serve with chunks of soda bread.

- Peel the potatoes. Cut large ones into three or four pieces, leave smaller ones whole. Finely chop the parsley. Boil the water and in it dissolve the bouillon cube. Grill or broil the sausages and bacon. Be careful not to dry them out. Drain briefly on paper towels. When drained, chop the bacon into one inch pieces. If you like, chop the sausages into large pieces as well. Preheat the oven to 300°F. In a large flameproof heavy pot with a tight lid, start layering the onions, bacon, sausage, and potatoes. Season each layer liberally with fresh-ground pepper and the chopped fresh parsley. Continue until the ingredients are used up. Pour the bouillon mixture over the top. On the stove, bring the liquid to a boil. Immediately turn the heat down and cover the pot. (You may like to additionally put a layer of foil underneath the pot lid to help seal it.) Put the covered pot in the oven and cook for at least three to four hours. At the two-hour point, check the pot and add more water if necessary. There should be about an inch of liquid at the bottom of the pot at all times. To Serve. Guinness, bottled or draft, goes extremely well with this dish (indeed, adding a little to the pot toward the end of the process wouldn't hurt anything). Another good accompaniment is fresh soda bread, used to mop up the gravy!
IRISH CHICKEN
Irish Chicken with Cabbage, Potatoes, Bacon and Onions

- Preheat oven to 375 degrees.
- Mix together rub ingredients. Roll the chicken pieces in the spices and set aside.
- Fry the bacon. When cooked put on a paper towel to drain. Drain most of the bacon grease from the pan, leaving enough to brown the chicken in. (you can also use olive oil if desired) Quickly brown the chicken pieces. When browned set aside on a plate.
- While the chicken is browning, roughly chop the cabbage. Then slice the onion into thin slices. Next peel the potatoes and slice into rounds. When the chicken is browned, add the cabbage to the pan with 1/4 cup water, after a few minutes mix in the potatoes and onions. Take off of the heat.
- Cut the bacon into pieces and sprinkle over the cabbage mixture.
- Add the chicken pieces on top of cabbage mixture. Place the pan in the oven and cook until the chicken is done, about 45 - 50 minutes for all to cook. The juices from the chicken will help to cook the cabbage and potatoes.

- 1. Heat oven to 425°. Place bacon on lined sheet pan. Place the bacon in the oven to cook.
- 2. While the bacon is cooking. Wash and diced potatoes into 1 to 2 inch chunks. I left the skins on. Peel and core the apples. Cut and dice them into one to two inch chunks as well. Place potatoes in a large pot with water and boil. Boil until they are halfway cooked through.
- 3. Add the apples to the water with the potatoes. Cook until potatoes are tender. Drain and set aside.
- 4. Remove bacon from oven drain on paper towel. Fry the onion in 1-2 tablespoons of butter until it is caramelized. Remove from pan and set aside.
- 5. Melt 5 tablespoons of butter in pan. Be careful not to brown it. Toss the potatoes and apples with the butter coating well. Salt and pepper the potatoes to your liking. Toss with the parsley and Thyme. Add in the onion and combine all together.
- 6. Pour into the large casserole dish. Top with crumbled bacon. Bake at 400° for about 20 to 30 minutes, or until top is lightly browned. Serve!

- Preheat the oven to 425° and line a rimmed sheet pan with parchment paper.
- Slice the potatoes into 1/4" thick rings and add the sheet pan. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon salt and pepper. Toss the potatoes to evenly distribute the seasoning and lay out in a single layer on the sheet pan.
- Bake for 30-32 minutes, until the potatoes are golden brown across the tops. While the potatoes are baking, fry the bacon and make the cheese sauce.
- Add the diced bacon to a large pan over medium-high heat. Cook, stirring occasionally, until the bacon is crispy, 6-8 minutes. Set bacon aside on a plate lined with a paper towel.
- For the cheese sauce, add 1 tablespoon of oil to a saucepan over medium heat. Allow to come to temperature and sprinkle over the flour. Whisk about 1 minute. Do not allow the flour to brown.
- Begin adding the half-and-half one generous splash at a time, whisking well after each addition. Once all of the half-and-half has been added, allow the mixture to simmer 4-5 minutes, just until slightly thickened.
- Remove from the heat and stir in 1 cup of Cheddar cheese and a generous pinch of Kosher salt. Set aside.
- Remove the potatoes from the oven, drizzle with the cheese sauce, cheese curds (if using), the remaining 1/2 cup of Cheddar, and diced bacon.
- If desired, return to the oven for 4-5 minutes, just until the cheese curds have melted. Top with sliced green onions and sour cream (if using), serve, and enjoy!
