2 cups shredded Cheddar
2 ounces crisp cooked bacon, chopped
1 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay out the potato chips in an even layer on a baking sheet and top with the Cheddar and bacon. Bake until the cheese is melted, about 10 minutes. Top with dollops of the sour cream and the chopped tomato and chives. Serve warm.

Irish Nachos are the ultimate party appetizer -- handheld, crazy delicious, and made for sharing! Featuring crispy potatoes topped with cheese, bacon, and more cheese!

3-4 small Russet potatoes, scrubbed and dried
2 tablespoons canola oil ((or avocado oil), separated)
1 1/2 teaspoon Kosher salt ((plus a pinch, separated))
1/4 teaspoon black pepper
1 tablespoon all-purpose flour
1 cup half-and-half
1 1/2 cup freshly grated Cheddar cheese, separated
4 slices thick-cut bacon, diced
1 cup cheese curds (optional)
1/4 cup thinly sliced green onions
1 dallop sour cream (optional)

Steps:

  • Preheat the oven to 425° and line a rimmed sheet pan with parchment paper.
  • Slice the potatoes into 1/4" thick rings and add the sheet pan. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon salt and pepper. Toss the potatoes to evenly distribute the seasoning and lay out in a single layer on the sheet pan.
  • Bake for 30-32 minutes, until the potatoes are golden brown across the tops. While the potatoes are baking, fry the bacon and make the cheese sauce.
  • Add the diced bacon to a large pan over medium-high heat. Cook, stirring occasionally, until the bacon is crispy, 6-8 minutes. Set bacon aside on a plate lined with a paper towel.
  • For the cheese sauce, add 1 tablespoon of oil to a saucepan over medium heat. Allow to come to temperature and sprinkle over the flour. Whisk about 1 minute. Do not allow the flour to brown.
  • Begin adding the half-and-half one generous splash at a time, whisking well after each addition. Once all of the half-and-half has been added, allow the mixture to simmer 4-5 minutes, just until slightly thickened.
  • Remove from the heat and stir in 1 cup of Cheddar cheese and a generous pinch of Kosher salt. Set aside.
  • Remove the potatoes from the oven, drizzle with the cheese sauce, cheese curds (if using), the remaining 1/2 cup of Cheddar, and diced bacon.
  • If desired, return to the oven for 4-5 minutes, just until the cheese curds have melted. Top with sliced green onions and sour cream (if using), serve, and enjoy!

3 russet potatoes, sliced 1/8-inch thick
1 tablespoon minced garlic
¼ cup vegetable oil
salt to taste
½ cup shredded Cheddar cheese, divided
½ cup shredded Monterey Jack cheese, divided
½ cup shredded mozzarella cheese, divided
4 green onions, chopped, divided
2 cooked chicken breasts, thinly sliced, divided
½ cup jalapeno peppers cut into rings, divided
1 large tomato, chopped
¼ cup salsa, or to taste
¼ cup sour cream, or to taste

Steps:

  • Place potatoes and garlic in a bowl and cover with several inches of cool water; let soak for 4 hours or overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Drain potatoes and pat dry.
  • Combine potatoes and vegetable oil in a bowl and toss to coat. Spread potatoes slightly apart in a single layer on a baking sheet.
  • Bake potatoes in the preheated oven until golden brown, about 25 minutes.
  • Sprinkle salt over potatoes. Spread 1/2 the Cheddar cheese, 1/2 the Monterey Jack cheese, and 1/2 the mozzarella cheese over the potatoes. Sprinkle 1/2 the onions, 1/2 the chicken, and 1/2 the jalapeno peppers respectively over the cheese. Repeat layering with remaining cheeses, onion, chicken, and jalapenos.
  • Bake nachos in the oven until cheese melts and chicken is hot, 10 to 15 minutes. Top nachos with tomato, salsa, and sour cream.

A fun variation on nachos! I adapted this to our tastes from a recipe card found at the grocery store. I love how filling it is, so it could be used as an appetizer or as a hardy snack... even a meal with a lovely salad!

2 large russet potatoes
2 -3 teaspoons vegetable oil
1/4 teaspoon garlic powder
1 teaspoon taco seasoning
1/4 cup black beans, rinsed and drained
2 teaspoons lime juice
1/4 teaspoon cumin
1/4 teaspoon chili powder
cayenne pepper, to taste
1/2 medium tomatoes, diced
1 green onion, chopped
1 tablespoon green chili, diced
2 tablespoons shredded 4-cheese Mexican blend cheese

Steps:

  • Preheat oven to 425°F
  • Clean and scrub potatoes, then chop them into thick wedges.
  • Combine potato wedges, oil (you want just enough to coat the potatoes), garlic powder, and taco seasoning in a baking dish. Stir until well combined.
  • Spread potatoes out into a single layer and bake for 25-30 minutes, or until potatoes are golden brown with a crispy outside. Stir occasionally during the baking time.
  • While potatoes are baking, combine the black beans, lime juice, cumin, chili powder, and cayenne pepper in a small saucepan over medium-low heat. Stir occasionally, cooking until the majority of the lime juice has been absorbed.
  • Remove beans from heat and mix with the tomato, green onion, and green chilies.
  • When potatoes are done, remove from oven and sprinkle with cheese. Return to oven for an additional 1-2 minutes to allow cheese to melt.
  • Sprinkle with bean mixture and serve. We enjoy them with just the bean topping, but you could also serve with salsa, sour cream, or guacamole too!

Not the healthiest snack, but one of my favorites for Sunday football! Feel free to tweak ingredients to suit your personal taste. Serve with your favorite condiments; I recommend blue cheese dressing or barbeque sauce.

1 (32 ounce) package frozen French fries
6 slices bacon
4 ounces Cheddar cheese, shredded
4 ounces Monterey Jack cheese, shredded
2 jalapeno peppers, seeded and sliced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Arrange fries in a single layer on a rimmed baking sheet.
  • Bake in the preheated oven until light golden in color, 17 to 25 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Dice.

  • Soak potato slices in a large bowl of cold water for as long as you have time for (20mins minimum). This is important to remove starch, which will result in the fries having a fluffier centre. Drain water away and thoroughly dry with a tea towel. This is really important to remove as much moisture as possible to help them crisp up.
  • Whilst the spuds are soaking, in a medium sized pot or pan over medium heat melt 3 tbsp butter. Whisk in 3 tbsp flour until a paste forms then slowly add in 1/2 cup Guinness, whisking as you go to ensure no lumps form. Gradually pour in milk, again whisking as you go to ensure no lumps form. Once the sauce has thickened add Worcestershire sauce, hot sauce (optional) and salt & pepper to taste. Turn heat to low and start stirring in your cheese until thick and gloopy/cheesy. 4cups/400g will not only make the sauce more cheesy, but will make it slightly thicker. The sauce will thicken considerably as it rests.
  • Add 3-4cups oil in a suitably sized pot or deep pan and heat to 180C/350F. Fry the potatoes in batches until deep golden on the outside and soft through the inside, around 10-15mins. Rest on wire rack to drain off oil. Sprinkle both sides with a good pinch of salt and pepper as they rest. Try to keep the oil at a steady temp throughout and bring it back to 180C/350F between batches.
  • Heat enough oil to coat the base of a large frying pan until sizzling, but not smoking (again, around 180C/350F works great). Place in potatoes and fry until deep golden on the outside and soft through the inside, turning once. Rest on wire rack to drain off oil. Sprinkle both sides with a good pinch of salt and pepper as they rest.
