AWESOME IRISH NACHOS
This is a fun version of nachos, using waffle fries instead of tortilla chips. Every year at our annual St. Patrick's Day party, this is the first appetizer to go!

Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Arrange waffle fries in a single layer on a rimmed baking sheet.
- Bake in the preheated oven until light golden in color, 12 to 20 minutes.
- Meanwhile, cook and stir ground beef in a large skillet until browned and crumbly, 5 to 7 minutes. Drain excess grease. Stir in taco seasoning and cook for 1 to 2 minutes more.
- Transfer baked fries to a 9x13-inch baking pan. Spread ground beef evenly over fries. Cover beef with cheese.
- Return to the oven until cheese has melted, about 5 minutes.
- Remove from the oven and garnish with tomatoes, olives, jalapenos, and lettuce. Dollop sour cream and guacamole on top.

J. Gilligan's Bar & Grill located in Arlington, Texas is believed to have invented the dish. It gets the "Irish" part of its name from the potatoes, which is something Ireland is famous for. And I love potatoes!!!

- I started by frying thick slices of potatoes in vegetable oil until they turned golden! Drained them on paper towels and sprinkled with Seasoned Salt!
- Then I took the potatoes and layered them on the bottom of my skillet.
- added my chopped cheddar cheese, cooked bacon, onion, and jalapenos.
- It's ready to be put it in the oven on broil for 10 - 15 minutes to make it hot and delicious!
- Then just add the sour cream, scallions, tomatoes, and more jalapenos if you like! Top it off just like you would your favorite nachos. You are going to LOVE it! It tastes even better than Nachos!

- Heat oven to 450°F.
- Bake waffle fries as directed on package. Cool slightly.
- Meanwhile, combine tomatoes, bacon, onions and 2 Tbsp. dressing.
- Spread half the fries onto ovenproof plate; sprinkle with half the cheese. Repeat layers.

- Preheat the oven to 425° and line a rimmed sheet pan with parchment paper.
- Slice the potatoes into 1/4" thick rings and add the sheet pan. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon salt and pepper. Toss the potatoes to evenly distribute the seasoning and lay out in a single layer on the sheet pan.
- Bake for 30-32 minutes, until the potatoes are golden brown across the tops. While the potatoes are baking, fry the bacon and make the cheese sauce.
- Add the diced bacon to a large pan over medium-high heat. Cook, stirring occasionally, until the bacon is crispy, 6-8 minutes. Set bacon aside on a plate lined with a paper towel.
- For the cheese sauce, add 1 tablespoon of oil to a saucepan over medium heat. Allow to come to temperature and sprinkle over the flour. Whisk about 1 minute. Do not allow the flour to brown.
- Begin adding the half-and-half one generous splash at a time, whisking well after each addition. Once all of the half-and-half has been added, allow the mixture to simmer 4-5 minutes, just until slightly thickened.
- Remove from the heat and stir in 1 cup of Cheddar cheese and a generous pinch of Kosher salt. Set aside.
- Remove the potatoes from the oven, drizzle with the cheese sauce, cheese curds (if using), the remaining 1/2 cup of Cheddar, and diced bacon.
- If desired, return to the oven for 4-5 minutes, just until the cheese curds have melted. Top with sliced green onions and sour cream (if using), serve, and enjoy!

- 1. Fry potato slices in vegetable oil until golden & tender; drain paper toweling and sprinkle with seasoned salt.
- 2. Cook bacon until crispy, then remove and set aside; Add onion to bacon drippings, then cook until transparent and tender.
- 3. Layer potatoes on the bottom of an 8" or 10" cast iron skillet; add corned beef, crumbled bacon, onion, shredded cheddar cheese and jalapenos in that order.
- 4. Place under broiler for 10-15 minutes or until hot and delicious.
- 5. Finish with your choice of toppings and enjoy!

This is NOT my recipe - it's Rachael Ray. Usually, I wouldn't post something like this, but it was a 60 second segment between commercial breaks where she gives you cool ideas to mix up old recipes. This aired yesterday and I ran out and HAD to try it. I LOVED IT! I had to post it. Even if no one here ever tried this and reviews this - at least I know if I ever want to find this recipe again - it will be here.

- Preheat oven to 450ºF.
- Arrange the waffle fries on a baking sheet and cook according to package directions, adding about 10 minutes onto the baking time to make them extra crispy.
- When the fries have about 10 minutes left, place a medium skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the corned beef to the skillet and sauté until light golden brown and heated through, 2-3 minutes.
- Add the onions and cabbage to the pan, and cook until the onions have softened and cabbage has wilted, 4-5 minutes. Season with salt and pepper and reserve warm.
- While the veggies are cooking, place a medium pot over medium-high heat and melt the butter. Add the flour to the pot and cook for about a minute.
- Whisk the beer into the mixture and cook for about 30 seconds to cook off the alcohol. Whisk the chicken stock into the pan and bring up to a bubble. Simmer until thickened, 2-3 minutes, then remove from heat and stir in the cheese to melt. Season the sauce with salt and pepper.
- To serve, arrange the crispy waffle fries on a platter, top them with the corned beef and cabbage mixture and douse with a good helping of cheese sauce.
