Irene's Winter Salad image

This recipe comes from Eating Well...made by a recipe tester's mom every year at Christmas. Colors are very festive for the holidays, but delicious anytime of the year. Bonus is that it will travel well for picnics! Twenty minute marinating time is included in cooking time.

4 cup(s) broccoli florets, bite size
4 cup(s) cauliflower florets, bite size
1/2 cup(s) water
1/3 cup(s) lemon juice
2 tablespoon(s) olive oil, extra virgin
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) dried oregano
1/2 teaspoon(s) sugar
1/2 teaspoon(s) salt
1/2 cup(s) kalamata olives, quartered and pitted
1/4 cup(s) sun-dried tomatoes, soft, chopped

Steps:

  • Place broccoli, cauliflower, and water in a large microwave-safe bowl. Cover and cook on high until just tender, about 4 minutes. Drain.
  • Mix lemon juice, olive oil, garlic powder, oregano, sugar and salt in another large bowl. Add the vegetables and toss to combine. Let marinate in the refrigerator, stirring once or twice, for 20 minutes.
  • Stir in olives and tomatoes. Serve, drizzling with any dressing in the bowl.

We had a potluck at work and I tasted this incredible salad. The ingredients blend so well together it's a party on your tongue. This is my favorite salad. This recipe was shared with me by Irene, my coworker. Salad needs to be chilled which is included in cook time.

1 cup of finely chopped broccoli, floweretes
1 cup of finely chopped cauliflower floret
3 stalks celery, finely chopped
1/2 cup onion, finely chopped
7 slices bacon, cooked and crumbled
1/2 cup white raisins or 1/2 cup craisins
2/3 cup mayonnaise
1/4 cup sugar
1 1/2 tablespoons white cider vinegar
1 teaspoon Aunt Jane's Krazy Mixed Up Salt
1/4 teaspoon ground black pepper

Steps:

  • Mix salad ingredients together.
  • Mix dressing ingredients together.
  • Pour dressing over salad ingredients and place in a sealed container.
  • Refrigerate for 4 hours or overnight.

IRENE'S WILTED COLESLAW

This is a very easy, tried and true recipe. I use a food processor with a shredding blade to get the right texture. You can use a bag of shredded cabbage (found in the refrigerator section of your market) instead of shredding the cabbage yourself. This is best made a few hours before serving or a day in advance.

1 head green cabbage, cut into1 inch wedges so it can fit into the food processor
1 medium onion, cut into quarters
1/2 cup sugar
1 cup vegetable oil
1 tablespoon sugar
1 cup white vinegar
1 teaspoon salt
3/4 teaspoon celery seed

Steps:

  • Place green cabbage and onions through the processor. Place the cabbage and onion mixture in a mixing bowl. Sprinkle 1/2 cup sugar on top. Let stand.
  • In a small saucepan, heat oil, sugar, vinegar, salt on medium heat until boiling.
  • Pour mixture over cabbage mixture and mix well.
  • Sprinkle celery seed over mixture and mix well.
  • Refrigerate until ready to use.
