INSTANT POT CHICKEN TACO BOWLS
This all in one dinner has quickly become a family favorite! Instant Pot Chicken Taco Bowls all cooked together in one pot with rice, black beans, corn, salsa chicken and seasonings.

Steps:
- Spray bottom of IP with non-stick cooking spray.
- Add 1/2 cup chicken broth to bottom of IP.
- Add chicken breasts.
- Sprinkle chicken with taco seasoning.
- Add black beans and corn.
- Add salsa.
- Add rice.
- Add remaining 1 cup chicken broth.
- Press rice into the liquid to make sure it's fully submerged.
- Set valve to sealing. Cook on Manual (high pressure) for 8 minutes.
- Allow pressure to naturally release for 12 minutes, then turn to quick release.
- Remove IP lid and gently FLUFF rice with a fork (Don't stir it!).
- Place IP lid back on (with power off) for 5 more minutes to allow rice to rest while you prepare the toppings.
- Slide rice to the side a bit to find the chicken breasts and pull them out. Shred the chicken.
- Add a scoop of rice mixture to a bowl. Top with some shredded chicken, and other desired toppings. Serve with tortillas, if desired.

I love this Crock-Pot chicken recipe for two reasons: one, my family loves it and two, it is so easy to make! I got this recipe from my sister. She has two children of her own, and they love it too! It's also the best leftovers in the world -- if there are any!

Steps:
- Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
- Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
- Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
- Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
- All done and enjoy!

- Place chicken, salsa and peppers in a 6-qt. electric pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure cook on high for 7 minutes. Quick release pressure; press cancel. A thermometer inserted in chicken should read at least 165°., Remove chicken; shred with 2 forks. Return to pressure cooker. CROCK POT BLACK BEAN SALSA CHICKEN (OAMC)
I was trying to think of ways to make my OAMC recipes for crock pot use...you know they sell those crock pot box recipes at the grocery now. This is one of the ones I found that work and is simple. There may still be some fiddling but it's pretty good as is. Hope you will give it a try.

- For immediate cooking:.
- Mix corn, beans and 1 cup of salsa together and put in the bottom of the crock pot.
- Add the chicken.
- Salt and pepper to taste if desired.
- Added 1 more cup of salsa over the top of the chicken.
- Cook on low for 6 hours Add 8 oz of cream cheese- cubed and stir in until melted.
- For OAMC:.
- You can dump everything into a freezer bag except for the cream cheese and freeze.
- Dump in the crock pot (frozen is ok).
- Cook on low for 8 hours.
- Add cream cheese when you are done.
- Good served over cooked rice and dipped into with tortilla chips.

- Place chicken breasts in the bottom of the Instant Pot.
- Pour black beans, corn, salsa, and taco seasoning on top of chicken.
- Add water to Instant Pot (pour on the side so it doesn't wash seasoning off of chicken).
- Place the lid on top of the Instant Pot and move the valve to SEALING. Press the MANUAL (PRESSURE COOK) button and set timer for 25 minutes if chicken is frozen (or 18 minutes if chicken is thawed).
- When the timer is done, do a QUICK RELEASE of the pressure.
- Remove chicken from Instant Pot and shred with 2 forks (it should fall apart fairly easily).
- Place chicken back into Instant Pot with salsa mixture and liquid. Mix together to incorporate the chicken.
- Serve on top of salad, nachos, tacos, burritos, or anyway that you prefer! Top with your favorite toppings and enjoy.

- If making this into a freezer meal, label a gallon-sized resealable freezer bag with the title of the recipe and how to long to cook in the slow cooker. (If you aren't making it into a freezer meal, jump ahead to step #5).
- Dump the black beans, corn, salsa, taco seasoning, and water in the resealable bag and mix until all the ingredients are combined. Add the chicken breasts and zip the bag closed. Place in the freezer until ready to use (it will last in the freezer for up to 90 days).
- When ready to cook, remove bag from freezer and place in fridge overnight so that it can thaw. Spray slow cooker with non-stick cooking spray and dump bag ingredients into the slow cooker. Cook on high for 4-5 hours or on low for 6-7 hours (until chicken is completely done).
- Shred meat and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
- If you aren't making this into a freezer meal, dump black beans, corn, taco seasoning, and water in crock pot and mix together until seasoning is dissolved. Place chicken breasts on top and spread salsa on chicken. Cook on high for 3-4 hours or low for 5-6 hours. Shred chicken and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
