Spice this up even further by adding 1 teaspoon each nutmeg and allspice, and 1/4 teaspoon white pepper. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps. 1 cup nonfat dry milk powder
1 cup non-dairy powdered coffee creamer
1 cup french vanilla-flavored non-dairy powdered coffee creamer
2 1/2 cups white sugar
1 1/2 cups unsweetened instant tea
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground cardamom

Steps:

  • In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.
  • To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.
  • Store dry mixture in an airtight container.

1 cup non-fat powdered milk
1 cup powdered fat free non-dairy coffee creamer
1 cup carnation coffee-mate powdered french vanilla fat free non-dairy coffee creamer
20 ounces Splenda Sugar Blend for Baking
1 1/2 cups powdered instant unsweetened prepared tea
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground cardamom
1 teaspoon nutmeg
1 teaspoon allspice

Steps:

  • Mix all ingredients together in a bowl.
  • Place the powdered mix in a blender one cup at a time and process until you have a fine powder. Repeat until all the powder has been processed.
  • To serve, place 2 heaping tablespoons of mix into a cup. Add 1 cup of boiling hot water.

3/4 cup non-fat powdered milk
1 1/4 cups non-dairy powdered coffee creamer
1 1/2 cups powdered French vanilla flavored coffee creamer
2 cups granulated sugar
1 1/4 cups brown sugar, packed
2 cups instant tea, unsweetened
2 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground cloves
1 1/4 teaspoons ground cardamom
1 1/2 teaspoons ground nutmeg
1 teaspoon allspice
1/4 teaspoon white pepper, finely ground

Steps:

  • Combine all ingredients -- Stir in spices.
  • In a blender or food processor.blend 1 cup at a time until mixture is consistency of fine powder.
  • To serve:.
  • Stir 2 heaping tablespoons Chai Tea Mix into mug of hot water -- or I use 2" milk.to make it creamier.
  • Makes 8-9 cups of tea mix.
  • Yield 7 cups.divide as you see fit.or keep for yourself.

Adapted from several online sources with inspiration most notably from my own spice stash, but also from the side box of Yogi tea, and chaitearecipes.com, etc. Be sure the milk or milk substitute you use is very fresh!

2 cups filtered water
1 cinnamon stick
1/2 teaspoon minced cardamom pod, slightly crushed
1/2 teaspoon black peppercorns
3 whole cloves
1/4 teaspoon fennel seed
1 inch piece vanilla pod, split open lengthwise
2 star anise
3 -4 saffron threads
1/4 teaspoon anise seed
1/8 teaspoon freshly ground nutmeg
1/3 teaspoon ground ginger
2 tablespoons loose black tea leaves (read *NOTE) or 2 tea bags (read *NOTE)
2 cups milk (soy milk is good, too) or 2 cups rice milk (soy milk is good, too)
honey, for sweetening, to taste (I prefer honey to sweeten my chai but I also like cane sugar-aka Sucanat)

Steps:

  • *NOTE: Any number of black tea varieties can be used in this recipe: Ceylon Orange Pekoe, Darjeeling, English Breakfast, Earl Grey, etc. You'll have to try several types of tea to find out which you prefer.
  • Pour the water into a heavy bottomed pan. Add the spices and tea bags (or loose tea placed in a tea infuser or muslin cloth).
  • Bring to a boil, partially cover pan and simmer about 20 minutes to allow spices to intensify.
  • Add the milk or milk substitute and heat through WITHOUT boiling until hot.
  • Pour chai tea through a strainer into tea cups. Add sweetener of choice if desired.
  • Sit, sip, close your eyes, relax, enjoy!

Watch out Starbucks, you'll be out of business in no time. The nutmeg and allspice is an added spice hit, use as desired. Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)

She said to add just a little hot water to the mix just to dissolve it, then add the milk whether hot or cold this mix is yummy!

1/4 teaspoon ground cloves
