3/4 cup peanut butter
12 slices bread
6 tablespoons jelly or jam
3 large eggs
3/4 cup 2% milk
1/4 teaspoon salt
2 tablespoons butter

Steps:

  • Spread peanut butter on 6 slices of bread; spread jelly on the remaining 6 slices of bread. Put 1 slice of each together to form sandwiches. In a large bowl, whisk the eggs, milk and salt. Dip both sides of sandwiches in egg mixture. , In a large skillet, melt butter over medium heat. Cook sandwiches for 2-3 minutes on each side or until golden brown.

We set out to make a stuffed French toast that is easy to prepare on a cookout using a pie iron but doesn't require space in your cooler for perishables. What we came up with was exactly that - and also vegan, for a delicious double whammy!

1 very ripe banana
One 13.6-ounce can unsweetened coconut milk (see Cook's Note)
Kosher salt
8 slices vegan sandwich bread (see Cook's Note)
1/4 cup peanut butter
1/4 cup jam or jelly in your favorite flavor
4 tablespoons coconut oil
Fresh berries, for topping
Confectioner's sugar, for topping
Maple syrup or honey, for topping

Steps:

  • Prepare a campfire or a charcoal grill for medium-high heat. Put a square pie iron on the fire to preheat.
  • Smash the banana with a fork until as smooth as possible in a rimmed pie pan or wide food-storage container. Stir in the coconut milk and a pinch of salt until completely combined. Put 2 slices of bread on a work surface and spread one with 1 tablespoon peanut butter and the other with 1 tablespoon jam or jelly, leaving a half-inch border on each. Sandwich the slices together and then dip into the banana mixture until well coated, about 2 seconds per side. Transfer to a plate.
  • Carefully remove the pie iron from the fire. Open the iron and add 1 tablespoon of the coconut oil, swirling it around both sides to coat completely. Add the sandwich to the pie iron and close it. Place the iron back in the fire and cook until browned on the outside and heated through, 3 to 4 minutes, turning and rotating every few seconds. Remove the iron from the fire and transfer the French toast to a plate. Top with berries and confectioner's sugar and syrup. Repeat with the remaining ingredients, coating the pie iron with coconut oil before adding the sandwich.

Two 1/2-inch slices French bread
2 tablespoons peanut butter or other nut butter
1 tablespoon Strawberry Compote, plus more for serving, recipe follows
1 large egg
1 cup milk
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1/2 cup crushed sweetened corn flake cereal, such as Frosted Flakes
2 tablespoons clarified butter (see Cook's Note)
Powdered sugar, for dusting
1 1/2 cups strawberries, quartered
3 tablespoons granulated sugar
2 tablespoons lemon juice
Pinch kosher salt

Steps:

  • Make a peanut butter and jelly sandwich as you would normally, using the French bread, peanut butter and Strawberry Compote.
  • In a small bowl, combine the egg, milk, cinnamon and nutmeg to make your French toast batter. Dip the sandwich in the batter for about 10 seconds on each side, then coat the battered sandwich with the crushed cereal.
  • Heat the clarified butter in a skillet over medium-high heat and cook the sandwich on each side until it's a nice golden brown! Cut in half, dust with powdered sugar, and serve with a spoonful of Strawberry Compote on the side.
  • Combine the strawberries, sugar, lemon juice and salt in a small saucepan. Cook over low heat, stirring frequently (to prevent burning), until thick, 10 to 15 minutes. Serve warm or keep in the refrigerator, covered, for up to 5 days.

2 tablespoons unsalted butter, at room temperature
6 slices brioche or other soft bread, preferably from a sandwich-style loaf
4 heaping tablespoons peanut butter
4 heaping tablespoons jelly, jam or preserves
2 large eggs
1/2 cup heavy cream or half-and-half
3 tablespoons light brown sugar, plus more for sprinkling if desired
2 tablespoons pure maple syrup
Pinch of ground cinnamon
Pinch of fine sea salt
Confectioners' sugar, as needed, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease four 5-inch creme brulee ramekins, each with 1/2 tablespoon of the butter.
  • Cut the slices of bread in half as you would cut a sandwich (either down the middle or on a diagonal)--you'll use 3 slices for each portion.
  • Spread the peanut butter on 4 of the pieces of bread. Spread the jelly on 4 of the remaining pieces and stack them on the peanut butter pieces, laying them slightly askew. Top each stack with 1 piece of the remaining bread. Transfer each to a prepared ramekin.
  • In a medium bowl, whisk the eggs, cream, the 3 tablespoons brown sugar, the maple syrup, cinnamon and salt together to combine. Gently pour or ladle 1/4 of the mixture over each portion, coating the top layer of bread. If desired, sprinkle each portion with a pinch or two of brown sugar.
  • Place the ramekins on a rimmed baking sheet and bake until the bread looks gently toasted at the edges, but still soft in the center, 15 to 20 minutes. Remove from the oven and let cool for 5 minutes, then sprinkle with confectioners' sugar and serve.

8 slices sandwich bread

  • Spread peanut butter and jelly over four slices of bread. Top with remaining bread. In a shallow bowl, whisk eggs and milk until blended., On a griddle, melt butter over medium heat. Less custardy than bread pudding, this make ahead recipe is perfect for breakfast, lunch or after school snack...just like a PB & J sandwich!

12 slices thick-cut hearty white bread ((I used one loaf 16.4 oz loaf Sara Lee Artesano bread))
1/2 cup creamy peanut butter
6 tablespoons grape jam or jelly
3 large eggs
1 1/4 cups whole milk
1 teaspoon vanilla extract
3/4 cup sugar
1/4 teaspoon salt
2 tablespoons salted butter
Powdered sugar or maple syrup ((optional))

Steps:

  • Prepare a 13x9 inch baking dish by coating with cooking spray or lightly greasing with butter.
  • Spread a rounded tablespoonful of peanut butter on 6 slices of bread. Spread 1 level tablespoonful of jam or jelly on the other 6 slices of bread. I leave the crust on! Place the two slices of bread together to make sandwiches.
  • With a serrated knife (steak knife will work), make one cut down the middle of each sandwich lengthwise. Then, make two crosswise cuts across the lengthwise cut. This will create 6 pieces.
  • Starting at the short end, arrange 6 pieces across the short end, with the cut side up. Repeat this procedure with the remaining pieces.
  • In a medium bowl, beat eggs with a fork or whisk. Gradually whisk in milk, then add sugar and salt. Drizzle this mixture slowly over the sandwich pieces until all pieces are coated. It's ok if the mixture pools at the bottom. The bread will soak it up.
  • Place butter in a small microwave-safe bowl and cover with a paper towel. Microwave on HIGH for 25 seconds. Stir gently until the butter is completely melted. Using a pastry brush, brush or drizzle melted butter over the sandwich pieces.
  • Cover with aluminum foil and place in the fridge 8 hours or overnight.
  • Preheat oven to 325F.
  • Bake, covered with aluminum foil, for 30 minutes. Remove the aluminum foil and bake an additional 15 to 20 minutes or until the edges are slightly golden brown.
  • Sprinkle with powdered sugar or drizzle with maple syrup, if you like.

8 slices of thick whole grain bread
4 eggs
1 cup (250 ml) of milk
2 Tbsp (30 ml) or so of brown sugar
1 tsp (5 ml) or so of cinnamon
1 Tbsp (15 ml) or so, of vanilla
2 cup (500 ml) of oatmeal
A half cup or so of peanut butter
A half cup or so of your favorite jelly
A splash of oil and a bit of butter for grilling
Maple syrup for drizzling

Steps:

  • Preheat a griddle or heavy sauté pan over medium heat.
  • Whisk the milk, eggs, brown sugar, cinnamon and vanilla together in one bowl. Place the oatmeal in a second bowl. Sandwich the peanut butter and jelly together. Dip the sandwiches in the wet mixture first, drip dry then in the oatmeal to coat.
  • Splash a bit of oil on your grill and drop some butter in the center. The oil will keep the butter from burning.
  • Slowly and patiently grill the sandwiches on one side until they're golden brown, about 3 or 4 minutes. Flip. Brown the second side, serve and share while it's still hot. Drizzle a little maple syrup on top to make it ooey, gooey fantastic!
  • Freestyle Twist: Feel free to mix up the spices or sugars in the milk/egg mixture. Try a little nutmeg, cardamom, cloves or mace and see what your family warms up to. Or substitute honey or maple syrup for the brown sugar.
