Pomegranate jelly and seeds provide a sweet ruby-red glaze for these easy, no-bake cheesecake treats that set in the freezer. The recipe makes six perfect mini desserts that are destined to be a big hit.

3 tablespoons granulated sugar
7 ounces graham crackers (about 13)
1/2 cup (1 stick) unsalted butter, melted
10 ounces cream cheese, room temperature
6 ounces creme fraiche
2/3 cup sifted confectioners' sugar
1 cup heavy cream
1 cup Mrs. Gubler's Pomegranate Jelly, for serving
Pomegranate seeds, for garnish

Steps:

  • Line six large (8-ounce) cups of a muffin tin with plastic wrap; set aside. Combine sugar and crackers in the bowl of a food processor fitted with the metal blade; pulse until very finely chopped. Transfer to a small bowl, and stir in melted butter. Press into prepared muffin tin. Place in freezer while preparing filling.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese, creme fraiche, and confectioners' sugar until combined. In another bowl, beat heavy cream just until stiff peaks form; fold into cream-cheese mixture. Spoon into crusts, and freeze until firm, about 30 minutes.
  • Meanwhile, heat pomegranate jelly in a small saucepan over low heat, stirring until melted and smooth. Remove from heat; let stand until cool but pourable.
  • When ready to serve, remove muffin tin from freezer. Lift out cheesecakes by gently pulling up on the plastic wrap. Carefully remove plastic; set cakes on serving plates. Drizzle each with jelly, and sprinkle with pomegranate seeds.

12 strawberries
12 ounces softened cream cheese, 1 1/2 (8-ounce) bricks
2/3 cup sour cream
1 cup confectioners' sugar
1 teaspoon vanilla extract
6 individual graham cracker crusts, available on baking aisle

Steps:

  • Coarsely chop 6 berries and place in food processor. Add cream cheese, sour cream, confectioners' sugar, vanilla extract and process until smooth. Using a rubber spatula, fill pie tins. Garnish cheesecakes with slices of remaining berries.

Gingersnaps fit perfectly into the bottom of muffin cups so they make a great mini pie crust for these tiny treats. A little bit of gelatin helps the pumpkin-cream cheese filling set without making it hard or rubbery.

12 gingersnaps, plus crushed gingersnaps for topping
1 1/4-ounce packet unflavored gelatin
2 tablespoons warm water
12 ounces cream cheese, at room temperature
1 cup confectioners' sugar
2/3 cup pure pumpkin puree
2/3 cup heavy cream
1/2 teaspoon pumpkin pie spice
1/2 teaspoon pure vanilla extract
Whipped cream, for topping

Steps:

  • Line a 12-cup muffin pan with paper liners and put a gingersnap in each cup.
  • Stir the gelatin into the warm water in a microwave-safe bowl until mostly dissolved; let stand 5 minutes, then microwave in 10-second intervals until melted.
  • Combine the cream cheese, confectioners' sugar, pumpkin puree, heavy cream, gelatin mixture, pie spice and vanilla in a large bowl and beat with a mixer until fluffy. Spread in the muffin cups over the gingersnaps and refrigerate until set, at least 2 hours.
  • Remove the cheesecakes from the muffin tins. Remove the liners and top with whipped cream and crushed gingersnaps.

3/4 cup raspberries, fresh and crushed
8 ounces cream cheese
10 1/2 ounces sweetened condensed milk
1 cup Cool Whip, thawed

Steps:

  • Line a 12 cup muffin pan with paper cup liners.
  • In a medium bowl, combine graham crackers crumb, crushed pecans and melted butter, mixing well to blend.
  • Spoon mixture evenly into a 12 cup muffin pan lined with paper cup liners.
  • Press mixture with a spoon to firm bottom.
  • Puree raspberries and set aside.
  • Beat cream cheese until fluffy.
  • Add condensed milk and 1/2 cup of the rapberry puree and mix until well blended.
  • Fold in Cool Whip.
  • Spoon evenly into baking cups.
  • Freeze for at least 5 hours.
  • Invert cakes onto individual serving plates.
  • Drizzle remaining raspberry puree over cakes.
  • Garnish with a few whole raspberries.
  • Serve frozen.

1/4 cup pure pumpkin puree
1/4 teaspoon pumpkin pie spice
1/2 cup whipping cream
mini chocolate chip (optional)

Steps:

  • Line a 24-cup mini muffin tin with paper liners. Combine graham cracker crumbs with melted butter and stir well. Divide between 24 liners, using about 1 tsp of mixture each. Use a small spoon or your fingers to press mixture into liners without pressing out the folds. Chill.
  • Using an electric mixer, beat cream cheese with sugar in a medium bowl until smooth and fluffy, about1 to 2 minutes. Beat in pumpkin purée and spice. 12 vanilla wafers
1 (21 ounce) can cherry pie filling

Steps:

  • Mix softened cream cheese, sugar, eggs, lemon juice and vanilla in bowl.
  • Place wafer in bottom of each of 12 cupcake papers (in cupcake tin).
  • Spoon in cream cheese mixture 3/4 full.
  • Bake in 375 degree oven for 15 minutes.
  • Let cool.
  • Top each with cherry pie filling and refrigerate for 1 hour or more.
