- In a coffee mug, add water/milk, melted butter/oil, a dash of salt and vanilla extract. Whisk well.
- Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
- Microwave for 60 seconds. Center should be slightly molten. Careful not to overcook.
- Enjoy with a spoon. Careful, brownie will be hot.

- Mix in the chocolate chips.
- If you don't want to cook them off straight away, then place them in the refrigerator for up to 24 hours.

- Line a 4 x 7-inch microwave safe dish with parchment paper and set aside.
- In a microwave safe bowl, add the melted butter and half the chocolate and microwave until melted. Whisk in the superfine sugar until combined. Add the warm milk and flour and whisk together until smooth. Fold through the remaining chocolate.
- Transfer the brownie batter into the microwave safe dish and microwave for 1 1/2 minutes, until the tops are mostly cooked.
- Remove the brownies from the microwave and let them cool completely, before slicing and serving.

INDIVIDUAL MICROWAVE BROWNIES (VEGAN)
This is adapted from vegweb.com. Instead of using the full amount of oil, you can replace the oil with 1/2 tbsp applesauce (or any mashed fruit i.e. pumpkin puree, mashed banana) and 1/ 2 tbsp oil mixed together. You could even use melted butter.... just don't use light margarine. I also think this is a bit sweet, so you can reduce the sugar to 1.5 tbsp or even 1 tbsp if you'd like. I like to drizzle peanut butter on top of this and swirl it in. Add in nuts, chocolate chips, whatever you want. Make sure you watch the microwave, it's super easy to burn!

- Combine the dry ingredients in a bowl.
- Make a flax egg by combining flax and boiling water. Stir and let it stand until it becomes sticky and egg-like (20 - 30 sec). This is optional.
- Combine the wet ingredients in a separate bowl.
- Combine wet and dry ingredients.
- Add to microwaveable bowl. Grease bowl with oil or butter for easy clean up. PAM won't work! It will make batter stick to bowl!
- Scrape down sides of bowl, smooth over the top of batter. Microwave for 2 - 3 minutes until it's done (high power I think, most microwaves nowadays are high power). If your microwave has a low power, you might have to microwave it longer. It's done when the center of the brownie is dry and toothpick comes out clean when inserted down the middle.
