1 pound tilapia fillets, cut into 1-inch strips
1/4 teaspoon pepper
1/8 teaspoon salt
1/2 cup all-purpose flour
1/3 cup reduced-fat ranch salad dressing
1/4 cup reduced-fat plain yogurt
1-1/2 cups panko bread crumbs
1-1/2 teaspoons garam masala
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
3 tablespoons olive oil
SAUCE:
1/2 cup reduced-fat plain yogurt
3 tablespoons fresh cilantro leaves
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup finely chopped peeled cucumber
2 tablespoons finely chopped sweet onion
4 cups fresh baby spinach
1 medium mango, peeled and sliced

Steps:

  • Sprinkle tilapia with pepper and salt. Place flour in a shallow bowl. In a second shallow bowl, combine salad dressing and yogurt. In a third shallow bowl, combine the bread crumbs, garam masala, cumin and cayenne. Dip fish in the flour, dressing mixture, then bread crumb mixture., In a large nonstick skillet heat oil over medium-high heat; cook fish in batches until fish just begins to flake easily with a fork, 2-3 minutes., Meanwhile, for sauce, place the yogurt, cilantro, cumin and salt in a food processor; cover and process until blended. Stir in cucumber and onion. Serve tilapia with spinach, mango and prepared sauce.

3 tilapia fillets (about 1 lb)
1 teaspoon dried oregano
1 teaspoon dried basil
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
3 tablespoons butter
1/2 cup lemon juice

Steps:

  • Place fish in a glass pan and preheat oven to 350.
  • Combine and melt the butter and lemon juice in the microwave, then pour over the fillets.
  • Sprinkle the remaining ingredients (vary the amounts of each to your liking).
  • Bake for 30 minutes.

1 large onion, chopped
1 medium tart apple, peeled and finely chopped
1 celery rib, chopped
1 garlic clove, minced
2 tablespoons all-purpose flour
2 cups chicken stock
1/2 cup heavy whipping cream
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground mustard
1 bay leaf
1-1/2 pounds uncooked medium shrimp, peeled and deveined
Hot cooked rice
Optional: Lime wedges, toasted coconut and chopped green onions

Steps:

  • In a large saucepan, heat butter over medium-high heat. Add onion, apple and celery; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually whisk in chicken stock, cream, curry powder, salt, mustard and bay leaf. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes., Reduce heat; simmer, uncovered, until slightly reduced, 6-8 minutes, stirring occasionally. Add shrimp; cook until shrimp turn pink, 6-8 minutes. Serve with rice and, if desired, optional toppings.

2 teaspoons ginger, finely grated
3 garlic cloves, crushed
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon mustard powder
1/4-1/2 teaspoon cayenne pepper
2 tablespoons fresh lemon juice
coarse salt
fresh ground black pepper
5 tablespoons unsalted butter, melted
4 (6 ounce) fish fillets (or steaks, swordfish, halibut, haddock, tuna, or salmon)

Steps:

  • In a small bowl, combine ginger, garlic, garam masala, cumin, turmeric, mustard powder, cayenne pepper, lemon juice, 3/4 teaspoon salt, and a pinch of black pepper. Stir in about 1 tablespoon warm water to form a very thick paste.
  • Brush a baking sheet or broiler pan with 1 tablespoon butter; place fish on top.
  • Cover fish on both sides with marinade; set aside for at least 15 minutes but no more than 30 minutes.
  • Preheat broiler.
  • Drizzle 2 tablespoons butter over fish; broil until nicely browned, 5 to 6 minutes. Turn over steaks, and drizzle with remaining 2 tablespoons butter; broil until browned and cooked through.
  • Serve immediately.

3 tablespoons sesame seeds, toasted
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon paprika

salt & freshly ground black pepper, to taste
1 tablespoon vegetable oil

Steps:

These Tilapia Sticks turn out moist on the inside and delightfully crispy on the outside and are sure to please both parents and kids. Serve as-is or with your choice of dipping sauce.

2 tilapia fillets, skinned and de-boned
1 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon cooking spray
1 egg
1 tablespoon milk
1 teaspoon ketchup
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 425°F.
  • Slice tilapia filets into 1-inch wide x 3-inch long "sticks".
  • Into a shallow, wide bowl, place panko, paprika, garlic powder, onion powder, salt and pepper. Stir until thoroughly combined.
  • In another shallow bowl, whisk egg. Then whisk in milk, ketchup, salt and pepper.
  • Lightly coat a medium-sized baking pan with cooking spray.
  • Dredge tilapia "sticks" in egg mixture, gently shake off excess liquid and drop into panko mixture. Pat mixture onto all sides of the fish and gently place onto baking pan, handling carefully as not to loose the coating.
  • Bake for 5 minutes, rotate the baking pan (do not turn the fish sticks themselves) and return to the oven for another 2-3 minutes.
  • Allow to cool slightly, serve and enjoy!
