Make the most of marrow with this superhealthy budget family supper

1 tbsp olive oil
1 onion, chopped
1 garlic clove, crushed
1 tbsp dried mixed herbs
500g pack turkey mince
2 x 400g cans chopped tomatoes
1 marrow, cut into 4cm thick slices
4 tbsp breadcrumbs
3 tbsp grated parmesan

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan and cook the onion, garlic and 2 tsp of the herbs for 3 mins until starting to soften. Add the turkey and brown all over, then tip in the tomatoes and cook for 5 mins more.
  • Scoop out the middle of the marrow and discard (or fry, then freeze for another time - try it mashed with potato). Arrange the slices in a baking dish. Spoon the mince into the middle of each marrow slice, then spoon the rest over the top. Cover with foil and bake for 30 mins.
  • Meanwhile, mix remaining herbs with the breadcrumbs and Parmesan. Remove the marrow from the oven, uncover, and sprinkle over the crumbs. Return to the oven for 10 mins more until crumbs are golden and crisp and marrow is tender.

6 ears corn, husked
1 jalapeno
8 strips cooked bacon, chopped
2 heirloom or garden-fresh tomatoes, seeded and diced
One 4-ounce bag fried corn kernels, such as Corn Nuts, roughly chopped
2 tablespoons apple cider vinegar
1 teaspoon sea salt
1/2 teaspoon ground chipotle powder
1 shallot, finely minced
1/4 cup olive oil

Steps:

  • For the salad: Heat a grill to 400 degrees F.
  • Place 3 ears of corn directly on the grill grates, along with the jalapeno. Grill, turning occasionally, until very tender and charred in spots, about 10 minutes.
  • Meanwhile, cut the kernels off the remaining 3 ears raw corn and add to a medium bowl. Set a fine-mesh strainer over a small bowl. Place a raw corn cob upright in the strainer and scrape along the cob using the back of a knife or spoon to extract the milk and remaining corn remnants. Press the corn remnants with a rubber spatula to release even more corn milk, then discard any remnants left in the strainer. Repeat with the remaining raw corn.
  • When the grilled corn and jalapeno are cool enough to handle, cut the kernels from the corn and add to the bowl. Rub the charred skin off the jalapeno, then remove the stem and seeds, cut into small dice and set aside.
  • For the dressing: Add 2 tablespoons of the corn milk to a small bowl, along with the vinegar, salt, chipotle powder and shallot. Slowly whisk in the oil to combine, then add the dressing to the corn and toss gently to combine. Spread the dressed corn on a platter. Arrange the grilled jalapeno, bacon, diced tomatoes and fried corn kernels on top in rows. Serve immediately.

I love this simple recipe. It's great comfort food when served with a pile of steaming, creamy mash potato. Quite frankly, I wouldn't know what else to do with a marrow! A medium marrow will be around 700g which would do 2 people easily.

700 g marrow
1 (250 ml) can sweet corn
40 g butter
1 teaspoon ground black pepper
1/2 teaspoon salt

Steps:

  • Peel the marrow, cut in half and scoop out the seeds.
  • Cut into 2cm thick slices, then into chunks.
  • Pile the flesh in the middle of a large square of kitchen foil (or baking paper).
  • Add the corn.
  • Dollop the butter on top, then add a generous grind of pepper and some salt.
  • Pull the sides of the foil up around the veg and seal loosely.
  • Bake at 220C/400F Gas Mark 6 for 30 minutes.

2 tablespoons unsalted butter
One 15.25-ounce can whole kernel sweet corn, drained
One 14.75-ounce can cream-style sweet corn
1 1/2 cups half-and-half
3 tablespoons all-purpose flour
2 tablespoons maple syrup
1/8 teaspoon red chile flakes
2 cloves garlic, grated on a rasp or finely minced
2 scallions, white and green parts, finely chopped
Kosher salt and freshly ground black pepper
1 1/2 cups shredded Cheddar
1 1/2 cups shredded mozzarella
3 large eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F. Grease the bottom and sides of an 8-by-8-inch baking dish with the butter.
  • In a large bowl, whisk together the sweet corn, cream-style corn, half-and-half, flour, maple syrup, chile flakes, garlic and scallions. Season with a nice pinch of salt and a few grinds of pepper. Taste and season more if needed. Whisk in the Cheddar, mozzarella and eggs. Pour into the prepared baking dish.
  • Bake until set in the center and golden brown around the edges, 50 to 60 minutes. Allow to rest for 10 to 15 minutes before serving.

Marrow has a mild flavour, so pep it up with a punchy Italian tomato sauce with bacon, chilli and thyme

1 marrow , cut into 6cm thick slices
125g ball mozzarella , grated
2 tbsp olive oil
125g pack pancetta cubetti
1 large onion , chopped
2 garlic cloves , chopped
large sprig thyme
1 bay leaf
sprinkle golden caster sugar
2-3 tbsp red wine vinegar
2 x 400g cans chopped tomato
large glass red wine
pinch dried chilli flakes

Steps:

  • For the sauce, heat half the oil in a pan and sizzle the pancetta for 5 mins, until just starting to crisp. Then add the onion, garlic, thyme, bay and sugar, and cook until the onions are golden. Splash in the vinegar, sizzle for a moment then tip in the tomatoes. Swoosh the wine around the tomato tins to wash out every last bit and tip into the sauce. Season with chilli and a pinch of salt and simmer for 30 mins until rich and thick.
  • Meanwhile, heat the oven to 200C/180C fan/gas 6. Scoop out the middle of the marrow, leaving a little in the bottom to form a base. Drizzle a baking dish with a little oil, arrange the marrow in the dish and roast for 30 mins.
  • Spoon the sauce into the middle of each marrow slice, cover with foil and bake for 30 mins. Remove the foil, scatter over the mozzarella and return to the oven for 10 mins until the cheese has melted and the marrow is tender.
