2 tbsp sunflower oil
1 onion, finely chopped
2 garlic cloves, sliced
1 tbsp chopped ginger
500g potato, cut into 2cm (¾in) chunks
1 large red chilli, halved, deseeded and finely sliced
½ tsp each black mustard seeds, cumin seeds, turmeric
250g spinach leaves

Steps:

  • Heat 2 tbsp sunflower oil in a large pan, add 1 finely chopped onion, 2 sliced garlic cloves and 1 tbsp chopped ginger, and fry for about 3 mins.
  • Stir in 500g potatoes, cut into 2cm chunks, 1 halved, deseeded and finely sliced red chilli, ½ tsp black mustard seeds, ½ tsp cumin seeds, ½ tsp turmeric and ½ tsp salt and continue cooking and stirring for 5 mins more.
  • Add a splash of water, cover, and cook for 8-10 mins.
  • Check the potatoes are ready by spearing with the point of a knife, and if they are, add 250g spinach leaves and let it wilt into the pan. Take off the heat and serve.

2 cloves garlic, peeled
1 (1/2 inch) piece fresh ginger
2 tablespoons vegetable oil, divided, or as needed
1 onion, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon cayenne pepper
½ teaspoon ground turmeric
2 potatoes, peeled and chopped
2 roma (plum) tomatoes, chopped
2 bunches fresh spinach, chopped
salt to taste

Steps:

  • Grind garlic and ginger together to make a paste.
  • Heat 1 tablespoon oil in a pot over medium-high heat. Saute onion in the hot oil until translucent, 5 to 7 minutes. Add cumin, coriander, cayenne, and turmeric. Add ginger-garlic paste. Mix well. Stir in remaining oil, potatoes, and tomatoes; cook until oil leaves the side of the pan, about 5 minutes. Add spinach and salt; continue to cook over medium heat until potatoes are tender, about 20 minutes. Serve.

Indian Spiced Spinach With Potatoes image

This recipe is from Mridula Baljekar's 30 Minute Vegetarian Indian Cookbook. The leftovers make a great omelet filling, or eaten cold in a wrap. I usually forgo the dried chiles, and use a comparable amount of red pepper flakes.

2 -4 tablespoons canola oil or 2 -4 tablespoons sunflower oil
3/4 teaspoon black mustard seeds
1/2 teaspoon cumin seed
1 -2 dried red chilies, chopped or 1/4-1/2 teaspoon red pepper flakes
1/2-1 yellow onion, finely diced
3 large garlic cloves, minced
1 small green chili pepper, seeded chopped (optional ingredient)
4 1/2 cups peeled cubed potatoes (1 inch cubes)
1/2-1 teaspoon salt, to taste
1 teaspoon ground turmeric
1 tablespoon ground coriander
1 teaspoon ground cumin
4 cups chopped fresh spinach

Steps:

  • Heat the oil over medium heat. When it's hot, add in the mustard seeds. When they start popping, add in the cumin seeds, then the chile/red pepper flakes. Stir for a few seconds. ( I sometimes have trouble with getting my mustard seeds to pop. I always suspect that it has to do with their age, but I'm only guessing there. If they don't pop in a reasonable amount of time, I just proceed. It's never affected the flavor of the finished dish).
  • Add the onion, garlic and green chile if you're using one. Stir fry these for 5 minutes, adjusting the heat down partway through the fry time.
  • Add the potatoes and increase the heat a little. Stir fry for 5 minutes, then cover, turn the heat back down a bit, and cook for 4 minutes. I lift the lid and give them a quick stir halfway through this time. The potatoes and onion will be starting to brown at this point.
  • Stir in the salt and spices. Reduce the heat to low, cover the pan and continue to cook for 10 minutes. Give a quick stir after the first 5 minutes.
  • Add the spinach and increase the heat. Stir in the spinach as it wilts, then cover pan again, reduce heat again and let cook for another 7 minutes.
  • Remove the lid and test one of the potatoes, they should be cooked through at this point. (if not, recover and cook a bit longer) Reduce the heat a little and continue cooking to evaporate any remaining juices from the spinach. Stir frequently during this time to avoid sticking.

2 pounds Yukon gold potatoes, quartered
Pinch salt, for water
1 tablespoon butter
2 cloves garlic, minced
1 small onion, halved and thinly sliced
1 teaspoon curry powder
4 cups baby spinach
1 large tomato, diced

Steps:

  • In a large pot, cover the potatoes with cold water, add some salt then bring to a simmer. Cook, uncovered, until tender when pierced with a knife, about 20 minutes. Drain the potatoes.
  • Melt the butter in a large skillet over medium heat. Add the garlic and the onion and cook until the onion has softened, about 2 minutes. Add the potatoes. Stir in the curry powder, then add the spinach and tomato. Cook and stir until the spinach has wilted and all the flavors have merged together, about 2 more minutes. Serve warm.

I got this recipe from manjulaskitchen.com. It was so delicious we just ate it without any bread or accompaniment. I didn't even have time to take a picture because it was all gone! Maybe next time. The actual recipe states to boil the potatoes first, but I just added them to the pan and let them cook in the pan with the other ingredients. I don't know if the version below is exactly the same as from the website, but it's how I made it.

2 -3 potatoes, small cubes
1/2 teaspoon cumin seed
1/4 teaspoon caraway seeds (kalonji) or 1/4 teaspoon onion seeds (kalonji)
1/4 teaspoon mustard seeds
1 pinch asafoetida powder
2 tablespoons olive oil
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1 chopped green chili pepper (I used Serrano pepper)
2 tablespoons chopped cilantro
1 tablespoon lemon juice

Steps:

  • 1) Peel and cut potatoes into small cubes.
  • 2) Heat oil in pan.
  • 3) Add cumin seeds, onion seeds, mustard seeds and asafoetida powder to pan and shake around until seeds start to crackle.
  • 4) Add potatoes, turmeric powder, salt and green chilis. Mix well.
  • 5) Lower heat to simmer and cover pan for about 18-20 minutes or until the potatoes are fork tender. You may want to add a splash of water at this step if it's too dry for the potatoes to get cooked well.
  • 6) Increase heat to high and stir. I let the potatoes brown a bit but you can skip this step.
  • 7) Remove from heat and stir in chopped cilantro and lemon juice.

Made this to go with a lamb patia on Friday. Very easy and makes a tasty side-dish for your curry. Don't use over-floury potatoes, because you need them to hold together. You can use fresh spinach instead, but I always have frozen in my freezer so it's easier for me.

8 medium potatoes, unpeeled and cut into cubes
4 garlic cloves, finely chopped
2 medium tomatoes, deseeded and cut into strips
4 tablespoons vegetable oil
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon chili powder
1/2 teaspoon salt
1 teaspoon mustard seeds
400 g frozen spinach

Steps:

  • Defrost the spinach and drain well. Squeeze it to get rid of as much moisture as possible.
  • Meanwhile, boil the cubed potatoes until they are almost cooked through (but not falling apart). Drain well.
  • Heat the oil in a large pan or wok and, when hot, add the potatoes and all the spices, stirring to coat everything.
  • When the potatoes have started to crisp up slightly, add the garlic and tomatoes and stir for a few more seconds, then add the spinach.
  • If using fresh spinach, you want it to be just wilted, or with frozen, warmed through.
  • Taste and adjust seasoning as required then serve immediately.

I got this aloo palak recipe from daawat.com, but have adjusted it slightly to my liking. It will serve two as a main course when served with naan bread or rice, or four as a side dish. If you like it a little milder deseed the chilies.

300 g spinach, fresh or frozen
2 garlic cloves, roughly chopped
1 inch fresh ginger, roughly chopped
2 onions, chopped
1 -2 green chili, chopped with seeds
200 g waxy potatoes, peeled and cubed
1 teaspoon turmeric
4 tablespoons ghee or 4 tablespoons butter
1 teaspoon cumin seed
1 teaspoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 tablespoon fresh cream (optional)
salt

Steps:

  • In a pan cook the spinach with garlic, ginger, onions and the green chilies for about 5-10 minutes.
  • Remove from the pan and blend to a fine puree and keep aside.
  • In the meantime boil the potatoes with salt and turmeric until done, apprximately 10 minutes and set aside when done.
  • Heat ghee in a pan, fry cumin seeds along with spinach-onion paste and simmer for a few minutes.
  • Add the cooked potatoes, garam masala, coriander and cumin powder and a little water if needed.
  • Simmer for few minutes till the potatoes absorb the flavor.
  • Add fresh cream if desired.
