1 1/2 pounds boneless skinless chicken breasts
1 cup whole milk plain yogurt
3 large cloves garlic, pressed
1-inch piece ginger, grated
8 cardamom pods, cracked with the back of a chef's knife
1 tablespoon curry powder
1/2 teaspoon dried red chili flakes
2 teaspoons ground coriander
1 tablespoon sweet paprika
2 tablespoons honey
1 teaspoon salt
20 grinds black pepper
3 tablespoons vegetable oil
1 medium onion, cut into medium dice
3 tablespoons tomato paste
2 cups half-and-half
Basmati rice, for serving

Steps:

  • Cut the chicken breasts roughly into 2 by 2-inch pieces. Mix together the yogurt, garlic, ginger, cardamom, curry powder, chili flakes, coriander, paprika, honey, salt, and pepper until thoroughly combined. Add chicken pieces to yogurt mixture, cover, and refrigerate at least 1 hour or as long as overnight. Bring to room temperature before cooking.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and cook until translucent. Stir in tomato paste until evenly distributed and then add the half-and-half. Slide in the chicken and marinade, stir well, and bring mixture to a simmer. Reduce the heat so that the liquid remains at a low simmer. Cook about 15 minutes until chicken is no longer pink in the middle but still tender and moist. Serve immediately over basmati rice.

2 pounds skinless, boneless chicken breast halves
2 teaspoons salt
½ cup cooking oil
1 ½ cups chopped onion
1 tablespoon minced garlic
1 ½ teaspoons minced fresh ginger root
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon water
1 (15 ounce) can crushed tomatoes
1 cup plain yogurt
1 tablespoon chopped fresh cilantro
1 teaspoon salt
½ cup water
1 teaspoon garam masala
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lemon juice

Steps:

  • Sprinkle the chicken breasts with 2 teaspoons salt.
  • Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
  • Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while stirring. Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.
  • Cover the skillet and simmer until the chicken breasts are no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle with lemon juice to serve.

2 tablespoons vegetable oil
12 boneless, skinless chicken thighs
Salt and pepper
Small onion, chopped
3 cloves garlic, minced
1-inch piece fresh ginger, peeled and finely grated
1 small green chile
1 tablespoon cumin
1/4 teaspoon cayenne
2 tablespoons garam masala
1 28-ounce can pureed tomatoes
1/2 cup water
1/4 cup heavy cream

Steps:

  • Heat a large skillet over high heat. Add 2 tablespoons vegetable oil.
  • Season chicken with salt and pepper and add to hot pan. Brown on both sides. Cook in batches if needed.
  • Remove chicken from pan and add onion, garlic, and ginger. Cut a slit into the chile lengthwise and add to pan. Saute the onion mixture until softened, about 3-5 minutes. Add spices and cook for 30 seconds.
  • Add tomatoes and 1/2 cup water and stir. Add chicken back to pan and bring up to a simmer. Cover and simmer until chicken is cooked through and sauce is thickened, about 30 minutes. Turn chicken occasionally throughout cooking.
  • When ready to serve, uncover and stir in cream. Simmer for 1 minute and serve.

3/4 lb boneless skinless chicken breast
1 cup plain yogurt, drained
1/4 cup plus 2 tablespoons loosely packed chopped of fresh mint or 1/4 cup cilantro, divided
1 tablespoon shredded fresh ginger
1 teaspoon ground coriander
1 pinch cayenne pepper
salt
1 teaspoon granulated sugar
2 teaspoons butter
1/4 cup chopped onion
2 medium garlic cloves, minced
jasmine rice, cooked

Steps:

  • Remove fat from chicken; make 3 or 4 long slits in each piece to allow marinade to penetrate.
  • Mix together yogurt, 1/4 cup chopped mint or cilantro, ginger, coriander, cayenne, salt and sugar. Set aside half the mixture. Add chicken to the remaining yogurt mixture; marinate 10 minutes, turning once.
  • Melt butter over medium-high heat in a nonstick skillet just large enough to hold the chicken. Remove chicken from marinade; discard marinade. Add onion, garlic and chicken to skillet. Brown chicken 3 minutes. Turn and brown 2 minutes. Lower heat to medium.
  • Spoon reserved yogurt mixture over the chicken. Cover and cook for 5 minutes or until cooked through. Sprinkle with the remaining 2 tablespoons chopped mint. Serve with jasmine rice.

SPICY INDIAN-STYLE SKILLET CHICKEN BIRIYANI

If you are a lover of Indian food, then you will love this dish! This is a skillet version of the Indian biriyani, no need to bake in the oven it is all made in a skillet with the same authentic flavors, do not use low-fat yogurt for this or it will curdle, use whole milk yogurt. If you have any saffron add in a pinch to the rice when it is cooking, along with a very small pinch cinnamon and 2 teaspoons salt, use 3 cups water or chicken broth with 1-1/2 cups basmati rice. You can adjust the jalapeno peppers and chili flakes amount to taste and also use as much curry as desired.

  • Sprinkle the chicken with about 1 teaspoon salt and 1/2 teaspoon black pepper (can use more pepper).
  • Heat oil with butter over medium heat; add in the chicken and cook for about 6-7 minutes or until cooked through, remove to a bowl, cover with foil to keep warm.
  • Add in onions and cook for about 10 minutes or until lightly browned (you might have to add in more oil if needed).
  • Add in garlic, chili flakes, curry powder, ginger, cardamom and jalapeno peppers; cook stirring for 3 minutes.
  • Add in yogurt, cook stirring constantly for 2 minutes.
  • Add in chicken and raisins; cook for about 3-4 minutes or until heated through.
  • Add in cooked rice; stir to combine.
  • Season with more salt and black pepper to taste.
  • Sprinkle with chopped cashews.

3 tablespoons vegetable oil
2 tablespoons fresh ginger, peeled and minced
4 large garlic cloves, minced
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 medium red onion, thinly sliced
1 lb chicken breast, skinless, boneless, thinly sliced cross-wise
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon garam masala
1/4 teaspoon turmeric
1/4 teaspoon dry crushed red pepper
3 green onions, thinly sliced
lemon slice

Steps:

  • Heat oil in a large non-stick skillet over medium-high heat. Add ginger and garlic. Stir for 30 seconds.
  • Add all the bell peppers and onion and saute until golden, about 5 minutes.
  • Add chicken and all the spices to skillet and sprinkle with salt and pepper. Saute until chicken is cooked through, about 4 minutes. Transfer to a bowl.
  • Sprinkle with green onions. Garnish with lemon slices. Serve immediately.

1/4 teaspoon cayenne pepper
1 tablespoon lemon juice
4 skinless chicken breasts
4 lemon wedges

Steps:

  • In small bowl, stir together oil and garlic. Stir in water, paprika, ginger, coriander, cumin, nutmeg, turmeric and cayenne pepper.
  • Spoon 1 tbsp (15 mL) into another small bowl; stir in lemon juice and set aside. Arrange chicken in single layer in shallow glass dish; brush with remaining spice mixture. Cover and refrigerate chicken for 1 hour.
  • (Chicken can be prepared to this point and refrigerated for up to 24 hours; let stand at room temperature for 30 minutes.) Place chicken, flesh side down, on greased grill over medium-high heat; close lid and cook for 5 minutes.
  • Turn and brush flesh with reserved lemon mixture. Close lid and cook, turning often, for about 12 minutes longer or until chicken is no longer pink inside and juices run clear when chicken is pierced.
  • Serve with lemon wedges.

Season the curry with salt and transfer the chicken to a platter. Pour the sauce on top, sprinkle with garam masala and the cilantro leaves and serve.
