1 tablespoon peanut oil
1 shallot, finely chopped
¼ white onion, chopped
2 tablespoons butter
2 teaspoons lemon juice

Steps:

  • Heat 1 tablespoon oil in a large saucepan over medium high heat. Saute shallot and onion until soft and translucent. Stir in butter, lemon juice, ginger-garlic paste, 1 teaspoon garam masala, chili powder, cumin and bay leaf. Cook, stirring, for 1 minute. Add tomato sauce, and cook for 2 minutes, stirring frequently. Stir in half-and-half and yogurt. Reduce heat to low, and simmer for 10 minutes, stirring frequently. Season with salt pepper. Remove from heat and set aside.
  • Heat 1 tablespoon oil in a large heavy skillet over medium heat. Cook chicken until lightly browned, about 10 minutes. Reduce heat, and season with 1 teaspoon garam masala and cayenne. Stir in a few spoonfuls of sauce, and simmer until liquid has reduced, and chicken is no longer pink. Stir cooked chicken into sauce.
  • Mix together cornstarch and water, then stir into the sauce. Cook for 5 to 10 minutes, or until thickened.

1 tablespoon tandoori masala powder
1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
½ onion, chopped

2 teaspoons garam masala

Steps:

  • Stir the yogurt and tandoori masala powder together in a large bowl until thoroughly combined; add the chicken and toss to coat evenly. Marinate in refrigerator for 1 hour. Drain and discard any excess marinade.
  • Puree the onion, ginger, and garlic with the water in a blender until it forms a smooth paste; set aside.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Cook the chicken in the hot oil until lightly browned on all sides, about 5 minutes. Remove from skillet and set aside. Heat the remaining 2 tablespoons in the skillet. Fry the onion paste in the hot oil until the moisture is mostly evaporated, about 3 minutes. Sprinkle the garam masala and chili powder over the mixture; cook 1 minute more. Pour the tomato sauce into the mixture, reduce heat to medium-low, and cook another 5 minutes. Return the chicken to the pan along with the half and half; bring to a boil. 28 oz (800g) boneless and skinless chicken thighs or breasts (cut into bite-sized pieces)
1/2 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon minced ginger ((or finely grated))
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon red chili powder
1 teaspoon of salt
2 tablespoons olive oil
2 tablespoons ghee ((or 1 tbs butter + 1 tbs oil))
1 large onion, (sliced or chopped)
1 1/2 tablespoons garlic, (minced)
1 tablespoon ginger, (minced or finely grated)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garam masala
1 teaspoon ground coriander
14 oz (400 g) crushed tomatoes
1 teaspoon red chili powder ((adjust to your taste preference))
1 1/4 teaspoons salt ((or to taste))
1 cup of heavy or thickened cream ((or evaporated milk to save calories))
1 tablespoon sugar
1/2 teaspoon kasoori methi ((or dried fenugreek leaves))

Steps:

  • In a bowl, combine chicken with all of the ingredients for the chicken marinade; let marinate for 30 minutes to an hour (or overnight if time allows).
  • Heat oil in a large skillet or pot over medium-high heat. When sizzling, add chicken pieces in batches of two or three, making sure not to crowd the pan. Fry until browned for only 3 minutes on each side. Set aside and keep warm. (You will finish cooking the chicken in the sauce.)
  • Heat butter or ghee in the same pan. Fry the onions until they start to sweat (about 6 minutes) while scraping up any browned bits stuck on the bottom of the pan.
  • Add garlic and ginger and sauté for 1 minute until fragrant, then add ground coriander, cumin and garam masala. Let cook for about 20 seconds until fragrant, while stirring occasionally.
  • Add crushed tomatoes, chili powder and salt. Let simmer for about 10-15 minutes, stirring occasionally until sauce thickens and becomes a deep brown red colour.
  • Remove from heat, scoop mixture into a blender and blend until smooth. You may need to add a couple tablespoons of water to help it blend (up to 1/4 cup). Work in batches depending on the size of your blender.
  • Pour the puréed sauce back into the pan. Stir the cream, sugar and crushed kasoori methi (or fenugreek leaves) through the sauce. Add the chicken with juices back into the pan and cook for an additional 8-10 minutes until chicken is cooked through and the sauce is thick and bubbling.
  • Garnish with chopped cilantro and serve with fresh, hot garlic butter rice and fresh homemade Naan bread!

I like to make it in the slow cooker; this allows the chicken to become melt-in-your-mouth tender and super flavorful. Serve it with steamed basmati rice and naan bread for dipping!

1 onion, diced
4 large garlic cloves, minced
2 tablespoons butter

This world famous recipe is often jokingly referred to as the national bird of Punjab, so popular is it in that region! This recipe is by Gordon Ramsey, and here is what he has to say about it: Gordon: "Butter chicken, or murgh makhani, was one of the first dishes I tasted when I went to India. Its origins can be traced back to Moghul times, but the dish and its history is most closely associated with Delhi's famous Moti Mahal restaurant, where I had the pleasure of eating this fantastic dish. Over time, numerous chefs have attempted to emulate the rich buttery sauce, and flavours vary slightly between restaurants. This is my version of the classic dish."

2 garlic cloves, peeled and finely crushed
2 cm ginger, peeled and finely grated

Steps:

  • Place the chicken in a bowl with the garlic, ginger, salt, chilli powder and lemon juice. Mix, cover with cling film and chill for 30 minutes. Mix together the yoghurt, garam masala, turmeric and cumin and add to the chicken, making sure that each piece is well coated with the mixture. Cover again and chill for 3-4 hours.
  • Preheat the oven to 180°C/Fan 160°C/Gas 4. Put the marinated chicken pieces on a grill rack set on a baking tray and bake for 8-10 minutes. Brush the chicken pieces with a little oil and turn them over. Bake for another 10-12 minutes until just cooked through.
  • For the sauce, heat the ghee or butter in a pan and add the garlic and ginger. Fry for a minute or so then add the cardamom, cloves, coriander, garam masala, turmeric, fenugreek and chilli powder. Stir well and fry for 1-2 minutes until they give off a lovely aroma.
  • Stir in the tomato puree and lemon juice and cook for another couple of minutes. Add the chicken pieces to the sauce and stir well to coat. Finally, add the butter and cream and stir continuously until the butter has melted and the sauce is smooth.
  • Taste and adjust the seasoning. Transfer to a warm bowl and serve hot, garnished with chopped coriander.

1.5 pounds chicken ((cut into bite size pieces))
1 cup Greek yogurt
1 tablespoon garam masala
2 teaspoons turmeric

Steps:

  • Combine chicken, greek yogurt, garam masala, turmeric, ground cumin and paprika in a bowl. Cover and marinate in the refrigerator for at least 1 hour or up to overnight.
  • Melt 2 tablespoons of the butter in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 2-3 minutes per side. Remove to a plate and tent with foil to keep warm.
  • Melt the remaining 3 tablespoons of butter in the same skillet. Add the onion and cook until softened and starting to brown, about 3-5 minutes.
  • Add the garlic, ginger, cumin, and garam masala. Continue to cook for 1-2 minutes, stirring frequently.
  • Stir in the tomato puree and paprika. Lower the heat and simmer until the puree darkens and thickens, about 10 minutes. If you are using a chili pepper, add it with this step.

This is India's most famous dish for very good reason, it is simply delicious. I hope you make it! Be sure to plan ahead as it takes some time marinating the chicken (preferably overnight) to get it right.

2 lbs. chicken (washed, patted dry and cut into small pieces - (use breast or thigh meat whichever you prefer or both))
1 teaspoon red chili powder
1 tablespoon lemon juice
salt
oil/butter/ghee to baste while grilling
For marinade:
3/4 cup plain yogurt (strained/hung or use 1/2 cup Greek yogurt)
1 ½ teaspoons kasuri methi/dried fenugreek leaves
1 teaspoon turmeric
1 teaspoon garam masala
1 ½ Tablespoon mustard oil (or any other cooking oil)
1 ½ Tablespoon ginger paste
½ tablespoon garlic paste
For the sauce/Makhani Masala:
2 ½ inches fresh ginger (made into a paste)
8-10 cloves of garlic (made into a paste)
2-4 fresh green chili pepper (slit)
4 tablespoon melted butter
4 green cardamoms
2 inch of cinnamon stick
2 cloves
1 black cardamom
1/2 -3/4 teaspoon methi/fenugreek seeds
3-3 ½ cups tomato puree (fresh tomatoes or 2 ½ cups canned tomatoes)
1 Tablespoon red chili powder/cayenne pepper/paprika or to taste
10 almonds (soaked, peeled and made into a paste)
1 teaspoon garam masala
1 Tablespoon kasuri methi/dried fenugreek leaves (very lightly toasted on a dry skillet and crushed)
1/2 tablespoon sugar or honey
1/2 cup + 2 Tablespoons heavy cream

Steps:

  • Apply red chili powder, lemon juice and salt to the chicken and set aside for 20 minutes. This is the first marinade.
  • Combine all ingredients of the second marinade (see ingredient list). Apply this marinade to the chicken and refrigerate for three to four hours; overnight is best.
  • Put the chicken on skewers and cook on a grill turning once. Cook until done. Do not overcook. Baste it with butter/ghee/oil or marinade if you want, a couple of times while cooking. Set aside once done.
  • Cooking the Sauce:
  • Note: This recipe makes more than you need for this recipe which is two cups of the sauce, it freezes well until you are ready to make this recipe again.
  • Heat butter/ghee or oil in a thick bottomed pan. Add green cardamoms, black cardamom, cloves and cinnamon. Sauté for a couple of minutes or till they start to sizzle and get fragrant; add the methi/fenugrek seeds. When the methi seeds sizzle, add ginger paste and garlic paste, and the slit green chillies. Cook in medium heat for five to eight minutes; the water from the paste would have evaporated and the ginger garlic paste reduced in quantity.
  • Add tomato puree or paste, red chili powder, and salt. Cook (may partially cover during cooking) at medium heat for about 15 - 20 minutes. The puree will reduce to a thick paste and the oil/ghee will separate from the sides of the pan.
  • After the tomatoes are cooked down, you might want to blend the cooked sauce (along with all the spices) into a smooth puree, if you want a restaurant like smooth texture for the sauce - especially if you are using fresh tomatoes. return it back to the pan after blending and continue with the rest of the process.
  • Add 2 ½ cups of hot water to the pan (or if you want it less soupy and want the sauce to coat the chicken pieces and have a little bit extra, add less water or simmer for longer time to achieve the consistency as per your taste), add the almond paste and bring to a boil. Reduce heat and simmer for about 15 minutes; add sugar and crushed kasuri methi.
  • Add cooked grilled chicken pieces. Stir well to combine - the chicken will be well coated with the sauce. Cover and simmer for eight to ten minutes; Lower the heat and add garam masala and the heavy cream. Stir in the cream and simmer at low heat for about five more minutes.
  • Garnish with fresh cilantro and add a splash of cream before serving.
  • Enjoy with some hot garlic naan!

Yay! In my never-ending quest for THE perfect butter chicken recipe, I've finally come up with something close enough to put the search on the back burner for a lonnng time. This is an Indian dish very popular at restaurants and is somewhat similar to chicken tikka masala, but richer. Don't let the butter content put you off. You only live once, might as well make your tongue happy! Serve over fragrant basmati rice laced with green peas and with pakoras, raita and palak paneer and you'll be in heaven! Adjust the heat level with the red chilli powder. Prep/cook times are approximate and do not include marination. My grateful appreciation to the chefs who pointed out my errors in typing up this recipe. They're fixed now. :)

1 teaspoon red chili powder (heat level of your choice)
1 small onion, minced into a paste
2 teaspoons ginger paste
2 teaspoons garlic paste

4 roma tomatoes, chopped
4 tablespoons butter
1 tablespoon fresh cream, whisked
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon red chili powder (heat level of your choice)
1 teaspoon black pepper
2 teaspoons finely chopped gingerroot
2 teaspoons green chilies
1 tablespoon cashews, to thicken (optional)
salt, to taste
2 tablespoons melted butter (garnish)
fresh cream (garnish)
finely chopped cilantro (coriander leaves, garnish)

Steps:

  • Perforate the chicken pieces with either fork tines or with little knife cuts. (The idea is to allow the marinade to penetrate the pieces somewhat and have more surface areas to cling to.) Mix well the ingredients for the marinade and rub into the chicken pieces. Let it marinate for a few hours in the refrigerator, overnight if possible for best results.
  • Heat half the butter on medium in a heavy-bottomed pan and put in the chicken along with the marinade. Cover and cook for about 25 minutes or till the chicken is fully cooked. After the liquids have evaporated, stir fry the chicken for some time in the residual fat.
  • Heat the remaining butter in a saucepan and add the red chilli powder, coriander, cumin and black pepper. (See TIP at bottom) Fry for a few seconds. (See Step 6 Tip.).
  • Add the chopped tomatoes, sugar and salt and cook uncovered on medium for about 7 minutes until the puree thickens and the fat separates. Stir in the whisked cream and reduce the heat to low.
  • Add the chicken, chopped ginger and green chillies to the simmering gravy. Sprinkle salt to taste if needed. Mix well. Cover and simmer on low heat for about 10 minutes or till the curry is thoroughly heated through.
  • Just before serving pour melted butter over the curry. Garnish with a swirl of fresh cream and finely chopped coriander leaves.
  • TIP: For a thicker and richer gravy cashewnut paste (soak cashews in water for an hour or so and grind them) can be added while making the gravy in step 3 -- fry it along with the spice powders and then proceed as above.

¾ tablespoon lemon juice
¼ teaspoon Salt
½ teaspoon Red chili powder (or paprika)
¾ teaspoon kasuri methi (Optional (dried fenugreek leaves))
⅛ teaspoon turmeric ((haldi))
½ to ¾ teaspoon garam masala
¾ tablespoon oil
1 tablespoon ginger garlic paste
½ cup greek yogurt (or hung curd (thick curd, refer notes))
2 tablespoon butter
1 teaspoon ginger garlic paste
1 cinnamon ((2 inch piece, dalchini))
2 green cardamoms ((elaichi))
2 cloves ((laung))
1 to 2 green chilies ((slit or sliced, optional))
4 large tomatoes (pureed (400 to 500 grams))
16 to 18 cashew nuts (or blanched soaked almonds (refer notes))
1 teaspoon red chili powder (or paprika (adjust to suit your taste and color))
½ to ¾ teaspoon garam masala
½ tablespoon kasuri methi (crushed or powdered dried fenugreek leaves)
¼ tablespoon sugar
salt as needed
80 to 100 ml chilled cream ((heavy cream or whipping cream, refer the notes))
2 tbsp Coriander leaves (for garnishing)

Steps:

  • First marinate chicken with lemon juice, chili powder and salt for 20 minutes.
  • Next marinate again with yogurt, kasuri methi, oil, turmeric, ginger garlic paste, and garam masala powder.
  • Cover & rest in the refrigerator for atleast 12 hours. You can keep it as long as 48 hours. The longer the chicken rests in the marinade, the more tender it will be after cooking.
  • Add the cashews to a blender jar along with tomatoes. Make a smooth puree.
  • If the puree is not smooth, then pass it through a filter. Set this aside.
  • Also make the ginger garlic paste.
  • Grill the chicken in an oven or stove top.
  • For stove top method, Add one tsp butter to a pan and add the marinade.
  • Fry on high flame till all the moisture evaporates.
  • To grill it in oven, preheat the oven to 240 C for at least 20 mins.
  • Grill it until the meat is cooked through & is tender. It may take about 20 to 30 mins depending on the size of your chicken chunks. Ensure chicken is tender at this stage.
  • Heat a pan with butter & saute cinnamon, cloves and cardamoms for a min.
  • Add ginger garlic paste, green chilies and fry till it turns fragrant.
  • Next pour the tomato cashew puree.
  • Add red chili powder, sugar and salt.
  • Mix and cook until the tomato puree becomes thick.
  • It also begins to leave the sides of the pan.
  • Pour 1 cup water. Add more or less water to suit your desired consistency.
  • Bring the mix to a boil and simmer for 3 to 5 minutes.
  • Add chicken and simmer for about 5 minutes.
  • Butter chicken should become soft and tender. Add garam masala and kasuri methi.
  • Stir and simmer for about 2 to 3 minutes. Pour chilled cream and switch off the stove.
  • Garnish butter chicken with coriander leaves and extra cream if desired. Serve with long grain rice or naan or paratha.

Butter chicken is a great, ever-evolving, cross-continental dish found in Delhi, London, New York, Perth and most points in between. In its purest form, it is yogurt-and-spice-marinated chicken dressed in a velvety red bath comprising butter, onions, ginger and tomatoes scented with garam masala, cumin and turmeric, with a cinnamon tang. This version was adapted from Amandeep Sharma, a young kitchen hand at the restaurant Attica, in Melbourne, Australia, who used to make it for staff meal. It is wildly luxurious. Serve with basmati rice and mango chutney, with papadums or naan if you can find them, with extra rice if you cannot.

1 1/2 cups full-fat Greek yogurt
2 tablespoons lemon juice
1 1/2 tablespoons ground turmeric
2 tablespoons garam masala
2 tablespoons ground cumin
3 pounds chicken thighs, on the bone
1/4 pound unsalted butter
4 teaspoons neutral oil, like vegetable or canola oil
2 medium-size yellow onions, peeled and diced
4 cloves garlic, peeled and minced
3 tablespoons fresh ginger, peeled and grated or finely diced
1 tablespoon cumin seeds
1 cinnamon stick
2 medium-size tomatoes, diced
2 red chiles, like Anaheim, or 1 jalapeño pepper, seeded and diced
Kosher salt to taste
2/3 cup chicken stock, low-sodium or homemade
1 1/2 cups cream
1 1/2 teaspoons tomato paste
3 tablespoons ground almonds, or finely chopped almonds
1/2 bunch cilantro leaves, stems removed.

Steps:

  • Whisk together the yogurt, lemon juice, turmeric, garam masala and cumin in a large bowl. Put the chicken in, and coat with the marinade. Cover, and refrigerate (for up to a day).
  • In a large pan over medium heat, melt the butter in the oil until it starts to foam. Add the onions, and cook, stirring frequently, until translucent. Add the garlic, ginger and cumin seeds, and cook until the onions start to brown.
  • Add the cinnamon stick, tomatoes, chiles and salt, and cook until the chiles are soft, about 10 minutes.
  • Add the chicken and marinade to the pan, and cook for 5 minutes, then add the chicken stock. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for approximately 30 minutes.
  • Stir in the cream and tomato paste, and simmer until the chicken is cooked through, approximately 10 to 15 minutes.
  • Add the almonds, cook for an additional 5 minutes and remove from the heat. Garnish with the cilantro leaves.
