BASIC SWEET TEA (GREEN TEA)

Basic Sweet Tea (Green Tea) image

This is a simple recipe, yes. However, I've had some British/Irish/Scottish friends in the past who've taught me what real tea tastes like, and I've found that I like this flavor to be present in both hot and cold forms of the beverage. Not to criticize, but many Americans don't understand the specifics of how to brew tea to its full potential and flavor. Some overbrew it, some underbrew it. I will be covering brewing both black and green teas for making sweet iced tea, in separate recipes.

Time 10m

Yield 64 Quarts, 8 serving(s)

Number Of Ingredients 4

4 (8 g) bags green tea leaves
40 ounces water
1 cup unbleached cane sugar
24 ounces ice cubes

Steps:

  • Put the ice aside in a container or pitcher that can withstand the hot tea without breaking and put it in the fridge while you're brewing.
  • Heat the 40 oz. of water in a pot, but not to a boil. It should be able to produce steam, but should not be boiling (boiling water overbrews green tea). Place the teabags in the hot water, and allow them to brew for 1 to 2 minutes while maintaining the current heat (hot but not boiling). Do not let the tea brew too long or it will end up too bitter.
  • Remove the tea bags from the pot, remove the pot from the heat and stir in the cup of cane sugar. It will dissolve almost instantly into the tea. Allow it to stand for a minute as your retrieve the container/pitcher.
  • Carefully pour the brewed tea into the container. It will melt most of the ice instantly, evening out the temperature so that the tea does not damage the container. Chill the tea further before serving.

20-MINUTE KASHMIRI CHAI (PINK TEA)

20-Minute Kashmiri Chai (Pink Tea) image

This easy, one-pot Kashmiri Chai recipe takes less than 20 minutes to make! This is not a traditional Noon Chai recipe, but an accessible version that's still delicious (and pink)! Make it with regular green tea leaves if you can't find Kashmiri tea leaves.

Provided by Izzah Cheema

Categories     Drinks

Time 20m

Number Of Ingredients 15

1 cup room temperature water
2-3 large ice cubes
1 cup water
2 tbsp Kashmiri chai leaves (or sub any non-bitter green tea leaves)
2 star anise (badiyan)
6-8 green cardamom pods
2 whole cloves (loung) (optional)
1 " cinnamon stick (optional)
1/8 tsp heaped baking soda
1 cup whole milk
½ cup half and half (See Note 1)
1/4 tsp kosher salt - may need less if using sea salt (or to taste)
2-2.5 tbsp sweetener of choice (I've tried cane sugar, brown sugar, and date syrup)
½-1 tbsp raw almonds (crushed using mortar and pestle)
½ tbsp unsalted pistachios (crushed using mortar and pestle)

Steps:

  • Prepare ice water: Combine room temperature water with 2-3 large ice cubes and set aside.
  • Heat a medium saucepan over high heat. Add water, Kashmiri chai leaves, star anise, green cardamom pods, cloves and cinnamon (if using) and bring to a boil.
  • Once it comes to a boil, add the baking soda. It'll fizz a little. Allow this mixture to boil over high heat for 5-6 minutes. Occasionally, use a ladle to aerate (scoop and pour back) the tea. You'll notice the froth in the water go from pale green to a deep pink color. If not, add another 1/8 tsp of baking soda. (See Note 2) The water will be greatly reduced, almost evaporated.
  • Add the prepared ice water (discard any ice cubes). If you'd like, you can aerate several times to deepen the color. Add the milk, half & half, salt, and sweetener. Allow it to a come to a light boil, then immediately turn off the heat. Do not allow it to boil for too long as it'll start to lose some of its pink color. Taste and adjust salt and sweetener.
  • Strain the tea into cups and add crushed almonds and pistachios, as desired.

PINK LEMONADE ICED TEA

Pink Lemonade Iced Tea image

This cool summer drink has the flavor of old time ice tea. I received this recipe from a aunt many years ago and I still prefer this over the powdered or bottled kind? I always wondered what it would taste like if I added frozen raspberry juice instead of the lemonade. Maybe this will be the summer that I try it!

ICED HONEY GREEN TEA

Iced Honey Green Tea image

Iced green tea is great in the summer -- it's cool, it's got that slight bitter edge, and it's full of healthy antioxidants. You can keep this in a pitcher in the refrigerator and drink it whenever you need something to help you cool down. I make it with decaffeinated green tea so I don't get all wired. I have also made it using "green tea with mint" and that was excellent chilled. This proportion assumes you are going to pour it over ice; you could probably water it down a bit if you are going to drink it without ice. I never sweeten my green tea, so I can't tell you how much honey or sweetener to use, but that's a matter of personal taste anyway. I got this idea from a box of Celestial Seasonings brand green tea.
