Steps:
- Preheat oven to 350 degrees F & butter a 2-quart baking dish.
- Slice potatoes into the prepared baking dish, layering them AND sprinkling each layer with flour & suger.
- Whisk together the salt, warm milk & margarine & pour it over the top.
- Bake for 40 minutes or until golden brown, then serve.

P.E.I. POTATO PUDDING
Prince Edward Island, Canada's tiniest province, is famous for its potatoes. This is an old fashioned dish; the recipe is from a Mme. Benoit cookbook, and she gives credit to "Dolly", her hostess in Summerside, PEI.

Steps:
- Preheat oven to 350F; generously butter a medium-sized casserole dish and set aside.
- In a mixing bowl, combine potatoes, onions, carrots, salt, pepper and savory; stir in the cream.
- Place in prepared casserole dish and dot top with butter.
- Bake, covered, for 45 minutes; uncover and bake for an additional 15 minutes or until a golden crust has formed.
JAMAICAN SWEET POTATO PUDDING
Taken from the Enid Donaldson cookbook. Hell a top, Hell a bottom Hallelujah in the middle! This is a Jamaican riddle and most people know that the answer is a delicious sweet potato pudding, baked in an iron dutch pot or dutch oven with live coals in the bottom of the coal stove and also on the top of the dutch pot. The pudding cooks at the top and at the bottom at the same time. The delicious hallelujah is best liked when the top, called a 'sof pon top', is softer than the rest of the pudding.

- 1. Preheat oven to 350°F
- 2. Mix grated potato, yam, flour, raisins and baking powder.
- 3. Mix evaporated milk, coconut milk, sugar, vanilla, nutmeg, salt, sherry, rum and butter.
- 4. Pour milk mixture into potato mixture and beat until smooth.
- 5. Pour into a greased 9-inch pan.
- 6. Rest mixture about half hour.
- 7. Bake at 350°F about 1 to 1 1/2 hours until centre is set.
PERSIMMON-SWEET POTATO PUDDING
I never liked Persimmon pudding until I ate my mil. I used wild persimmons for years but the Japanese ones are larger and easier. Just be sure to use paper towels for cleanup as the persimmons will turn everything black.

- Makes 2 6 1/2 by 10 or one large pan.
- To make persimmon pulp persimmons must be washed and mashed through a sieve, usually takes 3 or 4 Japanese persimmons depending on size and a large amount of wild ones.
KARJALAN PIES
These savory pastries were my favorite thing to eat in Finland. Rice porridge surrounded by a rye flour crust, baked until slightly browned. In Finland, they're often eaten at breakfast or lunch. Delicious topped with ham, cheese, or just (real!) butter.

- Combine rice and water in a saucepan over medium heat. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until water is absorbed. Stir in milk, cover, and cook until milk is absorbed by the rice, about 20 minutes. Season with salt to taste.
- Preheat the oven to 450 degrees F (220 degrees C). In a medium bowl, stir together the salt and rye flour. Stir in water. Mix in all-purpose flour 1 tablespoon at a time until dough is just past the sticky stage. Divide the dough into 16 equal portions.
- On a lightly floured surface, roll each piece of dough out into a thin circle 6 inches in diameter. The dough should be as thin as possible. Place about 3 tablespoons of the rice mixture in the center of each circle. Spread the mixture out to within 1 inch of the edges. Fold the edges of the dough upward, and crimp the edges so as to allow the pastries to hold their shape. Pinch the sides at each end to form a little boat. Place pastries about 3 inches apart on an ungreased baking sheet, and brush the tops with butter.
- Bake for 10 to 15 minutes in the preheated oven, until the dough is firm, and the rice porridge is slightly browned on the top. Serve warm.

SWEETENED POTATO CASSEROLE (IMELLETTY PERUNALAATIKKO)
The traditional way of making one of the Finnish Christmas staples. Flour is added to warm, mashed potatoes and the mixture left to stand in a warm place for several hours. The amylase in the flour begins to break down the potato starch into sugars, sweetening the dish. Now, try as I might, I can never get it to work well enough and have to resort to the modern way of adding treacle!! So, I'm listing it as an optional ingredient!

- Brush potatoes clean and place in a pot. Add enough water to just cover the potatoes and cook until done.
- Pour off water and wait for the moisture to evaporate. Once they feel dry, peel and mash hot potatoes. Add flour, mix, and let the mixture stand in a warm place (around 50 C - not a lot warmer than that or the process will be stopped) for 3-4 hours or overnight.
- Preheat oven to 150°C.
- Melt butter. Heat milk. Add melted butter and warm milk into the potato mixture, along with salt and nutmeg. Mix well.
- Taste the casserole and if it's not as sweet as you would like, add treacle to taste and mix.
- Pour into greased oven dishes. Only fill the dishes half full as the casserole will bubble and rise a lot in the oven.
- Drizzle some treacle on top of each casserole. Bake in the preheated oven for 2-3 hours.
