Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a 12-cup tube pan; set aside.
  • In large bowl, beat butter, shortening, and sugar at medium speed with an electric mixer until very creamy.
  • Add eggs, one at a time, beating well after each addition.
  • In another bowl, sift together flour, cocoa, baking powder, and salt.
  • Add flour mixture to butter mixture, alternately with milk, beginning and ending with flour mixture.
  • Pour batter into prepared pan.
  • Bake for 1 hour 10 minutes, or until a wooden pick inserted in the center of cake comes out clean.
  • Note: You may have to bake your cake longer than the stated time, depending on your oven.
  • Let cool in pan for 15 minutes.
  • Invert onto a cooling rack and let cool completely.
  • Place cake on a cake plate, ready to frost, before making fudge icing.
  • Frost with fudge icing as soon as it reaches the proper spreading consistency.
  • For the icing, in saucepan, combine sugar, milk, butter, cocoa and salt.
  • Bring to a boil over medium heat.
  • Let boil for 2 minutes.
  • Remove from heat and add vanilla.
  • Beat at high speed with an electric mixer for 6-8 minutes, or until frosting becomes creamy and reaches a spreadable consistency.
  • If making icing on a rainy day, it may take longer to reach a spreadable consistency.
  • If you overbeat icing, or it begins to harden, add a little hot water, 1 teaspoon at a time, until icing is spreadable again.

I got this recipe from our local band foundation cookbook. One of my coworkers told me she had it before and how good it was. I made this and took it to a family get together and everyone wanted the recipe.

1 (18.25 oz) german chocolate cake mix
1 (15 oz) can coconut pecan icing
4 eggs
1/2 cup oil
1 cup water

Steps:

  • 1. Preheat oven to 350*. Grease and flour a 12 cup tube pan or bundt pan. Mix all ingredients (including the icing) in mixer at medium speed for 2 minutes. Pour into prepared pan and bake 55-60 minutes. Remove from oven to wire rack and allow to cool 10 minutes. Invert onto serving plate and dust with powdered sugar.
  • 2. This makes a large cake so be sure to use the large 12 cup pan. Very moist and delicious.

2 cups all-purpose flour (sifted)
1 cup sugar
4 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup mayonnaise
1 cup hot water

Steps:

  • Heat your water. I usually put my tea kettle on while I'm getting the other ingredients ready in the bowl and it's nice and hot by the time I need it.
  • In a large bowl, sift flour, sugar, and cocoa powder adding them one on top of the other.
  • Add in baking soda, salt, vanilla extract, and mayonnaise.
  • Pour hot water over ingredients.
  • Stir until all the batter is mixed together and you don't have any flour streaks. Flour may get a little bit lumpy, don't worry about it.
  • Pour batter into greased 9x9 pan. Or you can use a 9 inch round or a 8 inch round as long as they are at least 2 inches tall.
  • Bake at 350 degrees for 35 minutes or until you insert a toothpick and it comes out with just crumbs. Chocolate cakes are tricky to try and tell when they are done because you can't see how brown they are getting so it's easy to over bake them. I usually start checking mine at 30 minutes.
  • Cool on a cooling rack for 15 minutes and then turn out of the pan. Allow to cool for at least 1-2 hours before frosting. I like to refrigerate my cakes overnight before frosting because I think frosting a cold cake makes life a whole lot easier.

Steps:

  • In a large mixing bowl, add eggs butter, buttermilk and mix until fluffy.
  • Add chocolate cake mix, cocoa powder and mix until just combined. There might be a few lumps and that's perfectly fine. Don't over-mix!
  • Pour this batter into two greased and floured round cake pans (Dimensions: 8x2), lined with parchment paper.

1/2 cup water
2 cups cake flour

1/2 pound unsalted butter, room temperature
1 teaspoon pure vanilla extract
1 1/2 cups granulated sugar
1/2 cup brown sugar
4 eggs, separated
1 cup buttermilk
Coconut Pecan Filling, recipe follows, or whatever you prefer
Favorite chocolate frosting, for the sides
1 1/2 cups evaporated milk
5 egg yolks, slightly beaten
1 cup granulated sugar
1 cup brown sugar
2 teaspoons vanilla extract
1 cup butter
2 1/2 cups flaked coconut
2 cups toasted pecans

Steps:

  • In a microwave safe bowl, add the chocolate and water and heat in a microwave or over a double boiler until melted. Stir until smooth and set aside. In a separate bowl, sift together the cake flour, baking soda and salt. Set aside.
  • Preheat the oven to 350 degrees F.
  • In the bowl of a stand mixer, cream together the butter, vanilla extract, granulated sugar and brown sugar until light and fluffy. Scrape down the sides of the bowl. Add egg yolks 1 at a time, beating well after each addition. Blend in the melted chocolate. Add the flour mixture and buttermilk, alternating, until just combined.
  • Add the egg whites to a small bowl and beat with an egg beater until stiff peaks form. Gently fold the whites into the batter until well incorporated.
  • Pour the batter evenly into two 9-inch cake pans or two 12-capacity cupcake tins. Bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes for the larger cakes and 15 to 20 for the cupcakes. Remove from the oven to a cooling rack and allow to cool completely before filling and frosting.
  • To Assemble the German Chocolate Cake:
  • Put a cake layer on top of a serving plate and top with a generous layer of the caramel/pecan filling. Cover the frosting with another cake layer of and spread with the frosting. Top with the final layer and frost.
  • Spread dark chocolate frosting (secret recipe), or your favorite chocolate frosting around the outside of the entire cake. Cut into wedges and serve.
  • Combine the evaporated milk, slightly beaten egg yolks, granulated sugar, brown sugar, vanilla and butter in a large saucepan or heavy pot over low heat. When the butter melts raise the heat to medium, stirring constantly. The mixture will thicken after 10 to 12 minutes. Remove from the heat. Add the coconut and pecans and cool before frosting the cakes.

2 cups all-purpose flour
1 3/4 cups sugar
2/3 cup cocoa
1 1/2 teaspoons baking soda

2 large eggs
1 cup buttermilk
1/2 cup vegetable oil or canola oil
2 teaspoons vanilla extract
1 cup boiling water
1 teaspoon espresso powder
For the Coconut Pecan Filling:
1 1/2 cups evaporated milk
4 large egg yolks
1 1/2 cups packed brown sugar
3/4 cup unsalted butter, cut into pieces
2 2/3 cups flaked coconut
1 1/2 cups chopped pecans
2 teaspoons vanilla extract
Dash salt
For the Optional Ganache:
1 cup heavy cream
2 cups semisweet chocolate chips
2 teaspoons vanilla extract

Steps:

  • Gather the coconut-pecan filling and frosting ingredients.
  • Combine the evaporated milk and egg yolks in a large saucepan (off heat) and whisk until well blended. Add the brown sugar and whisk to blend.
  • Add the pieces of butter. Place the pan over medium heat. Cook, stirring constantly until the butter melts and the mixture thickens, about 12 to 15 minutes,
  • Remove the pan from the heat and add the coconut, pecans, vanilla extract, and salt. Stir to blend and set aside to cool for about 1 hour. The filling will thicken as it cools. Meanwhile, make the cake. Make the Cake
  • Gather the ingredients for the cake.
  • Position a rack in the center of the oven and heat to 350 F. Spray three 8-inch round cake pans and line with parchment paper .
  • Sift the flour, sugar, cocoa powder, baking soda, baking powder, and salt into a large mixing bowl .
  • In a separate medium bowl, whisk the eggs with the buttermilk, vegetable oil, and vanilla extract.
  • Add the egg-buttermilk mixture to the flour-cocoa powder mixture, stirring until blended.
  • Add the boiling water (and espresso powder if using) and mix until smooth. The batter will be pretty thin.
  • Divide the batter evenly among the 3 cake pans. You will have about 16 ounces of batter in each pan.
  • Bake the cake layers for 25 to 28 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pans for 20 minutes.
  • Remove from the pans and place on racks to cool completely. Assemble the Layers
  • Place a cake layer on a cake plate or stand and top with about 3/4 to 1 cup of filling. Add another cake layer and top with more filling.
  • Finish with the third layer and top with the remaining filling. Leave a little space around the edge if you plan to decorate with piped ganache. Finish With the Optional Ganache
  • Gather the ganache ingredients.
  • Place the chocolate chips in a heat-safe bowl; set aside.
  • Heat the cream in a saucepan over medium heat. It should be hot and steaming, not boiling or bubbling.
  • Pour the hot cream over the chocolate chips and let stand for 10 minutes without stirring.
  • Whisk the cream and melted chocolate chips with the vanilla extract until smooth. If you see any unmelted chocolate lumps, place the bowl over a pan of simmering water and stir until the ganache is smooth.
  • Let the ganache cool for about 1 hour, whisking every 10 minutes. The ganache should be thick enough to hold peaks. Beat the ganache with an electric mixer for about 5 minutes, until it is light and fluffy.
  • Frost the side of the cake with the whipped ganache. If desired, pipe the remaining ganache around the edge of the cake.
