Hibiscus, lemongrass and Basil Honey Sweet Iced Tea. image

I love this pretty ruby-red color. Color like this in food...naturally, just makes me ecstatic.

Number Of Ingredients 6

5 cups water
1 lemongrass stalk (thinly sliced, plus more stalks for serving*)
1/4 cup honey (or more to taste (may sub coconut sugar or maple syrup for vegan version))
1/2 cup dried hibiscus flowers
3/4 cup loosely packed fresh basil leaves (plus more for serving)
1/4 cup fresh squeezed lime juice (plus lime slices for serving)

Steps:

  • Bring the water to a boil in a medium size pot. Remove from the heat and add the lemongrass, honey, hibiscus flowers and basil leaves. Cover and let steep for 20 minutes. Strain into a pitcher and discard the used lemongrass, hibiscus flowers and basil.
  • Stir in the lime juice and taste, if needed add more honey. Chill until cold. Serve over ice with a fresh lemongrass stalk, basil and lime. Enjoy!

1 cup (4 ounces) raspberries, rinsed
Water for ice cube trays, plus 8 cups water, divided
1/3 cup honey
1/2 cup (2 ounces) coarsely chopped fresh ginger
6 white tea bags
3 lemons, juiced (about 1/2 cup)
Lemon slices
Mint sprigs, for garnish

Steps:

  • Place about 4 raspberries in each compartment of an ice cube tray, 6 hours before serving iced tea. Fill with water and freeze.
  • Place honey, 2 cups water and ginger in a saucepan and bring to a boil. Reduce heat and simmer over low heat for 5 minutes. Remove from heat and add tea bags. Let mixture steep for at least 30 minutes and up to 1 hour, then strain out solids.
  • In a pitcher combine strained liquid with 6 cups water and lemon juice. Chill in refrigerator.
  • To serve, place 3 ice cubes in a tall glass and pour iced tea over cubes. Garnish with lemon slices and mint sprigs.

Steps:

  • Boil a kettle of water, then leave for around 1 min to cool to around 90C. Put the flowers in a jug, pour 500ml of the water over the flowers, then leave to steep for 16 mins. This is the optimum time and temperature for extracting the beneficial antioxidants.
  • Strain into glasses over ice and sweeten with a litte honey, if you like.
