140g butter, chilled and diced
250g plain flour
zest 1 lemon
100g golden caster sugar
1 egg, beaten
1 tbsp whole milk
250ml double cream
250ml milk
1 vanilla pod, split
1 strip lemon zest
whole nutmeg
8 egg yolks
100g golden caster sugar

Steps:

  • To make the pastry, rub the butter into the flour with the lemon zest and a pinch of salt until it resembles breadcrumbs. Add the sugar, egg and milk and bring together to form a dough. This can be made 2 days in advance.
  • On a lightly floured surface, roll the pastry out and use it to line a 20cm tart tin, leave 2cm of pastry hanging over the edge. Chill for 30 mins.
  • Heat oven to 180C/160C fan/gas 4. Line the case with baking beans, bake blind for 20 mins, then remove the beans and continue to cook for a further 20 mins until the base is biscuity. Remove from oven and reduce the temperature to 140C/120C fan/gas 1.
  • Bring the cream, milk, vanilla pod, lemon zest and a small grating of nutmeg to the boil. Beat the egg yolks with the sugar until pale, then pour the hot milk and cream over, beating as you go. Strain custard into a jug, allow to settle for a few mins, then skim off any froth.
  • Carefully pour the custard into the tart case, grate some more nutmeg over the top and bake for 40 mins or until just set with the very slightest wobble in the middle. Remove from the oven, trim the pastry edges off (away from the filling), then leave to cool completely before serving in slices with a grating more of nutmeg, if you like.

125g cold butter, cut into cubes
200g plain flour, plus extra for dusting
50g icing sugar
1 egg yolk
600ml double cream
¼ tsp vanilla extract
8 egg yolks
100g caster sugar
grating of nutmeg (at least half a nutmeg)

Steps:

  • First, make the pastry. Melt the butter in a saucepan until foaming, then sizzle until it turns nut-brown. Pour off the fat into a bowl, leaving the sediment in the pan to be discarded. Leave the fat to cool, then chill until it hardens again. Combine the flour, icing sugar and a pinch of salt in a medium bowl. When the fat has hardened, cut it into chunks and rub it into the flour mixture until crumbly. Stir in the egg yolk and 1 tsp cold water, and bring it together into a dough. Flatten into a disc, then cover and chill for at least 30 mins. Can be made up to two days ahead. (The pastry can also be made with regular butter.)
  • Roll the chilled pastry out on a lightly floured surface to a roughly 5mm thickness, then lift into a 20cm tart tin. Press the pastry into the base and up the side using a small piece of excess floured pastry. Leave some overhanging the rim. Chill for at least 30 mins, or freeze for 10 mins. Reserve any excess pastry.
  • Heat the oven to 180C/160C fan/gas 4. Line the pastry case with baking parchment and fill with baking beans or uncooked rice. Put on a baking tray and bake for 15 mins. Remove the parchment and beans and bake for 15-20 mins more until biscuity.
  • Meanwhile, make the filling. Tip the cream and vanilla into a saucepan and bring to the boil. Stir (don't whisk) the egg yolks and sugar together in a heatproof bowl. Slowly drizzle the hot cream over the egg yolk mixture, stirring continuously (not whisking) until everything is incorporated. Sieve the custard through a fine mesh sieve into a jug, then spoon off any froth.
  • Remove the baked tart case from the oven, and reduce the temperature to 140C/120C fan/gas 1. Trim the excess pastry from the case, and mend any cracks with the reserved raw pastry. With the tart case on the baking tray, slide it halfway back into the oven, then carefully pour in the filling to the top of the case. Finely grate over at least half a nutmeg. Gently slide the tray fully into the oven and bake for 40 mins, or until just set with a very slight wobble. Leave to cool completely in the tin, then remove from the case and cut into slices.

CLASSIC CUSTARD ICE CREAM BASE

Rich, creamy and deeply satisfying, there is nothing better than a classic custard ice cream. Sometimes called French-style, this base incorporates eggs, which improve the texture and help prevent ice crystals from forming. This recipe for ice cream base may be churned on its own, but it is meant to have flavors added. See the chart here for flavor options and directions for incorporating them into the base recipe.

Number Of Ingredients 6

2 cups heavy cream
1 cup whole milk
⅔ cup sugar
⅛ teaspoon fine sea salt
6 large egg yolks
Your choice of flavoring (see chart)

Steps:

  • In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Stirring constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers' instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

I found this on a leaflet from a large supermarket chain in Melbourne and it looked wonderful. It is the perfect dessert for a summer dinner party as it looks fabulous and can be made ahead and the ice-cream added at the very end. You can even make this in individual tart cases if you are so inclined or with different flavoured ice-creams and toppings. Edited: I have tweaked this recipe a bit after making it and discovering some problems with the recipe instructions as they were given.

250 g shortbread cookies (Scotch Finger biscuits are nice)
1/2 cup pecans or 1/2 cup walnuts
125 g unsalted butter (melted, can use less)
1 1/4 cups milk (can use skim)
2 tablespoons custard powder
1 tablespoon caster sugar
8 -10 scoops vanilla ice cream
1/4 cup chocolate syrup

Steps:

  • Process biscuits and half the pecans in food processor to form fine crumbs.
  • Stir in butter and press into a deep 20cm fluted pan with removable base. Refrigerate.
  • Add 1/4 cup milk to the combined custard powder and caster sugar to form a smooth paste.
  • Stir in the remaining milk and microwave on HIGH (100% 750W) for 3 minutes.
  • Whisk well and return to microwave for a further 1 1/2 minutes. Allow to cool until warm, placing a piece of plastic wrap on the top to prevent a skin forming.
  • Alternately, stir mixture in a saucepan until it thickens to the desired consistency. I personally had trouble using the microwave to get the custard thick enough so experiment with your microwave until you get the desired results. The custard should be quite thick.
  • Pour into pie shell and refrigerate for 20 minutes.
  • Remove pie carefully from pan and place on serving plate.
  • Scoop ice-cream onto custard layer and drizzle with ice-cream topping.
  • Sprinkle with remaining chopped pecans or walnuts.
  • Serve immediately but be careful serving the tart as it can fall apart if you haven't made the biscuit base even enough.
  • Note: You do need a very soft biscuit for the base, shortbread is rich but slices more easily so don't substitute other biscuits. Also if you don't like nuts, just leave then out entirely, my kids don't like walnuts and picked out the ice cream with the 'yukky' bits.

1 package puff-pastry (you will have some left over)
Beaten egg, to brush over pastry
Confectioners' sugar
Nutmeg
Cinnamon
3 eggs
3 ounces sugar
1 orange, zested
1 vanilla pod
1/2 pint double cream
Sugar and water for the caramel
3 tablespoons. caster sugar
1 tablespoon water

Steps:

  • The Case: Roll out the pastry into a rectangle and brush with beaten egg. Sprinkle on some icing sugar, nutmeg, and cinnamon. Tightly roll the pastry, along the longest side, into a sausage roll and slice into discs (about 1-inch thick). With the palm of your hand press down into each disc, then roll out each one into a circle.
  • Grease the bottom and sides of 6 oven-proof glasses with butter, then dip each into a bag of flour so that the flour sticks to the butter and shake off any excess. Put the center of the pastry circles on top of the floured oven-proof glass, and gently press the sides of the pastry onto the side of the glass (it should look a bit pleated). Place the glasses (rim side down) on a tray in a preheated 350 degree F.oven). When they are cooked, take them out of the oven and press the bottom of each pastry case, this will ensure that they have a flat bottom.
  • The Custard: Break the eggs into a mixing bowl with the sugar and orange zest and whisk thoroughly. Scrape out the seeds inside of a vanilla pod and stir this into the egg mixture. Pour the cream into a saucepan and remove from the heat just before it boils. Pour the hot cream into the bowl of eggs, stirring all the time. Then transfer this mixture back to the saucepan, on medium heat and stir continuously until it has thickened.
  • Pour the custard into the pastry cases and let sit to cool.
  • Heat the sugar and water on a high heat until you have a golden caramel. As soon as this is ready, pour a thin layer on top of the custard.;

4 cups whole milk

  • In a large heavy saucepan, combine sugar, flour and salt. Gradually add milk until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir cream and vanilla into custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture.

  • Melt 2 tablespoons of butter in a small bowl in the microwave or in a small pan on the stove top. Use a pastry brush or paper towel to coat the inside of a 8 or 9-inch cake pan with the melted butter. Cut a piece of parchment paper to fit the inside of the bottom of the pan, place it in the pan, and brush the top of the paper with melted butter. Sprinkle a couple tablespoons of sugar inside the pan and shake it around to coat the bottom and sides of the pan completely.
  • Add 3/4 cup sugar, eggs and egg yolks, cornstarch and salt to a large heavy bottomed saucepan. Whisk to combine. Slowly add the milk and cream, whisking constantly to combine.
  • Cook over medium-low heat, whisking constantly, just until the custard begins to thicken and you can see the marks of the whisk in the custard as you stir. If you have one, a thermometer can be helpful - cook the custard to 160 degrees.
  • Remove the pan from the heat and press the custard through a fine mesh sieve set over a large bowl. Stir in the vanilla and almond extracts.
