Potatoes cooked with bell peppers and tomatoes in a delicious sauce

2 lb Potatoes, waxy, shape holding
1/4 lb Bacon, chopped
3 tbsp Hungarian sweet paprika
2 bellpeppers, sliced in strips
2 tomatoes, cut in pieces
1 small onion
1 kielbasa sausage or any other flavorful sausage
5 garlic cloves
1 tbsp carraway seeds
salt

Steps:

  • Fry the chopped bacon, don't discard the pork fat and then add the chopped onion and saute until translucent
  • Take the onion from the heatsource and add all 3 tablespoons of paprika powder, stir and add 1/4 cup of water, make a slurry and bring to a boil
  • Now add all other ingredients: the potatoes, bell pepper, tomatoes and sausage
  • Chop the garlic cloves very finely and mix with the carraway seeds and with a knife smush together and add to the paprika potatoes
  • Finally fill the pot with the paprika potatoes all the way with water until half way covered and let come to a boil. Cover and let simmer on low heat until potatoes are cooked.

2 tablespoons butter
2 tablespoons olive oil
1 large onion, diced
1 1/2 tablespoons Hungarian paprika
6 large potatoes, diced 3/4 inch (waxy type)
1 small green pepper, diced
1 large tomatoes, peeled and diced
salt and pepper, to taste
water

Steps:

  • In a large saucepan, melt butter and olive oil.
  • Sauté the onions for 5 minutes.
  • Put all of the rest of the ingredients into the pot, just barely covering the potatoes with water.
  • Bring to a boil, then reduce to a simmer.
  • Avoid stirring as much as you can to keep the potatoes from breaking apart.
  • Cook for 30 minutes or until tender.

Hungarian potato paprika is one of the most popular peasant dishes of the country, cheap, quick and delicious. You will often find in the rural areas and family cooking but rarely in restaurants. It can be a nice vegetarian dish, however, I almost always add some smoked paprika sausage.

1 kg of potatoes (cut into medium sized cubes)
2 medium Spanish onions (diced)
1 medium fresh tomato (chopped)
1 sweet yellow pepper (wax pepper, banana pepper or 1/2 red or yelloe bell pepper) (cut into small pieces)
1 clove of garlic (minced)
2 tbsp of sweet Hungarian paprika
1/2 coffeespoon of ground caraway seeds
Salt
Ground black pepper
3 tbsp of vegetable oil or 1heaping tbsp of pork lard
Pickles to serve
3.5 ounces of smoked paprika sausage (chorizo style) (cut into ¼ inch slices)

Steps:

  • In a pot, sauté the onions in vegetable oil or pork lard over low heat, stirring frequently, until translucent. Do not let them burn. Salt lightly to help tenderize them.
  • Remove the pot from the heat, add the sweet Hungarian paprika, stir. Do not burn the paprika, or it will become bitter.
  • Add the chopped tomatoes and peppers, the minced garlic. Add 1 cup of water and cook it for about 10 minutes. Then add the sausage slices, the peeled and cubed potatoes, the ground caraway seed and pour in just enough water to cover, salt to taste, sprinkle with ground black pepper.
  • Cover, bring it to a boil and slowly simmer until the potatoes are tender.
  • Serve warm with pickles.

  • Saute finely chopped onion in butter.
  • Add paprika when onions are lightly browned; then add potatoes and salt.
  • Cover and keep stewing, adding enough water to keep potatoes from sticking. Turn now and again with pancake turner.
  • Simmer until potatoes are soft.
  • Before serving add a little sour cream, if desired.

Steps:

  • Boil peeled potatoes until fork inserted tells you it's cooked.
  • Boil eggs until hardboiled.
  • Slice potatoes to form medallions.
  • Slice eggs.
  • In casserole dish, layer butter, sour cream, potatoes and eggs until used up.
  • Sour cream should be top layer.
  • Cover, put in 350 degree oven for about 1 hour or until brown.
  • Add salt to taste and enjoy.
  • Best if eaten fresh.

1 tablespoon unsalted butter
1 tablespoon olive oil
3 shallots, sliced
2 teaspoons sweet Hungarian paprika
2 large tomatoes, skinned and chopped
salt
2 lbs potatoes, thickly sliced
1 1/4 cups vegetable stock
1 cup sour cream

Steps:

  • Melt the butter with the olive oil in a Dutch oven, and saute the shallots until soft. Stir in the paprika and cook for a few minutes.
  • Add the tomatoes, salt to taste, and potatoes. Add the stock and sour cream.
  • Cover and cook in preheated 400 degree F oven for about 1 hour, until the liquid is nearly absorbed.

2 lbs russet potatoes, peeled and cut into 3 inch cubes
4 cups low sodium chicken broth or 4 cups vegetable broth
1 tablespoon smoky paprika
1 teaspoon hot paprika
1 teaspoon celery seed
1/2 teaspoon salt
1 tablespoon olive oil
1 white onion, finely chopped
2 tablespoons finely chopped fresh dill
1/8 teaspoon ground nutmeg
1 cup nonfat milk

Steps:

  • Place potatoes, broth, paprikas, celery seeds, and salt in 4-quart or larger slow cooker. Stir to combine.
  • Heat oil in medium skillet over medium-high heat. Add onion and saute until translucent, about 5 minutes. Transfer to cooker.
  • Cover. Cook on low 4 to 6 hours, or until potatoes are tender. Stir to break up potatoes into broth for a slightly chunky consistency.
  • Add dill, nutmeg, and freshly ground black pepper to taste. Stir in milk. Cover. Cook 20 to 30 more minutes, or until heated through.
