AUTHENTIC HUNGARIAN GOULASH (GULYáS)
A thoroughly authentic Hungarian Goulash with a richness of flavor that will satisfy both body and soul!

Steps:
- Melt the pork lard or butter/oil in a Dutch oven or other heavy soup pot over medium high heat and cook the onions until beginning to brown, about 7-10 minutes. Add the beef and cook until the beef is just starting to brown, 7-10 minutes. Add the bell peppers, tomatoes, and garlic and cook for another 6-8 minutes. Remove the pot from the heat and stir in the paprika, salt, pepper and caraway (if using) (note: paprika becomes bitter if at all scorched). Add the beef broth, bay leaf, return to the stove and bring to a boil. Reduce the heat to medium, cover and simmer for 40 minutes. Add the carrots and potatoes. Return to a boil, reduce the heat to medium, cover, and simmer for another 30-40 minutes or until the beef is nice and tender. Add salt to taste. Remove the bay leaf.

HUNGARIAN GOULASH I
A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

- Heat oil in a large pot or Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.
- In a medium bowl, combine paprika, 2 teaspoons salt and pepper. Coat beef cubes in spice mixture, and cook in onion pot until brown on all sides. Return the onions to the pot, and pour in tomato paste, water, garlic and the remaining 1 teaspoon salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

HUNGARIAN GULYAS (GOULASH)
Ask most Hungarians about Gulyas and they will tell you: no tomatoes, no flour, no sour cream, lots of garlic! This is a full-flavored goulash - you will never miss the stuff you don't put in!

Steps:
- Mix both paprika's in a bowl.
- Coat the beef with the paprika and set aside.
- Coat the onion in the paprika.
- Put the beef, onion, garlic and olive oil in a large roasting pan, cover and toss to coat.
- Roast in pan, tossing occasionally, until beef is browned and onions are tender.
- Transfer meat and onion mixture into a dutch oven, add diced potatoes, and beef stock.
- On stove top bring everything to a boil, then lower to a simmer.
- Check it occasionally, if fat appears skim it off, otherwise stir gently.
- It is done when the meat is fully cooked, and the edges of the potatoes have rounded - do not overcook.
- When done, cook noodles and toss in melted butter, place on dishes and top with the gulyas.
GOULASH SOUP - PORK OR LAMB (JúHUS VAGY DISZNO GULYAS)
Gulyás is a very traditional Hungarian dish and is one of the five most popular meat dishes on the North American cooking scene. Shepherds cubed the meat and cooked it with onions in a bogrács - a heavy iron kettle and slowly stewed the dish until liquid was gone. With lots of liquid, it became Gulyásleves - soup, but if less liquid was used; it was just Gulyás, a meaty stew. It is very delicious both ways with plenty of white crusty bread and good red wine.

Steps:
- Cut meat into 2" cubes. Sauté onion and garlic in fat and add pork or lamb. Sauté for a few more minutes, then add paprika. Cover with water and simmer until meat is nearly tender. Add carrots and parsley and simmer for 20 minutes. Add potatoes, tomatoes (optional) and celery and simmer until vegetables and meat is fork tender. Add salt and pepper to taste. Add Hot Hungarian Pepper - erös to taste. (Be careful - your guests may need to be introduced to the hot flavour gradually.) Nokedli for soup - recipe below.
- Hint: One important point is that at the end you can melt a little shortening with the paprika and add it to the pot. This will give the colour of the soup that homemakers always admire in restaurants.
- SOUP DUMPLINGS.
- Beat egg and slowly add flour 1 spoon at a time using a fork to ensure it is smooth. Use a small teaspoon to scrape into boiling salted water. Dumplings will pop to top of water - boil another 5-7 minutes. Drain and add to Goulash Soup.
- Hint: Don't boil the dumplings in the stew- it will make the liquid starchy and cloudy.

Steps:
- Cut beef into 1 inch squares.
- Brown chopped onion in butter; add paprika and fry slightly; do not brown paprika.
- Add cubed beef, salt and pepper; simmer until tender in its own juices, being careful not to scorch.
- Add carrots and water and simmer until carrots are partly cooked.
- Add potatoes; cook until potatoes are done, for about 1 hour.
- Serve with dumplings if desired.

- Heat 1 tablespoon bacon fat or oil in large 5-6 quart pan over high heat. Dry 1/2 of meat cubes, add to pan, and sear over high heat until browned on all sides. Be careful not to crowd the meat in the pan. Remove meat from pan and repeat with remaining 1/2 of meat cubes and 1 tablespoon bacon fat or oil. Remove meat from pan.
- In same pan, heat 2 tablespoons bacon fat over medium heat . Add onion and celery and cook until soft. Add minced garlic and sauté 1 minute.
- Return meat cubes to pan with cooked onion. Add paprika and tomatoes. Stir to coat and cook for a few minutes.
