TAMARIND SAUCE

200g block of tamarind pulp
Water to cover 1 ½ cups plus more if preferred
1 teaspoon cumin powder
1 teaspoon chaat masala (optional)
½ teaspoon dried ginger powder
½ teaspoon red chilli powder or to taste
1 tablespoon sugar or jaggery - more or less to taste
Salt to taste

Steps:

  • Break up the block of tamarind into about six pieces in a small saucepan and cover with 375ml ( 1 ½ cups) water. Bring to a rolling simmer over medium-high heat, stirring often for about 5 minutes. Then remove from the heat and let it cool for another 5 minutes.
  • Using a wooden spoon or potato masher, smash the tamarind in the water. The sauce will become thick like ketchup. Run this through a sieve into a bowl, pushing against the solids as you do. You should end up with a thick tamarind paste. If you have ever used shop bought tamarind concentrate, this is what you have though shop bought tamarind concentrate is much more concentrated. Discard any solids that remain in the sieve.
  • Return the tamarind paste to the saucepan and add the cumin, chaat masala (if using), ginger, chilli powder and sugar. Bring to a simmer for about 3 minutes until the sugar is completely dissolved. You can add a drop more water if you prefer a runnier sauce or reduce it more if you prefer a thicker sauce. Taste the sauce and add more sugar, salt or other spices to taste. (You will need to dissolve any additional sugar over a medium heat if added.)
  • I store this in a convenient squirt bottle in the fridge.

2 cups walnuts or 2 cups hazelnuts
3 tablespoons tamari soy sauce

Steps:

  • Preheat oven to 350°F.
  • Spread the nuts on a baking sheet and bakd for 5 minutes.
  • Drizzle soy sauce on nuts and stir well.
  • Bake for 5 more minutes.
  • Turn off the oven, stir the nuts again, and leave them in the oven for an additional 5 minutes.
  • The nuts will be dry and crisp.
  • Allow nuts to cool.

1 cup nutritional yeast
⅔ cup tamari (gluten-free soy sauce)
½ cup cider vinegar
½ cup lemon juice
2 tablespoons garlic powder
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh thyme

Steps:

  • Blend olive oil, nutritional yeast, tamari, cider vinegar, lemon juice, garlic powder, basil, oregano, and thyme together in a food processor or blender until dressing is smooth.

Peanut Ginger Tamari Stir-Fry Sauce image

Quick and easy, this sauce works well for vegetarian stir-fry, or for dipping veggie rolls in. For a stir-fry, you may want to double the amounts so you can use some for cooking and leave some uncooked to drizzle over the finished product just before serving. I usually use this for a stir-fry of tofu, carrots, and bok choi, served on a bed of Basmati rice.

2 1/2 tablespoons tamari
1 tablespoon peanut butter
1/4 teaspoon chile
2 teaspoons fresh ginger, minced
1 tablespoon warm water
fresh ground black pepper, to taste

Steps:

  • Pour Tamari into a small bowl. Add warm water.
  • Add peanut butter and smush carefully until well-blended.
  • Add chilis.
  • Chop and add ginger. Add black pepper. Stir well.
  • Add to stir-fry as it cooks, in several small amounts (about a teaspoon at a time). Drizzle the remainder over the vegetables and rice just before serving. (The cooked and fresh ginger make a nice combination, we find!) Enjoy!
