RICE COOKER RICE PILAF
My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

Steps:
- In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
- Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
- Stir briefly to distribute ingredients.
- Set to cook. When done, let sit for 10 minutes.
- Stir and enjoy!
- Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!

- Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
- Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
- Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter and olive oil in a large saucepan over medium heat. Add onion; cook and stir until onion is lightly browned, 7 to 8 minutes. Remove from heat.
- Combine rice and onion mixture in a 9x13-inch casserole dish placed on a baking sheet. Stir thoroughly to coat the rice.
- Combine chicken stock, salt, saffron, and cayenne pepper in a saucepan. Bring to a boil, reduce heat to low, and simmer for 5 minutes.
- Pour chicken stock mixture over rice in the casserole dish and stir to combine. Spread mixture evenly along the bottom of the pan. Cover tightly with heavy-duty aluminum foil.
- Bake in the preheated oven for 35 minutes. Remove from oven and allow to rest, covered, for 10 minutes. Remove foil and fluff with a fork to separate the grains of rice.

RICE PILAF
Steps:
- Melt the butter with the shallot in a medium saucepan over medium-low heat. Season with the salt and pepper and cook until the onions are soft, about 5 minutes. Add the rice and stir until coated with the butter. Increase the heat to medium-high. Let the rice cook until toasted, stirring occasionally, about 5 minutes more.
- Stir in the broth, bay leaf, and rosemary. Bring to a simmer over low heat, cover, and cook until all the broth has been absorbed by the rice and the rice is tender, about 15 to 18 minutes. Remove from the heat and let set for 5 minutes. Discard the rosemary and bay leaf. Fluff the rice with a fork and serve.

- Peel and chop the onion into small chunks then peel and mince the garlic.
- Heat the extra virgin olive oil in a large saute pan/ deep frying pan (Use one you have a lid for)
- Add in the onions and cook over low heat for 4-5 minutes until soft, Add the garlic and cook for a further minute.
- Pour in the rice and stir to coat in the olive and onion mixture.
- Add the zest and juice of one lemon, the dried oregano and then pour in the hot vegetable broth.

FLUFFY RICE PILAF
Taking what I know about rice pilaf, that it can be pretty blan sometimes, I came up with a great TASTY way to make rice. My family requests this all the time. Great served with Chicken, Pork and Steak. For those of you that don't want all the vegetables in your rice, try this one!

- Pour canned chicken broth in measuring cup add water to make 4 cups, add 2 tbls water.
- Add powdered chicken boulion to broth along with salt and pepper. Microwave for 6 minutes while preparing the rice.
- Add 3 tbls olive oil to dutch pan on med-high heat. Once it starts to get hot add Fideo pasta (or broken vermicelli). Keep stirring until it starts to brown. Slice butter into 4 tbls and add to pan. Add 2 cups rice and continue to brown. (This will stop the pasta from getting too brown).
- At this point, you should hear your microwave telling you the broth is ready.
- CAREFULLY -- (very important) pour into pan slowly. Once all the broth is in, stir and bring the mixture to a boil. Once you see the mixture thickening, put a lid on it, adjust temperature to simmer and set timer for 25 minutes! Once your timer goes off, turn heat off and do not take the lid off the pot. Let it sit for at least 5 minutes before removing the lid.
- Fluff with a fork and serve.

RICE PILAU/ PILAF OR HOMEMADE RUSSIAN PLOV
Delicious easy to make goat meat special fried rice, using cumin powder, its a very quick and easy recipe.

- The first thing you want to do is dice your carrot into long sticks, and chop your onions, then dice your goat meat into tiny bite sizes and season with some salt, pepper, and some stock seasoning powder, set this aside for at least 20 minutes. (I would recommend using goat meat for this recipe, but if you are unable to find goat meat, then you can definitely use beef) Now we are ready to start cooking, get your pot, pour your oil and wait for it to get hot, then pour in your pre-seasoned goat meat and fry until it is golden brown, and no we are not cooking our meat first, we are just going to fry it straight, trust me, it is totally fine. Once your meat is fried, take it out of the oil.
- Now you will pour your chopped onions, let it fry for a few minutes, then add your chopped carrots to it and let them fry together for a few minutes, after which you pour your fried goat meat back into the pot and let them all fry together for a few minutes, add a bit of seasoning to the veggies and meat, a little bit of salt, pepper, and seasoning stock cubes, mix everything together, and then pour 750ml of water to this and let it come to a boil.
- While your meat and veggies are coming to a boil, prepare your rice by rinsing it thoroughly until you get all the starch out, I would say rinse at least 3-4 times, and then boil some water in a kettle, and get a large bowl, pour your rice into the bowl and pour the boiling hot water onto the rice, make sure you boil more than enough water because your rice needs to be submerged in water the entire process.
- After preparing your rice, your plov sauce should be boiling now, taste it and check if it needs more seasoning, if it does, season to taste if not, you are good to go, the next thing is to drain your rice and pour it into the boiling plov sauce, DO NOT MIX IT TOGETHER, here is when you add your cummin powder, do not SKIP this step, your plov is not plov without some cumin powder, then try to slightly mix it together.
- Once the water has dried, try moving your rice away from the edge of the pot to make it into a round mound at the centre of the pot, as shown in the picture .Reduce the heat, and now drop a whole garlic bulb into the centre of the pot (this is optional) and cover with foil paper,then leave it for another 20-30 minutes thereabout.

RICE PILAF

- Preheat the oven to 350.
- Melt the butter in a 3-quart saucier over medium heat.
- Stir in the onion, bell pepper and 2 pinches of salt.
- Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes.
- Add the saffron and its water, the broth, orange zest, bay leaves and the remaining 1 1/2 teaspoons salt. Increase the heat and bring to a boil.
- OK, now the weird part: Thoroughly wet a clean towel, kill the heat, scatter the peas on top of the rice, then place the towel across the top of the saucier. Top with the lid, then fold the towel corners up over the lid.
- Transfer the saucier (towel and all) to the oven and bake 15 minutes.
- Remove and rest at room temperature for 15 more minutes without opening the lid.
- Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.
